Jazz up any salad with this simple but vibrant and fruity raspberry vinaigrette! Use fresh or frozen raspberries, and a few more ingredients to make this vinaigrette in just 5 minutes.

1 cup raspberries (fresh or frozen)
1 small shallot
⅓ cup olive oil
2 tablespoons red wine vinegar
½ teaspoon salt

Steps:

  • Add all of the ingredients to a small jug or bowl, and blend using an immersion blender.
  • If you don't have an immersion blender, you can use a food processor or just a blender. Add all of the ingredients and blend for 30 seconds-1 minute.

This dressing is so tasty that I could eat it with a spoon, but amazingly it is suitable for serving to the two in my family who are diabetics. You would never guess that it has no sugar added. I adapted this recipe from one I believe I originally found in Homemakers magazine. Serving size is calculated as 2 Tablespoons per serving, but that will depend on personal preference.

2 tablespoons raspberry vinegar
2 tablespoons no-sugar-added raspberry jam (I use President's Choice Blue Menu 50% fruit raspberry, sweetened with sucralose)
1/3 cup canola oil

Steps:

  • Whisk raspberry jam, and raspberry vinegar together.
  • Add canola oil in a slow, steady stream while whisking. Vinaigrette will thicken.

An easy way to make use of the summer's best produce, my homemade raspberry vinaigrette dressing is oh so easy to make. With just three base ingredients, this raspberry vinaigrette recipe is gluten-free, vegan and has no added sugar - just plenty of goodness.

2 cups raspberries
1/4 cup wine vinegar (red or white)
2 Tbsp olive oil (extra virgin)
1/2 tsp salt
1/4 tsp black pepper
sweetener (optional - honey, agave, maple, erythritol, or sugar)

Steps:

  • Rinse the raspberries and place them in a small saucepan. Roughly mash the raspberries with a potato masher or fork.If you think that the raspberries are not sweet enough, you can then add 1-2 tsp of sweetener.
  • Heat them on low heat for about 5 minutes. This will help to intensify the flavors. Stir the mixture occasionally.
  • Once reduced, sieve the mixture with a fine mesh strainer. This helps to get rid of the raspberry seeds and excess thick fruity pulp. If you don't mind your dressing with a bit of "body", feel free to skip this step.
  • Allow the raspberry mixture to cool before mixing with the remainder of the vinaigrette ingredients - olive oil, vinegar, salt, and pepper. Whisk well. Taste the dressing and adjust the sweetness/acid, as needed. I like to allow the dressing an hour or two to infuse. However, it is ready to use immediately.
