Here are my simple raspberry streusel bars with four incredible flavors: a buttery shortbread crust, thick raspberry filling, brown sugar streusel, and a drizzle of sweet vanilla icing.

1/2 cup (115g) unsalted butter, melted
1/4 cup (50g) granulated sugar
1 teaspoon pure vanilla extract
1/4 teaspoon salt
1 cup (125g) all-purpose flour (spoon & leveled)
3/4 cup (240g) raspberry preserves*
12-16 fresh raspberries*
1/2 cup (40g) old-fashioned oats
1/3 cup (70g) packed light or dark brown sugar
1/4 teaspoon ground cinnamon
1/4 cup (31g) all-purpose flour (spoon & leveled)
1/4 cup (60g) unsalted butter, cold and cubed
optional (but encouraged!): vanilla icing for topping

Steps:

  • Preheat the oven to 300°F (149°C). Line the bottom and sides of an 8-inch square baking pan with parchment paper, leaving enough overhang on all sides. Set aside.
  • Stir the melted butter, granulated sugar, vanilla, and salt together in a medium bowl. Add the flour and stir until everything is combined. Press the mixture evenly into the prepared baking pan. Bake for 15 minutes.
  • Remove the crust from the oven, and turn the oven up to 350°F (177°C).
  • Spread preserves over warm crust. Dot the preserves with raspberries on top.
  • Whisk the oats, brown sugar, cinnamon, and flour together in a medium bowl. Cut in the chilled butter with a pastry blender or two forks (or even with your hands) until the mixture resembles coarse crumbs. Sprinkle the filling with streusel and bake for 30-35 minutes or until the streusel is golden brown. The raspberry filling should be bubbling on the edges.
  • Remove from the oven and allow to cool for at least 20 minutes at room temperature, then chill in the refrigerator for at least 2 hours (or overnight). Lift the foil or parchment out of the pan using the overhang on the sides and cut into bars. I usually cut them into 16 smaller bars, but you can cut them into 12 larger bars. Drizzle the bars with vanilla icing, if using. These raspberry bars can be enjoyed at room temperature or cold. I personally like them cold.

1/3 cup butter or 1/3 cup margarine, melted

  • Heat oven to 350°F
  • Spray bottom of 8-inch square pan with cooking spray.

  • Press half of dough into bottom of pan; bake 15 minutes.
  • Spread jam over base.
  • Crumble remaining dough over jam.
  • Bake 20 to 25 minutes or until golden brown.

1 cup finely chopped, blanched hazelnuts
1/4 teaspoon salt
1 pound unsalted butter, cold and cubed
2 (12 ounce) jars raspberry jam
20 ounces flour
20 ounces unsalted butter
16 ounces sugar
4 ounces white chocolate
4 ounces semisweet chocolate

Steps:

  • Preheat oven to 350 degrees.
  • Process all ingredients in food processor until they begin to hold together. Pour into a half sheet pan and press evenly into bottom of pan. Bake until golden brown (about 20 to 25 minutes). Take out and cool for at least 15 mi

1 1/2 cups oatmeal (classic or quick oats)
1 and 1/4 cups flour
1/2 cup brown sugar
1 1/2 sticks of butter (3/4 cup or 6 ounces), melted
1 1/2 cups of fresh or frozen raspberries
1/2 cup of raspberry preserves
1 tablespoon flour
1 tablespoon lemon peel
1 teaspoon fresh lemon juice

Steps:

  • Preheat oven to 350º. Line 8 x 8 or 9 x 9-inch baking pan with nonstick foil.
  • Combine oats, flour, sugar, and butter, mix until crumbly. Reserve 1 cup oat mixture for streusel topping and set aside.
  • Press the remaining oat mixture into the bottom of an ungreased 9" square baking dish. Bake for 15 minutes or until golden brown. Cool slightly.
  • In a medium bowl, combine preserves, raspberries, lemon peel, juice, and flour. Mix gently.
  • Spread over crust. Sprinkle reserved oat mixture over top, patting down gently.
  • Bake for 22-25 minutes or until light golden brown. Cool and cut into bars.

2 1/2 cups unbleached all-purpose flour
2/3 cup granulated sugar
1/2 teaspoon salt
16 tablespoons unsalted butter, plus
2 tablespoons unsalted butter, cut into 1/2-inch pieces and softened to cool room temperature
1/4 cup packed brown sugar
1/2 cup old fashioned oats
1/2 cup pecans, chopped fine
3/4 cup raspberry preserves
3/4 cup fresh raspberry
1 tablespoon lemon juice

Steps:

  • Adjust oven rack to middle position; heat oven to 375 degrees. Cut 18-inch length foil and fold lengthwise to 8-inch width. Fit foil into length of 13 by 9-inch baking dish, pushing it into corners and up sides of pan; allow excess to overhang pan edges. 1 1/4 cups all-purpose flour
1/2 cup firmly packed brown sugar
1 teaspoon baking powder
1/4 teaspoon salt
7/8 cup margarine, melted
1 cup raspberry jam or 1 cup preserves
3/4 cup white chocolate chips, divided
1/4 cup toasted chopped almonds

Steps:

  • Preheat oven to 350°F.
  • Combine oats, flour brown sugar, baking powder and salt in large bowl.
  • Stir in margarine until mixture is crumbly (reserve 1 cup crumb mixture onto bottom of an 8" square pan). Bake 10 minutes.
  • Spread raspberry fruit evenly over baked crust within 1/4 inch of edges.
  • Sprinkle with 1/2 cup white chocolate chips.
  • Combine reserved crumb mixture with remaining 1/4 cup white chocolate chips and almonds.
  • Sprinkle over fruit mixture, pressing lightly into fruit.

¼ teaspoon baking soda

1 cup rolled oats
½ cup butter, softened
¾ cup seedless raspberry jam

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 8 inch square pan, and line with greased foil.
  • Combine brown sugar, flour, baking soda, salt, and rolled oats. Rub in the butter using your hands or a pastry blender to form a crumbly mixture.
