2 tbsp thai Kitchen brand red curry paste
2 tbsp veg oil
24 med shrimp, peeled
24 basil leaves

Steps:

  • Preheat broiler. Stir together paste, oil, 1/8 tsp salt, spread on broiler pan. Broil 4 " from broiler for 3 min. Thread on skewer 1 shrimp, 1 basil leaf. Serve warm or room temp.

1 (14-ounce) can unsweetened coconut milk
2 tablespoons red curry paste
1/2 red onion, peeled and finely chopped
1/4 cup chopped fresh cilantro leaves
1 lime, juiced
2 to 3 tablespoons canola oil
Salt and freshly ground pepper
2 pounds shrimp, shell and tail left on

Steps:

  • Heat grill to high. Whisk together coconut milk, curry paste, onion, cilantro, lime juice, and oil in a large bowl. Season, to taste, with salt and pepper. Place shrimp in the bowl and toss to coat. Cover and let marinate at room temperature for 20 minutes.
  • Remove shrimp from the marinade and grill for 1 1/2 to 2 minutes per side. Serve on brown paper bags, if desired.

2 tablespoons red curry paste
2 tablespoons vegetable oil
24 medium shrimp, peeled and deveined
24 large basil leaves

Steps:

  • Preheat broiler. Stir together curry paste, oil and 1/4 teaspoon salt and atir into shrimp. Spread onto a broiler pan. Broil shrimp 4 to 5 inches from heat until just cooked through, 2 to 3 minutes. Thread base of basil leaf on a skewer, then thread shrimp, cradling it in basil by skewering tip of leaf. Serve warm or at room temperature.
