RED VELVET CHERRY DREAM BARS

These Red Velvet Cherry Dream Bars with their red velvet cookie crust, sweet cheese layer, cherry pie filling, vanilla pudding and whipped topping make these bars the perfect holiday treat. Or better yet, enjoy them all year 'round.

Number Of Ingredients 9

1 16.5- ounce package Red Velvet cake mix (do not follow ingredient directions on package)
2 eggs
1/3 cup canola oil
2 3.4- ounce packages instant vanilla pudding
3 cups milk
10 ounces cream cheese (softened to room temperature)
1 cup confectioners' sugar
1 21- ounce can cherry pie filling
2 8- ounce containers Cool Whip (Dairy Whip can also be used as a substitute)

Steps:

  • Preheat oven to 350 degrees F. and prepare a 9 X 13-inch baking dish by spraying it lightly with cooking spray.
  • In a medium mixing bowl, lightly beat the eggs. Add the canola oil and cake mix and mix together until thoroughly combined with no lumps.
  • Press batter evenly into the bottom of the prepared baking dish.
  • Bake for 12 - 15 minutes until set in the middle.
  • Transfer baking dish to a wire rack to cool completely.
  • In a medium bowl, mix together the pudding mix and milk. Place into refrigerator to set.
  • In a mixing bowl, beat the cream cheese. Add the confectioners' sugar and combine.
  • Fold in two cups of the Cool Whip.

I forget where I got this recipe, but my family has enjoyed it for years. It's a fun and different way to prepare a cake mix.

Number Of Ingredients 7

1 package pillsbury plus white cake mix
1 1/4 cups rolled oats
1/2 cup butter or 1/2 cup margarine, softened
1 egg
1 (21 ounce) can cherry pie filling
1/2 cup chopped nuts
1/4 cup packed brown sugar

Steps:

  • Heat oven to 350 deg.
  • Grease 13x9" pan.
  • In large bowl, combine cake mix, 1 cup of the rolled oats and 6 T of the margarine; mix until crumbly.
  • Reserve 1 cupcrumbs for topping.
  • To remaining crumbs, add 1 egg; mix until well blended.
  • Press into greased pan.
  • Pour cherry pie filling over crust; spread to cover.
  • To reserved crumbs in large bowl, add remaining 1/4 cup rolled oats and 2 T margarine, nuts and brown sugar; mix well.
  • Sprinkle over cherry filling.
  • Bake at 350 deg for 35-40 minutes until golden brown.
  • Cool completely.
  • If desired, serve with whipped cream.

This is my favourite bar-type cookie from Company's Coming! After you've tried it, you'll understand why.

1 1/4 cups all-purpose flour
1/3 cup packed brown sugar
1/2 cup butter or 1/2 cup margarine
2 eggs
1 1/4 cups packed brown sugar
1 tablespoon flour
1/2 teaspoon baking powder
1 pinch salt
1 cup medium grind coconut
1/2 cup chopped walnuts
1/2 cup candied cherries or 1/2 cup maraschino cherry (at least)
1 cup icing sugar
2 tablespoons butter or 2 tablespoons margarine
1/2 teaspoon vanilla
1 tablespoon water

Steps:

  • FIRST LAYER: Crumble ingredients together well.
  • Press into ungreased 9 x 9 inch pan.
  • Bake in preheated 350F oven for 15 minutes.
  • SECOND LAYER: Beat eggs slightly; add remaining ingredients in the order listed.
  • If using maraschino cherries, drain well.
  • I prefer using candied cherries- at Christmas, I use a mixture of red& green.
  • Spread over first layer& return to oven for 25 minutes.
  • Let cool completely.
  • TOP LAYER: Beat ingredients in a small bowl, adding more water if necessary to make a more spreadable mixture.
  • This makes a minimum amount of icing to spread over top.

1 cup flour
2 tablespoons icing sugar
1/2 cup butter or 1/2 cup margarine
2 eggs
1 cup brown sugar
1/4 cup flour
1 teaspoon baking powder
1/8 teaspoon salt
1 teaspoon vanilla
1 cup coconut
1/2 cup maraschino cherry, cut in half
1/2 cup walnuts, chopped

Steps:

  • BASE- whisk flour and icing sugar in bowl, cut in butter or margarine and press into a greased 9x9 pan.
  • Bake base in a 300 degree oven for 10 minutes.
  • TOPPING- Beat eggs, blend in sugar and beat together.
  • Add the vanilla and the dry ingredients.
  • Add the coconut, cherries and the walnuts.
  • Spread filling on the prepared base and bake at 325 degrees for 30 minutes or until top nicely golden brown.
  • Cool until set before cutting.

Number Of Ingredients 9

3/4 cup margarine
1 cup graham wafer crumbs
2 cups icing sugar
1 tablespoon cocoa
1/4 cup margarine
1 teaspoon vanilla
1/2 cup margarine, melted
2 eggs, beaten
6 tablespoons cocoa

Steps:

  • BASE: Melt 3/4 cup margarine. Add graham crumbs. Press half the mixture into an 8-inch square baking pan. Bake for10 minutes at 350°F Cool completely.
  • FILLING: Combine icing sugar, cocoa, margarine and vanilla. Beat with electric mixer for 3 minutes. Pour over first mixtue.
  • MIX: Combine melted margarine, beaten eggs and cocoa. Mix well. Pour over top of filling and put the rest of the crumbs on top.
  • Refrigerate for 2 hours and serve.
