BAKED REUBEN CASSEROLE

Baked Reuben Casserole is like a huge reuben sandwich for a crowd! Layers of rye bread, pastrami, sauerkraut, Swiss cheese and special sauce!

6 slices rye bread (dark or light), (divided use)
1 pound thinly sliced pastrami or corned beef, (divided use)
14.5 ounce can or jar sauerkraut, (drained well)
4 cups shredded Swiss cheese, (divided use)
2 teaspoons caraway seeds, (divided use)
1 cup chopped dill pickles
1 cup milk
3 large eggs, (beaten)
⅓ cup thousand island dressing
¼ cup yellow mustard

Steps:

  • Preheat oven to 350f degrees. Spray 11x7 baking dish with nonstick cooking spray. Take four slices of rye bread and cut them into 2-inch cubes.
  • Place remaining slices of rye bread into food processor and pulse into fine breadcrumbs and set aside.
  • Spread cubed bread into the bottom of the prepared baking dish.
  • Cover evenly with half of the pastrami.
  • Then evenly top with drained sauerkraut, chopped pickles and 1 tsp. caraway seeds.
  • Sprinkle 2 cups of shredded Swiss cheese on top of sauerkraut layer.
  • Next, top with remaining pastrami. I gently push down to help compact it all a bit.
  • Sprinkle remaining 2 cups Swiss cheese and 1 tsp. caraway seeds on top of pastrami.
  • In a medium bowl, whisk together milk, eggs, thousand island dressing and mustard.
  • Pour mixture evenly over the casserole.
  • Top with breadcrumbs.
  • Cover with foil.
  • Bake for 45 minutes.
  • Remove from oven, let rest for 5 minutes then slice and serve.

1 egg
1 small onion, finely chopped
2/3 cup soft bread crumbs
1/4 cup minced fresh parsley
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup cooked rice
1-1/2 pounds lean ground beef
2 cups sauerkraut, rinsed and well drained
1 to 2 teaspoons caraway seeds
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1/2 cup Thousand Island salad dressing
1/4 cup shredded Swiss cheese
Rye bread, optional

Steps:

  • In a bowl, combine the egg, onion, bread crumbs, parsley, salt and pepper. Stir in rice. Crumble beef over the mixture and mix well. Shape into 15 balls. Place meatballs on a greased rack in a shallow baking pan. Bake, uncovered, at 350° for 15-20 minutes or until browned; drain., Transfer meatballs to an ungreased 13-in. x 9-in. baking dish. Arrange sauerkraut over meatballs; sprinkle with caraway seeds. Combine soup and salad dressing; spread over the top. , Cover and bake for 35-45 minutes or until meat is no longer pink. Uncover; sprinkle with Swiss cheese. Bake 10 minutes longer or until cheese is melted. Serve with rye bread if desired.

1 (16 ounce) can sauerkraut, drained and rinsed
1 pound deli sliced corned beef, cut into strips
¾ cup Russian-style salad dressing
2 cups shredded Swiss cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Spread bread cubes in the bottom of a 9x13 inch baking dish. Spread sauerkraut evenly over the bread cubes, then layer beef strips over sauerkraut. Pour dressing over all.
  • Spray aluminum foil with cooking spray and use to cover baking dish, sprayed side down. Bake in the preheated oven for 20 minutes.
  • Remove cover, sprinkle with cheese and bake uncovered for another 10 minutes, or until cheese is melted and bubbly.

¾ cup thousand island dressing
1 (16 ounce) can sauerkraut, drained
8 slices Swiss cheese
8 slices pastrami
¼ cup margarine, softened

Steps:

  • Spread each slice of bread with thousand island dressing. Top 4 of the bread slices with sauerkraut, cheese and pastrami. Place remaining bread slices on sandwich. Spread margarine on the outsides of each sandwich.

If you love reubens then this is for you! Thinly sliced leftover roast beef or steak may use in place of pastrami. You may double all amounts and make two layers if desired. Don't be shy with the dressing, sauerkraut and cheese--use as much as you want--the amounts stated are only a guideline, just make certain to use as much bread cubes as needed to cover the bottom of the baking dish. Place the cubes in the dish before baking just to be sure. Toasting the bread cubes prevents the bread from becoming soggy. You may skip this step if you wish, but the sauerkraut will need to to hand-squeezed to remove as much liquid as possible :)

soft butter
1 (16 ounce) can sauerkraut, well drained (you may rinse if desired)
1 lb pastrami (cut into strips, can use more or less than) or 1 lb corned beef (cut into strips, can use more or less than)
2 cups thousand island dressing (see my Kittencal's Thousand Island Dressing)
2 cups shredded swiss cheese (can use more) or 2 cups mozzarella cheese (can use more)

Steps:

  • Set oven to 400°F.
  • Grease a 13 x 9-inch baking dish.
  • Lightly butter both sides of the bread slices.
  • Slice in to about 1-1/2-inch cubes then place on a baking sheet.
  • Bake until semi-crisp, but NOT hard and brown.
  • Spread the bread cubes in the prepared baking dish.
  • Sprinkle the sauerkraut over the bread cubes.
  • Layer the beef strips evenly over the sauerkraut.
  • Pour the salad dressing completely over the top (you may use more than 2 cups if needed).
  • Cover with foil and bake 400°F (bottom oven rack) for 20-25 minutes.
  • Remove from oven and sprinkle with shredded cheese and continue to bake UNCOVERED for another 6-8 minutes or until the cheese is melted and bubbly.

1 lb deli pastrami, sliced
4 -6 ounces swiss cheese
16 ounces sauerkraut
4 tablespoons thousand island dressing
4 tablespoons mayonnaise
1 tablespoon dill relish

Steps:

  • Preheat oven to 350°F Grease a large casserole dish.
  • Layer slices of pastrami, scrunching to create an uneven layer. You don't want a slab of pastrami.
  • Drain sauerkraut and layer over the pastrami. Top with cheese.
  • Bake 15-20 minutes or until cheese melts.
  • Meanwhile, combine dressing, mayonnaise and relish.
  • Remove casserole from oven. Top with dressing and serve.
