This mouth-watering cake recipe combines the sweet and nutty flavour of almonds and combines them with the tangy and delightfully sweet taste of fresh raspberries. These flavours are delicious together and are reminiscent of a classic raspberry jam and almond Bakewell tart. The recipe is simple and easy to follow and is a must try for fans of the classic Bakewell tart.

Number Of Ingredients 8

2 eggs
160g butter (softened)
160g self- raising flour
160g granulated sugar
160g ground almonds
2-3 tablespoons milk
1 teaspoon vanilla extract
2.5 teaspoons almond extract

Steps:

  • Pre heat the oven to 170°c (approx. 325°f) and line a 23cm cake in with parchment paper and grease with butter or non- stick spray.
  • Place the ground almonds, butter, sugar and eggs in a bowl and mix with an electric mixer until well combined.
  • Remove the bowl from the mixer stand and fold in the self- raising flour until it is all folded in and no dry powder can be seen.
  • Add both the vanilla and almond extracts and mix well.
  • The mixture may seem dry and thick and not smooth like a cake batter should be, if this is the case add the milk one tablespoon at a time and mix between each addition of milk. You may need to use more or less milk than the recipe asks for depending on how thick your mixture is. The finished mix should be fairly smooth and have the consistency of any other typical cake batter.
  • Once the mixture is ready, pour half of the batter into the prepared cake tin. Gently smooth the batter and spread it out evenly.
  • Top the layer of cake batter with the fresh raspberries spreading them out evenly. Pour the remaining batter over the raspberries and spread it out so that no raspberries can be seen. It may be easier to spread the mixture out using your fingers instead of a spoon.
  • Once the raspberries have been covered and the cake mixture has been evenly spread out, top the cake with the flaked almonds before using the back of a spoon to gently press the almonds into the cake so that they get stuck in the cake batter.
  • Place in the middle of the oven for 50 minutes. Once the timer goes insert a skewer or tooth pick into the cake and it should come out clean (if the toothpick hits a raspberry it may come out wet, so try testing the cake with a toothpick a few times to double check)
  • Remove from the oven and leave to cool in the tin for 5 minutes before transferring to a wire rack to cool further, it doesn't have to cool completely before eating.
  • Dust with some icing sugar before serving. The cake tastes best whilst still slightly warm. It should be stored in an airtight container once it has cooled completely.

A beautiful soft, fine-grained vanilla birthday cake with luscious butter frosting and raspberry jam filling from the amazing folks at America's Test Kitchen. Lemon curd works really well too. You can omit the almonds for a nut-free cake. To quickly bring the milk and egg white mixture to room temperature, set the bottom of the measuring glass in hot water and stir until it feels cool rather than cold, around 65 F. MAKE AHEAD: Cake layers can be wrapped and stored for a day; frosting can be covered with plastic wrap and set aside at room temperature for several hours. Once assembled, the cake should be covered with an inverted bowl or cake cover and refrigerated. Under its coat of frosting, it will remain fresh for up to three days. Bring it to room temperature before serving. There is enough frosting to pipe a border around the base and top of the cake. If you want to decorate the cake more elaborately, you should make one and a half times the frosting recipe. 1 3/4 cups granulated sugar (12 1/4 ounces)
4 teaspoons baking powder
1 teaspoon table salt
12 tablespoons unsalted butter, softened but still cool (1 1/2 sticks)
16 tablespoons unsalted butter, softened but still cool (2 sticks)
4 cups confectioners' sugar (1 pound)
1 tablespoon vanilla extract
1 tablespoon whole milk
1 pinch table salt
1/2 cup blanched slivered almond, toasted and chopped coarse (2 1/2 ounces)
1/3 cup raspberry jam (seedless) or 1/3 cup lemon curd

Steps:

  • For the Cake: Set oven rack in middle position. (If oven is too small to cook both layers on a single rack, set racks in upper-middle and lower-middle positions.) Heat oven to 350 degrees. Spray two 9-inch round cake pans with nonstick cooking spray; line the bottoms with parchment or waxed paper rounds. Spray the paper rounds, dust the pans with flour, and invert pans and rap sharply to remove excess flour.
  • Pour milk, egg whites, and extracts into 2-cup glass measure, and mix with fork until blended.
  • Mix cake flour, sugar, baking powder, and salt in bowl of electric mixer at slow speed. Add butter; continue beating at slow speed until mixture resembles moist crumbs, with no powdery streaks remaining.
  • Add all but 1/2 cup of milk mixture to crumbs and beat at medium speed (or high speed if using handheld mixer) for 1 1/2 minutes. Add remaining 1/2 cup of milk mixture and beat 30 seconds more. Stop mixer and scrape sides of bowl. Return mixer to medium (or high) speed and beat 20 seconds longer.
  • Divide batter evenly between two prepared cake pans; using rubber spatula, spread batter to pan walls and smooth tops. Arrange pans at least 3 inches from the oven walls and 3 inches apart. (If oven is small, place pans on separate racks in staggered fashion to allow for air circulation.) Bake until thin skewer or toothpick inserted in the center comes out clean, 23 to 25 minutes.
  • Let cakes rest in pans for 3 minutes. Loosen from sides of pans with a knife, if necessary, and invert onto wire racks. Reinvert onto additional wire racks. Let cool completely, about 1 1/2 hours.
  • For the Frosting: Beat butter, confectioners' sugar, vanilla, milk, and salt in bowl of electric mixer at slow speed until sugar is moistened. Increase speed to medium-high (high if using handheld mixer); beat, stopping twice to scrape down bowl, until creamy and fluffy, about 1 1/2 minutes. Avoid overbeating, or frosting will be too soft to pipe.
  • For the Filling: Before assembling cake, set aside 3/4 cup of the frosting for decoration. Spread small dab of frosting in center of cake plate to anchor cake, and set down one cake layer. Combine 1/2 cup of remaining frosting with almonds in small bowl and spread over first layer. Carefully spread jam on top, then cover with second cake layer. Spread frosting over top and sides of assembled cake. Pipe reserved frosting around perimeter of cake at the base and the top. Cut the cake into slices and serve.

1 teaspoon vanilla extract
1 3/4 cups granulated sugar
4 teaspoons baking powder
1 teaspoon table salt
12 tablespoons unsalted butter, softened but still cool
Frosting -
16 tablespoons unsalted butter, softened but still cool
4 cups confectioner's sugar
1 tablespoon vanilla extract
1 tablespoon whole milk
pinch table salt
extra sliced almonds for garnish
Filling -
1/2 cup blanched slivered almonds, toasted and coarsely chopped
1/3 cup seedless raspberry jam

Steps:

  • 1. Set oven rack in middle position and pre-heat to 350. 2. Spray 2 9-inch cake pans with non-stick spray, place parchment rounds on bottom of pans, spray parchment rounds, and dust whole pans with flour, tapping out excess (I used non-stick spray with flour) 3. Pour milk, egg whites, and extracts in 2-cup measure, mix with fork until blended 4. Mix flour, sugar, baking powder, and salt in bowl of electric mixer at slow speed. Add butter, continue beating at slow speed until mixture resembles moist crumbs. 5. Add all but 1/2 Cup of milk mixture and beat at medium speed for 1 1/2 minutes. Add remaining 1/2 Cup of milk mixture and beat 30 seconds more. Scrape down sides and beat another 20 seconds on medium. 6. Divide batter evenly between 2 pans, making sure batter is spread to sides and top is smooth. Arrange pans at least 3 inches apart and bake until toothpick inserted in center comes out clean, about 23-25 minutes 7. Let the cakes rest 3 minutes, loosen cake from sides of pan if necessary and invert onto wire racks. Reinvert and let cool completely, about 1 1/2 hour. 8. For the Frosting: Beat butter, confectioners' sugar, vanilla, milk, and salt in bowl of electric mixer at slow speed until sugar is moistened. 3 medium eggs
1 pkg white cake mix
1 1/4 c water
1/3 c vegetable or canola oil
1 c seedless raspberry preserves
your favorite white frosting ( i used my cream cheese frosting that i use on my spansh bar cake)

Steps:

  • 1. Heat oven to 350 degrees. spray two 9 inch cake pans with non stick coating ( I use Pam baking spray)
  • 2. Beat together the almond paste and eggs until smooth, don't worry about small granules of the almond paste they melt away during baking
  • 3. add cake mix, water and oil to the almond mixture and beat for 2 minutes or until smooth.
  • 4. divide batter evenly between the two cake pans. bake for 35 minutes or until a toothpick comes out clean. cool and remove from pans
  • 5. place one layer on a serving plate and spread the preserves to within one inch of the edge, top with remaining layer and frost with desired frosting.

¾ cup butter, melted

This is a good, basic go-to buttermilk cake - moist and ever-so-light - a great jumping off point for whatever you can dream up. Try different berries - the original had no almond extract or almonds but I love it. A little cinnamon and nutmeg with pinch of ginger with peach chunks would be delicious.   • In a larger bowl, beat butter and 2/3 cup sugar with an electric mixer at medium-high speed until pale and fluffy, then beat in vanilla & almond extract and the zest. Add egg and beat well.
  • At low speed, mix in flour mixture in three batches, alternating with buttermilk, beginning and ending with flour, and mixing until just combined. Spoon batter into cake pan, smoothing top. Scatter raspberries evenly over top and sprinkle with remaining 1 1/2 tablespoons sugar and sliced almonds.
  • Bake until cake is golden and a wooden pick inserted into center comes out clean, 20 to 25 minutes. Cool in pan 10 minutes, then turn out onto a rack and cool to warm, 10 to 15 minutes more. WHITE ALMOND CAKE
1 box white or vanilla cake mix (i used a white mix)
1 c sugar
1 c plus 2 tbsp. cake flour (do not use all-purpose)
1/8 tsp salt
1 1/3 c water
3 eggs
1/2 c melted butter
1 c sour cream
1 tsp vanilla or almond extract (this is opt. i used a tsp. of each.)
RASPBERRY FILLING
12 oz frozen unsweetened rasperries, thawed
1/2 c sugar
1 tsp lemon juice
2 Tbsp (heaping tbsp.) cornstarch
2 Tbsp raspberry liqueur (this is opt. but packs huge flavor to the filling. i used razzmatazz)

Steps:

  • 1. For the cake: In a large bowl, using a hand held mixer or a kitchen aide, combine the water, eggs, melted butter, sour cream and the extract(s)(if you're using). Mix well.
  • 2. Add the salt, sugar, cake flour and cake mix. Mix well on medium speed working out most of the lumps for about 2 mins. (It's not necessary to work out all the lumps)
  • 3. Pour into prepared pans and bake at 325 degrees for approximately 35mins.
  • 4. For the Raspberry filling: Thaw raspberries and strain the juice from the berries. Add enough water to the juice to get 3/4 cup of juice.
  • 5. In a small saucepan, combine raspberry juice/water, sugar, lemon juice and cornstarch. Cook over medium heat, whisking constantly, until mixture bubbles and thickens. Remove from heat, set aside and allow to cool.
  • 6. Using a fine wire strainer, use a spoon to press the raspberries so that the seedless pulp falls into a bowl below. Strain enough pulp to get between 1/3-1/2 cup of pulp. ***You can skip this step and use the whole berries. But some people may not enjoy picking seeds out of their teeth.
  • 7. After the mixture in the saucepan has cooled to about room temp., add the raspberry pulp and the 2 tbsp. of raspberry liqueur (if you're using). Mix well and refrigerate 2-3 hours. *Keeps in the fridge for at least a week.

I got this recipe from a Cooking Light cookbook and have made it several times. It is a great alternative to your everyday pancakes or eggs. While the recipe originally calls for the use of raspberries, my family likes using blueberries better! You MUST try this!

1 cup flour
1/3 cup sugar
1/2 teaspoon baking powder

1 egg
1 tablespoon sliced almonds
1/4 cup powdered sugar

Steps:

  • Preheat oven to 350°F.
  • Combine raspberries (or blueberries) and brown sugar in a bowl. Set aside.
  • Combine flour and next 4 ingredients (flour through salt) in a large bowl. Combine yogurt, butter, 1 teaspoon vanilla and egg in a small bowl. Stir well.
  • Add to the flour mixture, stirring just until moist.
  • Spoon two-thirds of the batter into an 8-inch round cake pan coated with cooking spray.
  • Top with raspberry (or blueberry) mixture.
  • Spoon remaining batter over raspberry (or blueberry) mixture. Top with almonds.
  • Bake at 350°F for 40 minutes. Let cool slightly.
  • Combine milk, powdered sugar and 1/4 teaspoon vanilla. Stir well and drizzle over cake.

This is a recipe from my Mom and I've had to be a detective to figure out where she got it from. I think this one is from Cooking Light because it seems to be somewhat 'lightened'. The original recipe called for 2 T. of margarine but we don't use margarine in my house so I've replaced it with butter. Use the margarine if you wish (margarine has trans fats but I won't do the lecture).

2 sticks (16 tablespoons) unsalted butter, room temperature, plus for greasing pans
1 1/4 cups sugar
8 eggs, separated
1 cup almond meal
2 cups all-purpose flour
4 1/4 teaspoons baking powder
1/4 cup evaporated milk
1/4 cup almond liqueur
1 cup water
3/4 cup sugar
1/4 cup almond liqueur
2 sticks (16 tablespoons) unsalted butter, room temperature
1 cup cream cheese, room temperature
4 cups powdered sugar, sifted
1/4 cup freshly squeezed lime juice
Zest of 2 limes
1 pint raspberries
1/2 pint blackberries
1/4 cup sugar
1/4 cup water
Juice of 1 lime
Blackberries
Raspberries
White chocolate curls, fans, etc., optional
Powdered sugar

Steps:

  • For the almond cake: Preheat the oven to 325 degrees F. Grease two 8-inch round cake pans with butter and line with parchment.
  • In a stand mixer fitted with the paddle attachment, cream the butter and sugar together until light and fluffy, 8 to 10 minutes. Add the egg yolks, one at a time, fully combining before each addition. Keep mixing until light and pale. Add the almond meal and mix to combine.
  • In another bowl, sift together the flour and baking powder to combine. Set aside.
  • Combine the evaporated milk and almond liqueur. Set aside.
  • With the mixer on low speed, alternate adding one-third of the flour mixture and one-half of the evaporated milk mixture to the creamed butter. Start and end with the flour, and do not overmix.
  • With a hand mixer or stand mixer, whisk the egg whites in a clean bowl until stiff. Gently fold into the batter.
  • Divide the batter between the prepared cake pans. Bake until the tops are golden and spring back when touched, 30 to 35 minutes.
  • Let cool for about 5 minutes, then run a paring knife or mini offset spatula around the pans and unmold the cakes onto a rack. Let cool completely, 15 to 20 minutes.
  • For the almond liqueur simple syrup: Whisk the water and sugar together in a small saucepan and bring to a boil over high heat. Boil for 2 to 3 minutes, then turn off the burner and let cool for about 20 minutes
  • Once cooled, stir in almond liqueur. Reserve.
  • For the key lime buttercream: In a stand mixer with the paddle attachment, cream the butter and cream cheese together until light and fluffy, about 5 minutes. Mix in the powdered sugar, one cup at a time, and then add the lime juice and zest. Scrape down the bowl and mix for another 5 minutes, until satiny and fluffy. Reserve.
  • For the raspberry compote: In a medium saucepan over medium heat, combine the raspberries, blackberries, sugar, water and lime juice. Cook until you can start to crush the berries with the back of a spoon, 5 to 10 minutes. Cook for another 5 minutes to thicken a bit. Remove from the heat and set aside.
  • To assemble: Slice each cake horizontally into two equal layers. Place the first layer, cut-side up, on a cake board. Using a pastry brush, brush the surface with about 3 tablespoons of the almond syrup.
  • Transfer the buttercream to a pastry bag fitted with a 1/4-inch round tip and pipe a border around the edge of the cake.
  • With a mini offset spatula, spread a thin layer of buttercream in the center of the cake layer. Then, staying inside the piped border, spread a thin layer of the raspberry compote on top of the buttercream.
  • Place another cake layer, cut-side up, on top. Repeat with the rest of the layers.
  • To decorate the top of the cake: Pipe a border of buttercream beads around the edge and then spread with a thin layer of buttercream. Top with blackberries, raspberries, and white chocolate decorations if using. Sprinkle with powdered sugar, and enjoy.

2/3 c 150g butter
3/4 c 150g caster sugar
2 eggs (lightly beaten)
1 lemon zest, grated
1/3 c 50ml milk
1-3/4 c 200g selfraising flour (sieved)
1/2 c 100g ground almonds
1/2 c 100g white chocolate chips
1 c 150g frozen raspberries( frozen are better they don't break up when mixing also they are cheaper)
10 frozen raspberries for top of cake
1 handful of flake almonds for sprinkling on top of cake

Steps:

  • 1. Pre-heat the oven to 180c/350f. Prepare a 2lb loaf tin ,line it with greaseproof paper.
  • 2. cream the butter and sugar together for 2 minutes ,until light + fluffy. In a separate bowl beat the eggs + milk together . Add in to butter while mixing also to stop curdling add in a small amount of flour . If it does curdle though don't worry .
  • 3. fold in the rest of the flour, ground almonds, lemon zest and white chocolate chips fold in well.
  • 4. Then fold in the frozen raspberries , don't forget to leave out 10 for the top of the cake.
  • 5. Spoon the cake mixture into your prepared loaf tin ,smooth over the top with a back of a spoon . Press in the 10 raspberries on top of cake mixture and then sprinkling over the flake almonds . Bake in your pre-heated oven for 55 minutes . Until an inserted skewer into the middle of the cake comes out clean.
  • 6. once ready leave to cool in tin for 15-20 minutes. Carefully removed from loaf tin and leave to rest on a wire rack. When completely cooled enjoy a slice with a big mug of coffee .... :)

1 1/2-pint basket raspberries

  • Preheat oven to 375°F. Mix first 5 ingredients in bowl. Press mixture into 8-inch-diameter springform pan. Bake until just golden brown on edges, about 10 minutes. cool completely.
  • Drop frozen yogurt and sorbet by alternating scoopfuls into prepared pan. Press yogurt and sorbet firmly to avoid air spaces. Cover with plastic and freeze until solid, about 4 hours.(Can be prepared 5 days ahead.)

3 egg whites, room temperature
1/3 cup plus 2 Tbsp buttermilk
6 Tbsp unsalted butter, softened
3/4 cup plus 2 Tbsp granulated sugar
1 1/4 cup cake flour
1/2 Tbsp baking powder
1/4 tsp kosher salt
1 Tbsp almond extract
1/2 cup unsalted butter, softened
1/2 cup heavy cream
1 1/2 tsp almond extract
4 cup powdered sugar
1/2 cup Raspberry preserves

Steps:

  • For the cake, whisk together the egg whites, almond extract and 2 Tbsp milk in small bowl until combined. Set aside.
  • In a mixing bowl, beat butter and sugar for 2-3 minutes on medium. Add in dry ingredients and mix until combined. Slowly add in egg white mixtures. Beat in remaining milk.
  • Fill cupcake liners half full with batter and bake in a 350 degree oven for 15-17 minutes. Remove and cool in pan 5 minutes, then transfer to a wire rack to cool completely.
  • Fill a pastry bag with raspberry filling. I used a small star tip and poked it into the top of each cupcake. Give a good squeeze, you will see the cupcake rise at is fills. Remove and continue until all cupcakes are filled.
  • For the frosting, beat butter and heavy cream in mixer for 3 minutes. Add in almond extract and powdered sugar. Beat an additional 5 minutes until light and fluffy. Pipe on cupcakes. ENJOY!

  • Place raspberries in a fine-mesh strainer set over a bowl; press and scrape with a spoon to squeeze out juice. Discards seeds and skins.
