from scandinavafood for zaar tour 6 if you like manhatten clam chowder you will love this. i used one of those salmon filets indivually frozen and 1 tablespoon dried parsleyand used canned milk . you get the mussels in walmarts freezer section , i love them alot

4 cups fish stock
1 carrot, finely diced
1 tomatoes, diced
2 potatoes, peeled, diced
4 green onions, chopped
1/2 lb shrimp, peeled, diced
1/2 lb salmon
8 mussels
1/2 cup cream
2 tablespoons butter
2 tablespoons flour
1/4 cup parsley

Steps:

  • add veggies and salmon to stock dicing salmon.
  • cook until carrots are tender
  • mix butter and flour together.
  • add to soup.
  • add cream as i said i used canned milk
  • add shrimp and mussels dont boil just cook until mussels open and shrimp is pink.

8 medium potatoes, peeled and cubed
2 large onions, chopped
1 cup celery, sliced
1 1/2 cups carrots, sliced
6 cups beef stock
salt and pepper
1 lb ground beef
1 egg
3 tablespoons milk
salt and pepper

Steps:

  • Add all vegetables to meat stock. Season to taste and simmer for one hour.
  • Combine beef, egg, milk and seasonings. Form into very small meatballs.
  • Drop meatballs into boiling soup and cook 10 to 15 minutes.

This is a wonderful cold soup. We have served it at Christmas in place of cranberries. It is a favorite with children. Note: The rice is strained out early in the recipe and only the starch is used.

1/2 cup rice
3 cups water
1 pinch salt
1 cinnamon stick
2 apples, peeled & chopped
1/4 cup sugar
2 cups dark sweet canned cherries (with liquid)
1 tablespoon cornstarch
2 cups frozen raspberries
1/2 teaspoon mace

Steps:

  • Boil rice, water, cinnamon, and salt for 15 minutes. Strain our rice so that 1-1/2 c base is left. (Add more water if necessary.).
  • Add apples and sugar. Boil until apples are cooked.
  • Add a bit of the mixture to the cornstarch. Then add the cornstarch mixture and the cherries to the rest of the liquid. Bring to a boil.
  • Remove from the heat and add the raspberries and mace.

1/2 cup minute tapioca
1/2 teaspoon salt
1 cup sugar
1 stick cinnamon
1 cup raisins
1 cup apple, chopped
2 1/2 cups water
1 tablespoon vinegar
2 cups grape juice
1 cup currants
1 cup pitted prunes

Steps:

  • Add tapioca to boiling water, stirring frequently.
  • Add rest of ingredients except grape juice and boil until fruit is tender, about 30 minutes.
  • When soup is done, add grape juice. Serve with Rusks.
  • May be served cold as dessert. Garnish with whipped cream and chopped nuts.
