1-1/2 teaspoons salt
1-1/2 teaspoons hot or regular curry powder
1 teaspoon ground cumin
1 teaspoon dried oregano
3/4 teaspoon onion powder
3/4 teaspoon garlic powder
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper
1/4 teaspoon paprika
1/4 teaspoon ground chipotle pepper
1-1/2 pounds potatoes, cut into 1/2-inch pieces
4 medium carrots, thinly sliced
3 cups cubed peeled butternut squash (about 1 pound)
1 can (14-1/2 ounces) reduced-sodium chicken broth
1 boneless pork loin roast (3 to 4 pounds)

Steps:

  • In a small bowl, mix seasonings. In a 6-qt. slow cooker, combine vegetables, broth and 2 teaspoons seasoning mixture. Rub remaining seasoning mixture over roast; place over vegetables. Cook, covered, on low 3-1/2 to 4-1/2 hours or until meat and vegetables are tender (a thermometer inserted in roast should read at least 145°)., Remove roast from slow cooker; tent with foil. Let stand 15 minutes before slicing. Serve with vegetables.

2 tablespoons vegetable oil or 2 tablespoons peanut oil
1 onion, coarsely chopped
2 garlic cloves, chopped
1 lb pork tenderloin, thickly sliced
1 red bell pepper, seeded and diced
6 ounces mushrooms (quartered or diced depending on which you use) or 6 ounces zucchini (quartered or diced depending on which you use)
2 tablespoons Thai red curry paste
4 ounces coconut cream
1 teaspoon vegetable bouillon granules
2 tablespoons thai soy sauce
4 tomatoes, peeled seeded and chopped
handful fresh cilantro, chopped

Steps:

  • Heat oil in a large skillet and saute onions and garlic until softened, but not browned, 1 or 2 minutes; add pork slices and stir-fry until browned, 2 to 3 minutes.
  • Add bell pepper, mushrooms (or zucchini), and curry paste; add coconut cream, bouillon powder, and soy sauce; bring to a boil, reduce heat, and let simmer until some of the sauce reduces and thickens, 4 to 5 minutes.
  • Add tomatoes and cilantro, stir to combine; serve.

We love curry at our house, and I have tryed many different recipes...here's one I think you will really enjoy. The addition of apple mixed with the curry gives this dish, such a wonderful flavor...of course all spices can be adjusted to suit taste, and recipe may be easily doubled if desired...this dish is great served along side with raisin-green onion couscous.

3 tablespoons oil
4 boneless pork chops
1 small onion, chopped
2 -3 cloves fresh minced garlic
1 -2 tart cooking apple, peeled and sliced
1 small red bell pepper, cut into thin strips
1/2 cup chicken stock
1 teaspoon cornstarch
1 teaspoon curry powder
1/2 teaspoon cumin
1/2 teaspoon cinnamon
salt and pepper
chopped parsley

Steps:

  • In a large saute pan, heat oil to med-high.
  • Cook pork chops until browned on both sides, and almost cooked through; remove from pan; set aside.
  • Over med heat, cook onion, garlic, apple, and red pepper strips for 2 minutes, or until softened.
  • Blend chicken stock with cornstarch; add to pan along with curry powder, cumin and cinnamon; cook for 1-2 minutes, or until slightly thickened.
  • Return pork chops to frypan; adjust seasoning with salt and pepper.
  • Cook for 1-2 minutes, or until heated through.
  • Serve pork chops with sauce, and sprinkle with fresh parsley.
  • Note: this recipe serves 4 people, if desired, all the ingredients can be doubled to feed more.

4 8-ounce pork chops (each 1 inch thick)
1 teaspoon dried thyme
1 teaspoon dried marjoram
1 tablespoon olive oil
1 large apple, peeled, cored, chopped
1/2 onion, chopped
6 garlic cloves, minced
3/4 cup canned low-salt chicken broth
1/2 cup dry white wine
1/4 cup whipping cream
2 tablespoons honey mustard
1 teaspoon curry powder

Steps:

  • Sprinkle pork with 1/2 teaspoon thyme, 1/2 teaspoon marjoram, salt and pepper. Heat oil in heavy large skillet over medium-high heat. Add pork and cook until no longer pink inside, about 5 minutes per side. Transfer pork to plate; tent with foil to keep warm. Reserve drippings in skillet.
  • Add apple, onion and garlic to drippings in skillet and sauté over medium-high heat 2 minutes. Add chicken broth, wine, cream, mustard, curry powder and remaining 1/2 teaspoon thyme and 1/2 teaspoon marjoram. Boil until sauce thickens slightly, about 5 minutes. Divide pork among plates. Pour sauce over and serve.

This again is quite a quick dish to throw together, another one that can be on the table in about 35-45 Min's with a yummy end result. You can serve this dish over rice, as My hubby and I are watching our carb intake at the moment I served ours over bean sprouts. The flavours in this dish all compliment each other really well and the addition of the apple just gives it that something different. I just used a prepared red curry paste with this, not only for time purposes, but also for ease of making, feel free to use homemade, I would have, if I had had some already made up in the fridge.

3 tablespoons peanut oil
800 g pork fillets, sliced thinly
5 tablespoons red curry paste, adjust to your taste (I used Thai kitchen brand)
1 medium onion, sliced thinly
3 garlic cloves, crushed
2 teaspoons fresh ginger, grated
300 ml coconut milk
200 ml coconut cream
50 ml water
1 teaspoon chicken stock, granuels
2 medium apples, peeled and sliced thinly
2 teaspoons lime juice
1 teaspoon fish sauce
400 g baby bok choy, trimmed and chopped (your choice I love this veg so I added it.)
1/2 cup Thai basil, chopped coarsely

Steps:

  • Heat 1 tablespoon oil in a large wok or pan, add pork, cook in batches until browned all over, add additional oil as needed, set pork to one side. I find you use about 2 tablespoons to cook the pork and that leaves 1 tablespoon for the onion.
  • Heat remaining oil in same cleaned pan, cook onion, paste, garlic and ginger, stirring until onion softens.
  • Add coconut milk, cream, water and stock, bring to the boil, reduce heat, simmer, uncovered 5 Min's.
  • Return pork to pan, add lime juice and fish sauce, stir to combine, add apples, simmer, covered, about 10 Min's, until apples soften and pork is cooked through.
  • About 5 Min's before the end add bok choy.
  • Remove from heat and stir in basil.
  • Serve over rice or bean sprouts for lower carb version.
