1 small red onion, halved and sliced into thin half-moons
2 tablespoons lime juice, or more to taste
2 tablespoons extra-virgin olive oil
1 seedless watermelon, cut into cubes
3 baby cucumbers, seeded and cut into cubes
1 cup crumbled feta cheese
½ cup mint leaves, sliced thinly

Steps:

  • Mix red onion with lime juice in a bowl; set side to marinate at least 10 minutes. Stir olive oil into mixture.
  • Toss watermelon, baby cucumbers, and feta cheese together in a large bowl. Pour the red onion mixture over the watermelon mixture; toss to coat. Sprinkle mint over the salad; toss.

½ small red onion, thinly sliced
1 large tomato, halved and sliced

This is a great salad to serve with Thanksgiving or holiday meals. It makes a refreshing summer salad as well. Spaghetti squash is low in calories; most of my meat-eater friends love this dish!

1 spaghetti squash, halved and seeded
8 ounces cherry tomatoes, halved
6 ounces pitted kalamata olives, halved
2 English cucumbers - peeled, seeded, and sliced
1 small red onion, sliced thin
1 clove garlic, minced
¼ cup lemon juice
1 tablespoon lemon zest
¼ cup olive oil, or more if needed
1 tablespoon garlic salt
ground black pepper to taste

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Place the squash halves into a large baking dish with the cut-sides facing down.
  • Bake in the preheated oven until you can easily cut into the skin side with a knife, about 30 minutes; remove from oven and set aside to cool.
  • Toss the cooled spaghetti squash, the tomatoes, olives, cucumbers, red onion, and garlic together in a large bowl until evenly mixed.
  • Stir the lemon juice and lemon zest together in a small bowl; slowly pour the olive oil into the lemon juice mixture while whisking vigorously. Season with garlic salt and pepper; drizzle over the spaghetti squash mixture and toss to coat. Refrigerate at least 2 hours before serving.

2 large cucumbers, peeled, seeded, cut the long way and sliced
3/4 teaspoon salt
2 medium tomatoes, cut into large dice
1 sweet onion, diced
3 tablespoons lemon juice
1 tablespoon cider vinegar
1/2 tablespoon olive oil
1 teaspoon Dijon mustard
2 teaspoons sugar
1 teaspoon dill weed
1/4 teaspoon black pepper
1/8-1/4 teaspoon cayenne pepper
salt, if needed
1/4 cup crumbled feta cheese (optional)

Steps:

  • Place the cucumber slices in a colander and sprinkle with the 3/4 tsp salt; toss well.
  • Place the colander over an empty bowl. put in refrigerator and allow the cucumbers to drain their liquid for about 40-45 minutes.
  • After draining time, shake out any excess moisture from the cucumbers in the colander. Place them into a large bowl.
  • Add the tomatoes and onions.
  • In a small bowl, whisk together lemon juice, cider vinegar, olive oil, Dijon mustard, sugar, dill weed, pepper and cayenne pepper. Pour over the salad mixture and toss.
  • Taste and add additional salt, if necessary.

½ cup rice vinegar
