These mushrooms are the quintessential topping for all types of steak. Also excellent over baked potatoes. I have people calling me and asking me for the recipe even years after I have made them for them. They are that good!!

3 tablespoons olive oil
3 tablespoons butter
1 pound button mushrooms, sliced
1 clove garlic, thinly sliced
1 tablespoon red cooking wine
1 tablespoon teriyaki sauce, or more to taste
¼ teaspoon garlic salt, or to taste
freshly ground black pepper to taste

Steps:

  • Heat olive oil and butter in a large saucepan over medium heat. Cook and stir mushrooms, garlic, cooking wine, teriyaki sauce, garlic salt, and black pepper in the hot oil and butter until mushrooms are lightly browned, about 5 minutes. Reduce heat to low and simmer until mushrooms are tender, 5 to 8 more minutes.

1/4 cup butter, cubed
1 pound medium fresh mushrooms
2 teaspoons dried basil
1/2 teaspoon dried oregano
1/2 teaspoon seasoned salt
1/4 teaspoon garlic powder
1 teaspoon browning sauce, optional

Steps:

  • In a large skillet, heat butter over medium-high heat. Add mushrooms; cook and stir until tender. Stir in seasonings and, if desired, browning sauce. Reduce heat to medium; cook, covered, for 3-5 minutes to allow flavors to blend.

I found this recipe on Recipe Secrets.net written by jslate6228 who owns a sub shop and puts these on his 'grinders' I haven't tried this yet, but I'm thinking the cream sherry might give it an extra special taste. 36 ounces canned mushroom slices, reserve 1 1/2 cup juice (good quality)
6 tablespoons butter
2 whole shallots, minced
3 (30 ounce) cans campbells beef consomme
1 1/2 cups cream sherry
2 teaspoons white pepper or 2 teaspoons black pepper

Steps:

  • Saute butter, mushrooms and shallots over medium high heat until mushrooms start to darken, about 5 or 10 minutes.
  • Add the remaining ingredients and cook until almost all of the liquid has evaporated.
  • These mushrooms have depth and excellent beefy flavor. You can use chicken broth as a substitute and use these for chicken. This can be halved to make less for home use.

6 tablespoons extra-virgin olive oil
1 1/2 pounds whole small button mushrooms, wiped clean
3 tablespoons butter
Gray sea salt
1 tablespoon minced garlic
1 1/2 teaspoons fresh thyme leaves, chopped
2 tablespoons lemon juice
1/2 cup white wine
1 tablespoon chopped parsley leaves

Steps:

  • In a large skillet, heat the oil over high heat. Add the mushrooms. Do not move the mushrooms until they have caramelized on the bottom. If you toss them too soon, they will release their liquid and begin to steam. When the bottoms are caramelized, toss them and continue to cook for about 5 minutes.
  • Add the butter. Cook and toss for 5 minutes, until beautifully browned.
  • Season with salt and add the garlic. Saute another 2 minutes, and add the thyme, lemon juice, and white wine. Cook to evaporate the liquid.
  • Toss in the parsley and serve immediately.

2 tablespoons unsalted butter, more as needed
1 pound thinly sliced portobello or cremini mushrooms
1 teaspoon chopped thyme
2 small garlic cloves, minced
Salt and pepper
Splash of sherry or Marsala (optional)
1/4 cup crème fraîche
2 thick slices country bread, for toasting
2 tablespoons chopped parsley

Steps:

  • Heat a wide skillet over high heat and add butter, swirling pan. When butter begins to sizzle, add mushrooms and cook, stirring, until lightly browned, 6 to 8 minutes.
  • Add thyme and garlic, and stir to coat. Season well with salt and pepper and continue to sauté for a minute more, then add sherry, if using. Add crème fraîche and let mixture simmer 2 minutes.
  • Meanwhile, toast bread slices until golden. Lightly butter them and place on individual warm plates.
  • Spoon mushrooms and juices over toasted bread. Top with chopped parsley.

My favorite way to prepare mushrooms. Even if you don't like mushrooms, you'll like these. Great served over steaks or mashed potatoes. Adjust seasonings to taste.

1/4 cup olive oil
1/4 cup unsalted butter
1 tablespoon italian mixed herbs
1 teaspoon thyme
3 large garlic cloves, pressed
1 tablespoon dried onion flakes
1/2 cup wine (red for meat, white, fish dinner)
2 cups sliced mushrooms
2 tablespoons Worcestershire sauce

Steps:

  • Melt butter in olive oil over low heat.
  • Add italian herbs, thyme, garlic,dried onion and Worcestershire sauce. Warm for about 10 minutes, do not let garlic burn.
  • Increase heat to medium, add wine and stir to mix.
  • Add sliced mushrooms, stir to coat.
  • Reduce to low hat and simmer for about 5 minutes.
