1 1/2 cups plus 2 tablespoons bleached all-purpose flour
1 tablespoon sugar
1/2 teaspoon salt
8 tablespoons (1 stick) unsalted butter, cut into 1/4-inch pieces and chilled
2 tablespoons vegetable shortening, chilled
3 tablespoons ice water, or as needed
1/2 pound rhubarb (2 stalks), peeled and cut into 1-inch thick slices
2 apples, peeled and cut into 1-inch pieces
1 tablespoon extra-virgin olive oil
5 tablespoons sugar
1/4 cup water
1 tablespoon all-purpose flour
1 teaspoon finely grated lemon zest
Pinch table salt
1 1/2 teaspoons unsalted butter, cut into slivers
Vanilla ice cream, for serving

Steps:

  • Crust: Sift the flour, sugar, and salt into a large bowl. Add the butter and shortening. Rub the fats between your fingertips and thumbs, or use a pastry blender, until the mixture resembles coarse crumbs. One tablespoon at a time, work in enough ice water just until the dough comes together, being careful not to overmix.
  • Shape into a smooth ball of dough, flatten into a disk, and wrap in plastic wrap. Refrigerate for at least 30 minutes and up to 2 days.
  • Cobbler: Preheat oven to 350 degrees F.
  • To prepare the cobbler, place the rhubarb and apples in a large, heavy saucepan. Add olive oil, 1 tablespoon sugar and water. Stir over high heat until the sugar has started to dissolve, 1 to 2 minutes. Reduce the heat to medium and cook, stirring often, until the fruit has exuded some of its liquid, about 5 minutes. Transfer mixture to a large bowl with the remaining 4 tablespoons sugar, flour, lemon zest, and salt. Cool slightly; pour into a lightly buttered 1-quart baking dish, and dot with the slivers of butter.
  • When ready to use crust, sprinkle a little flour on a smooth work surface, and using a rolling pin or dowel, roll the pie dough about 1/8-inch thick and large enough to cover the baking dish.
  • Cover cobbler with pie dough. Bake for 35 to 40 minutes, until top is golden. Let cobbler cool for 15 minutes before serving. Serve with vanilla ice cream.

Steps:

  • Wash the rhubarb stalks and chop into 1" pieces.
  • Stir the cornstarch into the sugar, then add it to the rhubarb along with the lemon juice, and toss gently
  • Place the sugared rhubarb into the buttered pie dish.
  • Sift the flour and baking powder into a bowl so that they are evenly mixed.
  • Cream the sugar and butter until light and fluffy. Beat in the egg, then gently fold in the flour and baking powder until well combined, without over mixing.
  • Drop large spoonfuls of the dough onto the rhubarb in the pie dish.
  • Bake for 35 to 45 minutes (depending on your oven) or until the topping is baked through, and golden brown. Remove from the oven. Allow the easy rhubarb cobbler to cool slightly before serving.

2 pounds rhubarb, trimmed and cut into 1/2-inch pieces (about 7 cups)
3/4 cup/150 grams granulated sugar
1 teaspoon finely grated orange zest
Pinch of kosher salt
3/4 cups/96 grams all-purpose flour, plus more for shaping
2 tablespoons granulated sugar
2 1/4 teaspoons baking powder
Pinch of kosher salt
3 tablespoon cold unsalted butter, cut into 1/2-inch cubes
1/3 cup/79 milliliters plus 1 tablespoon heavy cream, plus more for serving, if you like
Demerara sugar, for sprinkling

Steps:

  • Heat oven to 425 degrees. Using the tip of a paring knife, scrape the pulp out of the vanilla bean halves and add the pulp to a 1 1/2 quart gratin or baking dish or 9-by-9-inch pan along with the scraped-out pods.   • Dump the dough onto a lightly floured surface, and gently pat it together until it's a cohesive lump. Using a small ice cream scoop or a large spoon, form dough into 6 evenly sized balls. Slightly flatten dough balls into thick rounds. Cover rounds with plastic wrap and chill for at least 30 minutes (and up to 6 hours).
  • Put the rhubarb in the oven and roast, stirring halfway through, until the rhubarb has softened and the liquid has formed a syrup, about 30 minutes.
  • Remove pan from oven and use tongs to remove the vanilla bean pods.
  • Lower oven temperature to 375 degrees. Arrange biscuit rounds on top of the rhubarb, leaving space in between them. Brush biscuits with remaining tablespoon of heavy cream and sprinkle with Demerara sugar.
  • Bake cobbler until biscuits are golden brown, about 25 to 35 minutes. Serve warm or at room temperature, with cream or ice cream, if you like.

6 cups chopped fresh or frozen rhubarb
2 tablespoons all-purpose flour

  • In a large saucepan, bring 1/2 cup sugar and water to a boil. Add the rhubarb. Reduce heat; cover and simmer until tender, about 5 minutes. Combine flour and remaining sugar; stir into rhubarb mixture. Return to a boil; cook and stir until thickened and bubbly, 2 minutes. Stir in butter and almonds.
