1 cup cake flour, sifted
3/4 cup confectioners' sugar
14 egg whites, at room temperature
1 1/2 teaspoons cream of tartar
1/4 teaspoon salt
3/4 cup granulated sugar
2 teaspoons pure vanilla extract
1 teaspoon lemon extract
1 1/2 cups lemon curd (Lemon Curd (Stove Top or Microwave Method) Lime or Orange Curd)
1 pint fresh raspberry
1 cup confectioners' sugar
2 tablespoons fresh lemon juice
1 1/2 teaspoons finely grated lemon zest
1 pinch salt

Steps:

  • Preheat the oven to 375 degrees.
  • Place an oven rack in the center of the oven.
  • Have ready an ungreased 10- inch tube pan.
  • Sift the flour and the confectioners' sugar together into a medium bowl.
  • Beat the egg whites with an electric mixer on medium speed in a large bowl until foamy.
  • Increase the speed to medium-high, add the cream of tartar and salt, and beat just until the egg whites form soft peaks.
  • Add the granulated sugar, about 1 tablespoon at a time, beating well after each addition, and beat just until the whites form stiff, glossy peaks.
  • Add the vanilla and lemon oil and beat until well combined Sift one-fourth of the flour mixture over the egg whites and fold in with a whisk or a rubber spatula.
  • Continue gently folding, one quarter at a time, until all the flour mixture has been added, being careful not to over mix.
  • Transfer the batter to the pan.
  • Run a table knife through the batter to remove any large air pockets, and smooth the top.
  • Bake for 35 to 40 minutes, until the top is golden brown and the cake pulls away from the side of the pan.
  • Turn the pan upside down, and balance it on its elongated neck or pan legs (if it if has them), or hang the tube upside down from the neck of a tall wine bottle.
  • Let cool to room temperature.
  • Turn the pan right side up.
  • Run a knife around the edge of the cake and between the cake and the tube.
  • Top the cake with a flat plate, invert it, give a sharp downward rap to the pan to dislodge the cake and lift off the pan.
  • If the pan bottom is removable, slide a knife between the pan bottom and the cake to release it.
  • Stir the lemon glaze ingredients together in a small bowl.
  • Let stand for 10 minutes before using.
  • Cut cake in half.
  • Once completely cooled fill with lemon curd (SEE my recipe posted).
  • Top Curd with Raspberries.
  • Put top half of cake on raspberries then top with Glaze.
  • Pouring over the cake and let stand for at least 10 outside minutes, or until the glaze is set.
  • Use a sharp serrated knife to cut the cake.

1/4 cup butter, softened
1/2 cup sugar
1 large egg
1/2 teaspoon vanilla extract
1 cup cake flour
1-1/2 teaspoons baking powder
1/4 teaspoon salt
1/3 cup whole milk
FILLING:
2 cups fresh raspberries, divided
1 tablespoon sugar
2-1/2 teaspoons cornstarch
1 teaspoon lemon juice
1/8 teaspoon vanilla extract
1/4 cup sour cream
1 cup whipped topping
Additional raspberries, optional

Steps:

  • In a bowl, cream butter and sugar until fluffy. Beat in egg and vanilla. Combine the flour, baking powder and salt; add to creamed mixture alternately with milk. , Pour into a greased and floured 9-in. round baking pan. Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from the pan to a wire rack to cool completely. , Meanwhile, for filling, heat 1 cup raspberries in microwave for 30 seconds, then mash and measure 1/4 cup juice. Discard seeds. , In a small saucepan, combine sugar and cornstarch; gradually add raspberry juice. Bring to a boil; cook and stir for 1 minute or until thickened. Remove from the heat. Stir in lemon juice and vanilla; cool. , In a bowl, combine sour cream and whipped topping. Fold in cooled raspberry mixture and remaining berries. Cut cake widthwise in half. Place one layer on a serving plate. Spread with half of the filling. Top with remaining layer and filling. Garnish with additional berries if desired. Store in the refrigerator.

12 tablespoons (1 1/2 sticks) unsalted butter, softened, plus more for pans and wire racks
3 cups sifted cake flour (not self-rising), plus more for pans
4 teaspoons baking powder
1/2 teaspoon table salt
1 1/2 cups sugar
1 cup milk
1 tablespoon pure vanilla extract
4 large egg whites
Quick Seven Minute Frosting
1 cup raspberry jam

Steps:

  • Preheat oven to 350 degrees. Butter two 8-by-2-inch professional round cake pans, and line the bottom with parchment rounds. Butter the parchment, and dust pans with flour, tapping out any excess; set aside.
  • Sift together the cake flour, baking powder, and salt into a medium bowl, and set aside. Beat the butter in the bowl of an electric mixture fitted with the paddle attachment until it is creamy. Add the sugar to the butter in a steady stream, and continue beating until the butter is light and fluffy, about 3 minutes. Reduce speed to low, and add dry ingredients alternately with the milk and vanilla in three additions, starting and finishing with the dry ingredients; be careful not to overmix. Set batter aside.
  • In a medium metal bowl or clean bowl of an electric mixer, whisk egg whites just until stiff peaks form. Fold one-third of the egg whites into the batter until combined. Fold in remaining whites in two batches. Divide batter between prepared pans, and smooth tops with a metal spatula. Bake until a tester inserted near the center comes out clean and the cake springs back when pressed lightly in the center, about 30 minutes. Let pans cool 15 minutes on a wire rack before unmolding. Loosen the sides with a small metal spatula or paring knife, and invert onto greased wire racks. To prevent the layers from splitting, invert again so that the tops are up. Cool completely before assembling cake or wrapping airtight to freeze cake for later.
  • If cakes are not level, use a serrated knife to trim tops off. Carefully slice each cake horizontally into two equal layers. (You will have four layers.) Place one-third of the frosting in a bowl, and fold in raspberry jam.
  • To assemble, place one sliced layer on an 8-inch cardboard cake round. Spread the top with 1/4 inch of raspberry frosting. Repeat with remaining layers and remaining raspberry frosting, placing the final layer bottom side up. Lightly coat the assembled cake with a thin layer of white frosting to protect against crumbs in the frosting. Finish with remaining frosting. Serve immediately, or keep refrigerated until ready to serve.

I have made this cake a number of times in the past, both with raspberries and also with blueberries, also the original recipe states that you may use frozen, I have only made this using fresh berries, if using frozen berries, you might want to increase the baking time. it is just delicious!....The fruit mixed in the batter makes this a wonderful buttery moist cake with a layer of spice streusel flowing through it and sprinkled on top... remember that this can be made using frozen blueberries also.

1 cup dark brown sugar, packed
1/2 cup walnuts, finely ground
2 teaspoons cinnamon
1/2 teaspoon clove
3/4 cup butter, softened (no subs!)

1/2 teaspoon baking soda
3 teaspoons baking powder

Steps:

  • Set oven to 350 degrees.
  • Set oven rack to second-lowest position.
  • Grease a 13 x 9-inch baking pan, and line bottom with parchment paper to prevent bottom of cake from over-browning).
  • Mix together all streusel ingredients; set aside.
  • With an electric mixer, cream butter and sugar until fluffy, about 4-5 minutes, until no sugar granules remain.
  • Mix in eggs and vanilla; beat until blended, about 1-2 minutes, scraping bowl often.
  • Stir in the sour cream; beat until well blended, about 1 minute.
  • In a small bowl, sift together the flour, baking soda, baking powder and salt.
  • Add to the creamed mixture, beating until blended.
  • Gently fold in the raspberries or blueberries (if using) with a spatula, if you are using fresh berries, careful not to break the berries while mixing in, especially if using fresh raspberries.
  • Spoon about two-thirds of the cake batter into the prepared baking pan.
  • Sprinkle half of the streusel mixture on top.
  • Then dollup the remaining cake batter on top of the streusel mix (does not have to cover completely).
  • Then sprinkle the remaining streusel mixture on top.
  • Bake for about 1 hour, or until cake tests done.

This recipe came from a dear friend of mine from Church...we just love it... This treat can be made with any preserves...I've made it with blackberry, peach, strawberry...and apricot...its a goodie...enjoy!

CRUST
2 1/4 c flour
3/4 c sugar
3/4 c cold butter
3/4 c sour cream
1 egg
1/2 tsp baking powder
1/2 tsp baking soda
1 tsp vanilla extract or almond
CREAM CHEESE FILLING
1 - 8 oz softened cream cheese
1 egg
1/4 c sugar
1/2 c chopped nuts, whatever kind you want to use
3/4 c raspberry preserves - stirred to make easier to spread

Steps:

  • 1. Preheat oven to 350 degree F. Spray a 9 inch springform pan with non stick cooking spray... In my food processor I added the flour and sugar...pulse a few times to blend...then add the cold butter - cut into pieces. Pulse until the mixture looks like coarse crumbs. Reserve 1 cup for topping - set aside.
  • 2. In another bowl, pour in the crumbs and add to it 1 egg, sour cream, baking powder, baking soda and extract. Mix until thoroughly blended.
  • 3. Press the batter into the bottom and 2 inches up the side of your greased springform pan. The batter is somewhat sticky, I greased my fingers for this with some shortening. Or use a spoon to spread.
  • 4. In a small bowl, combine the cream cheese, sugar, and egg. Spoon into prepared crust and spread evenly.
  • 5. Now, spread on the preserves, evenly.
  • 6. Sprinkle the top evenly with reserved cup of crumbs. Sprinkle with nuts.
  • 7. Bake for 45 - 50 minutes. Cool on wire rack for about 15 minutes. Run a knife around the inside edge of the pan to loosen the cake. Now, remove the sides of the pan. Continue cooling for 2 - 3 hours. Store leftovers in refrigerator. Enjoy!
