Roasted Venison Loin with Braised Red Cabbage, Sweet German Potato Noodles, and Juniper Berry Sauce image

2 tablespoons sunflower oil
1 pound venison loin
Salt and freshly ground black pepper
1 bay leaf
1 tablespoon chopped rosemary
I tablespoon juniper berries
2 tablespoons butter
3 ounces chopped shallots
Sunflower oil
1/4 cup Calvados
1/4 cup cognac
1 cup venison demiglace
1/4 cup plus 2 tablespoons double cream
1 tablespoon crushed juniper berries
Creme de cassis, for finishing
Banyuls vinegar, for finishing
3 ounces sugar
2 cups red wine
1/4 bottle port wine
7 white peppercorns
3 cloves
1 bay leaf
1/2 (3-inch) stick cinnamon
1 teaspoon ground cinnamon
Salt
Grated zest and juice from 3 oranges
1 1/2 heads red cabbage, sliced
8 ounces Yukon gold potatoes
Rock salt, for roasting
Scant 1/2 cup cornstarch
1 egg yolk
Butter, for searing
Walnuts, roasted and crushed, for garnish
2 ounces fresh cranberries
2 tablespoons sugar
Port wine

Steps:

  • To make the venison:
  • Preheat the oven to 220 degrees F.
  • Heat the sunflower oil in a roasting pan. Season the venison with salt and pepper, and sear it until it's nicely colored and caramelized. Roast until it's medium rare; an instant read thermometer inserted into the center should read 145 degrees. Transfer the meat to a board and let rest so the juices can settle. Spoon off the fat from the pan drippings. Add the bay leaf, rosemary, juniper berries, and butter. Return the meat to the pan and begin spooning the butter and meat juices over the meat to bring to medium.
  • To make the sauce:
  • Cook the shallots in a small amount of oil until they're softened but haven't taken on any color. Deglaze the pan with the Calvados and cognac. Add the venison glace and double cream and cook to reduce somewhat. Add juniper berries. Finish with cassis and vinegar to taste. Strain through a fine sieve.
  • To make the cabbage:
  • In a saucepan, heat the sugar on medium heat until it caramelizes. Add red wine and port and stir to dissolve into the caramel. Add the peppercorns, cloves, bay leaf, cinnamon stick, ground cinnamon, and a little salt, orange juice and zest. Put the cabbage in a bowl, pour the marinade on top, and marinate in the refrigerator for at least 24 hours.
  • To make the potato noodles:
  • Preheat the oven to 350 degrees F. Put the potatoes on a bed of rock salt and roast until soft. Peel the potatoes, break them open, and let the moisture steam out. Pass the potatoes through a potato ricer. Mix in the cornstarch and egg yolk to make a dough. Form the dough into little noodles by rolling it between the palms of your hands. Blanch the noodles in boiling salted water until done. Drain.
  • Sear the potato noodles in a hot skillet with a little butter until they're golden brown. Sprinkle with walnuts.
  • To make the cranberries: In a large bowl, toss the cranberries with the sugar and a dash of port wine to taste.

1 box (6 oz) white chocolate baking bar (6 bars), coarsely chopped
3 cups milk
6 cups cubed (1-inch) French bread (about 6 oz)
2 eggs
1/4 cup sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla
1 package (10 oz) frozen sweetened raspberries in syrup, thawed
3/4 cup cranberry juice cocktail
2 tablespoons sugar
2 tablespoons cornstarch

Steps:

  • Heat oven to 350°F. Grease 2-quart casserole with shortening or spray with cooking spray. In 3-quart saucepan, cook white chocolate and milk over medium heat about 5 minutes, stirring frequently, until white chocolate is melted (do not boil). Stir in bread cubes; set aside.
  • In large bowl, beat eggs. Stir in all remaining bread pudding ingredients until well blended. Stir in bread mixture. Pour into casserole.
  • Bake 45 to 55 minutes or until knife inserted in center comes out clean. Cool on wire rack 30 minutes.
  • Meanwhile, in 2-quart saucepan, combine all sauce ingredients. Cook over medium heat about 4 minutes, stirring constantly, until mixture comes to a boil and thickens.
  • Place strainer over 2-cup serving bowl; pour raspberry mixture into strainer. Press mixture with back of spoon through strainer to remove seeds; discard seeds. Serve warm bread pudding with sauce.

GERMAN RED BERRY SAUCE OR COULIS (ROTE GRüTZE)

I found this recipe in a German cookbook, cannot even remember which one. I needed a recipe to use up all the red currants my mother has growing in the yard.I got tired of making jam. Since many of the berries mature at different times of the year some have to be used frozen or from a jar. It would depend on which time the year you make this, but you can use either or. This is great with pancakes, vanilla ice cream, pound cake etc.

1 cup red currants
1/2 cup black currants
1/2 cup raspberries
4 cups water
1 cup strawberry
1 cup cherries
2 tablespoons cornstarch
1 cup sugar

Steps:

  • Rinse and remove stems from currents and raspberries.
  • In a medium pot add 2 cups of water. Add the currents and raspberries. Bring to boil and take pot off the heat and set aside to draw the juice and cool slightly, about 1 hour.
  • In the meantime wash, half and seed the cherries. Wash, hull, and half or quarter strawberries.
  • Go back to current, raspberry and water mixture and pour and stir through a metal sieve into a 4 cup measuring cup. (Remove about 1/4 cup of juice to mix with the cornstarch later).
  • To the juice add water to make up to 4 cups liquid. Pour into a sauce pan. Add sugar and start heating over medium heat bring to boil.
  • Stir the corn starch into the 1/4 cup of juice until well mixed and not lumpy. Stir into juice to thicken bring to rolling boil for 1 minute.
  • Carefully fold the cherries and strawberries into the sauce. Pour into glass bowl.
  • So that no skin forms, sprinkle with more sugar. Let cool. Then serve with ice cream or what ever you like. Enjoy.

Steps:

  • Heat raspberries, strawberries, and sugar in a 2- to 3-quart heavy saucepan over medium-low heat, stirring occasionally, until fruit is hot and sugar is dissolved.

2 cups fresh bing cherries, pitted and coarsely chopped (measure after pitting & chopping)
2 cups unsweetened raspberries, fresh or frozen,thawed,divided
1/4 cup granulated sugar
2 cinnamon sticks, broken into halves
4 teaspoons brandy

Steps:

  • Mix cherries,only 1 cup of the raspberries, sugar, and cinnamon sticks in a saucepan over medium high heat and bring to a boil, stirring until sugar dissolves.
  • Lower heat and let cook until cherries soften up, approximately 15 minutes.
  • Remove from heat, remove cinnamon sticks, and add brandy and remaining 1 cup berries.

1/4 cup sugar
1 cup fresh raspberries
1 cup sliced strawberries (about 6 to 8 large)

Steps:

  • Put the sugar and 1/4 cup water into a small saucepan and bring to a boil over medium heat. Cook, swirling the pan, until the sugar is completely dissolved.
  • Put the raspberries and strawberries into a blender jar and pour the hot sugar syrup over them. Puree the berries just until liquefied. Pour the mixture through a fine mesh strainer set over a bowl to strain out the seeds.
  • Transfer the sauce to a pitcher and pour over ice cream or sliced pound cake. Store the leftover sauce in an airtight container for up to 3 days.

Yep, it's that good. And although it sounds fancy, it is really easy to make. Throw a couple of potatoes in the oven, roast some asparagus and sit down to an incredible meal- candelight optional. From a little recipe card I found at the grocery store.

3/4-1 lb sirloin (cut into 2 steaks)
1 tablespoon olive oil
salt
fresh ground pepper
1 tablespoon butter
1/4 cup minced shallot
1 cup red wine
1/4 cup raspberry jam
1 tablespoon Dijon mustard
1/2 teaspoon herbes de provence (I used a combination of basil, oregano, and thyme)

Steps:

  • Cut Sirloin into 2 steaks: season to taste with salt and freshly gournd pepper.
  • Heat 1 tablespoon olive oil in a medium skillet over medium-high heat. Add steaks to skillet and sear well on both sides. Reduce heat and cook for 3 to 5 more minutes on each side or until steaks are cooked to your liking. Remove from skillet and keep warm.
  • Add 1 tablespoon butter and shallots to skillet. Saute over medium heat until soft or until soft and lightly browned. Stir in red wine, raspberry jam, dijon, and herbs de Provence. Cook over medium high heat for about 10 minutes, stirring occasionally, until sauce is thick and syrupy and reduced by half. Serve sauce over steaks.
