This is from the makers of Red River Cereal. A healthy muffin that is a bit different. I started making these because I needed to get rid of a box of Red River Cereal (don't like it)-good in these!

Number Of Ingredients 12

1 1/2 cups boiling water
3/4 cup red river cereal
3/4 cup natural bran
2 1/2 cups all-purpose flour
2 1/2 teaspoons baking soda
1/2 teaspoon salt
1/2 cup shortening
1 1/2 cups sugar
2 eggs
2 cups buttermilk or 2 cups sour milk
2 cups rolled oats
1 1/2 cups raisins, chopped dates or 1 1/2 cups dried cranberries

Steps:

  • Preheat oven to 375 degrees F.
  • Combine Red River Cereal and bran.
  • Pour boiling water on it.
  • Stir to combine and let stand 10 minutes.
  • Combine flour, baking soda, and salt.
  • Cream shortening and sugar.
  • Stir in eggs.
  • Stir in buttermilk.
  • Stir in flour mixture.
  • Stir in bran mixture.
  • Stir in oats and raisins.
  • Mix thoroughly.
  • Fill greased muffin cups almost full.
  • Bake at 375 degrees F for 18-24 minutes or until top springs back when lightly touched.
  • Remove from pan and cool on a rack.

This is not OATMEAL, but oat BRAN muffins. I have made these for about five years now, and I really love them. They are great made with cinnamon or cranberry applesauce, as well as plain applesauce. My daughter loves them and I hope you will enjoy them, too!

½ cup dark brown sugar
1 ½ cups oat bran
1 ½ cups all-purpose flour
2 teaspoons baking powder
2 teaspoons baking soda
½ teaspoon salt
2 eggs
1 cup chilled applesauce
4 tablespoons vegetable oil

Steps:

  • Preheat oven to 400 degrees F (205 degrees C). Line or grease 12 muffin cups.
  • Blend together brown sugar, oat bran, flour, baking powder, soda, and salt. Add eggs, chilled applesauce, and vegetable oil. Mix until well-blended. Spoon batter into muffin cups. Let stand 10 minutes.
  • Bake at 400 degrees F (205 degrees C) for 15 minutes or until golden brown.
  • VARIATIONS: Add 1 cup plumped raisins, with a little bit of raisin water (approximately 2 tablespoons). Or, before baking, sprinkle mixture of sugar and cinnamon over the tops of the muffins. Or, add 1 teaspoon cinnamon or nutmeg to flour mixture.

Number Of Ingredients 12

WHAT YOU NEED
3⁄4 cup oats
1⁄2 cup red river cereal, uncooked
1 cup milk with 1tablespoon lemon juice
1 cup flour
3⁄4 cup packed brown sugar
1 teaspoon baking powder
3⁄4 teaspoon baking soda
1⁄2 teaspoon salt
1 egg
1⁄3 cup butter, melted
1 cup chopped dates

Steps:

  • 1. Combine oats, Red River and milk in large bowl, let stand 40 minutes. Make sure you do this step to allow the red river cereal to become soft.
  • 2. Combine remaining dry ingredients. Add butter and egg to cereal mixture. Add dry ingredients and mix well. Stir in dates. Spoon into 12 greased muffin tins. Bake at 375 degrees for 20-25 minutes or until set. Remove muffins from pan and cool. You can store these in an airtight container or freeze them. I wrap them up and freeze them individually for easy grab and go mornings Enjoy

1 1/3 cups boiling water
3/4 cup Red River Cereal
3/4 cup natural bran
2 1/2 cups ROBIN HOOD All Purpose Flour (any flour will do)
2 1/2 tsp baking soda
1/2 tsp sea salt
1/2 cup oil
1 1/2 cups granulated sugar
2 eggs
2 cups buttermilkk
2 cups ROBIN HOOD or OLD MILL Oats
1-1 1/2 cups chopped dates and dried cranberries

Steps:

  • POUR boiling water over Red River Cereal and bran; let stand.
  • COMBINE flour, baking soda and salt. Mix well.
  • CREAM shortening, sugar, eggs and buttermilk together in large bowl until blended. Add flour mixture with bran mixture, oats and raisins. Mix thoroughly. Spoon into greased muffin cups, filling almost full.
  • BAKE at 375°F (190°C) for 18 to 23 minutes, or until top springs back when lightly touched.
  • Makes 24 muffins

1 ¾ cup boiling water
¾ cup Red River Cereal
¾ cup natural bran (Wheat or Oat)
2 ½ cups flour (whole wheat or spelt)
1/2 dry oats [instant or 1 minute oats]
2 ½ tsp. baking soda
1/3 cup avocado (light olive or coconut oil)
3/4 cup brown sugar (packed)
2 eggs
1 1/2 cups buttermilk (or use 1 1/2 --cups milk & 1 tsp. vinegar, or plain kefir)
1 ½ cups raisins (chopped dates, goji or dried cranberries [or combination of these])
1/2 cup chopped walnuts (optional)

Steps:

  • Preheat over to 375F
  • Pour boiling water over Red River cereal and bran, in a bowl and let stand.
  • Combine flour, dry oats, baking soda in a large bowl & mix well.
  • Mix oil, sugar, eggs & buttermilk in a separate bowl, using a hand blender or whisk
  • Add both the Red River cereal & bran and the oil, sugar, & buttermilk mixtures to the dry ingredients, stir in dried fruit.
  • Mix thoroughly.
  • Spoon into greased muffin cups, filling almost full. Bake for 25 minutes or until tops spring back when lightly touched

1/2 cup All-Bran
1/2 cup 2% milk
2 tablespoons canola oil
1/2 cup all-purpose flour
2 tablespoons sugar

Steps:

  • In a large bowl, combine the bran and milk; let stand for 5 minutes. Stir in oil. Combine the remaining ingredients; stir into bran mixture just until moistened. , Fill greased or paper-lined muffin cups half full. 3/4 cup whole wheat flour (we grind our own)
1/4 cup all-purpose white flour
3/4 cup oat bran
1/2 cup brown sugar
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon baking soda
1 banana, mashed (1/3 cup mashed)
4 ounces activia cherry yogurt
1 medium egg
1/3 cup 1% low-fat milk
2 tablespoons vegetable oil
1/2 teaspoon vanilla
1/2 cup shredded carrot
1/2 cup chopped dates
1/2 cup chopped pecans

Steps:

  • Mix dry ingredients together. Add the carrots, dates, and pecans.
  • Mix liquid ingredients in separate bowl.
  • Combine the liquid ingredients with the dry ingredients and stir until moistened.
  • Lightly grease muffin tins. Fill 2/3 full with batter. Bake at 400 degrees for 18-20 minutes.
