RAW RASPBERRY SHRUB

A cordial-like drink made from fruit, vinegar and sugar with sweet and sharp notes - an elegant mocktail to share with friends

300g raspberries
50g raw honey (see tip)
75ml raw apple cider vinegar (see tip)
½ small pack mint , leaves only
750ml bottle sparkling water
ice

Steps:

  • Put half the raspberries in a large bowl and lightly crush some of them with a muddler or a potato masher. Pour over the honey, stir well, cover and leave in the fridge overnight.
  • The following day, stir in the vinegar, then tip the mixture into a sieve over a large jug and press through using the back of a spoon.
  • Add the remaining raspberries, the mint leaves, sparkling water and ice. Stir gently to combine, then serve.

2 tablespoons Simple Syrup
2 tablespoons Raspberry Vinegar
1 tablespoon brandy (optional)
sparkling water or Prosecco
1 lemon slice or mint sprig

Steps:

  • Stir 3 tablespoons Simple Syrup, 2 tablespoons Raspberry Vinegar, and 1 tablespoon brandy (optional) in a 12-ounce glass. Fill glass halfway with ice. Fill glass with sparkling water or Prosecco. Garnish with a lemon slice and a mint sprig.

2 cups raspberries (about 10 ounces)
1 cup sugar
8 sprigs thyme
1 cup apple cider vinegar

Steps:

  • 1. In a medium bowl, combine the raspberries and sugar, using your hands to crush the raspberries until completely broken down. Cover and store in the refrigerator to macerate for at least 2 hours and up to 2 days. 2. Combine the thyme and vinegar in a small nonreactive bowl and store in a cool, dark place for at least 2 hours and up to 2 days. 3. Using a rubber spatula, press down on the raspberry mixture through a fine-mesh sieve into a medium bowl. Discard the solids. Strain the vinegar through the same sieve. Discard the thyme. 4. Pour the syrup and vinegar mixture into a Mason jar and store in the refrigerator for a week before serving. Serve the shrub with soda water or make a cocktail with gin and garnish with a lemon wedge.

1 (6 ounce) can frozen lemonade concentrate, thawed
2 quarts ginger ale, chilled

Steps:

  • cook raspberries 10 minutes.
  • Rub through strainer with wooden spoon; cool.
  • Add concentrate; stir in ginger ale.
  • Serve immediately.
  • You can float fresh raspberries on top.

1 cup raspberries
1/2 cup honey
1/2 cup water
3/4 cup apple cider vinegar
1 sliced lime
1/4 sliced orange
1/4 sliced pear
1/2 cup blackberry
1 (750 ml) bottle red Zinfandel wine
3/4 cup orange juice
1 (12 ounce) can chilled lime sparking water

Steps:

  • For Raspberry Shrub. Mix raspberries, honey and water and bring to boiling. Reduce heat and simmer for 15 minutes. Pour mixture through a fine mesh strainer into a medium bowl, reserving the juice. Add apple cider vinegar and stir to combine. Cool.
  • For Sangria, mix wine, fruit, juice and cooled raspberry shrub in a pitcher. Pour in the sparkling water or soda. Chill at least 30 minutes or up to 2 hours.
