Number Of Ingredients 8

8 ounces cream cheese, at room temperature
2 tablespoons mayonnaise
8 ounces sharp Cheddar, shredded
8 ounces aged Gouda, shredded
1 roasted red pepper, diced (about 1/2 cup)
Kosher salt and freshly ground black pepper
8 slices cracked wheat bread
3 tablespoons mayonnaise or softened unsalted butter

Steps:

  • For the pimento cheese: Combine the cream cheese and mayonnaise in the bowl of a stand mixer fitted with a paddle attachment. Mix on medium speed until smooth, about 1 minute. Add the Cheddar and Gouda and mix to combine on low, about 1 minute. Stir in the roasted red peppers by hand. Taste and season with salt and pepper, but go heavy on the pepper; start with 1/2 teaspoon and go from there.
  • For the sandwiches: On low heat, warm a cast-iron skillet. Put a heaping 1/2 cup of the pimento cheese between 2 slices of bread. Don't spread the mixture all the way to the crust because it will soften and spread as it heats in the skillet. Repeat with the remaining bread and cheese.
  • Smear one side of each sandwich with mayonnaise, and place the sandwiches in the skillet mayonnaise-side down. Smear the top pieces of bread with mayonnaise. Cook until golden brown and the cheese has just started to melt, about 5 minutes. Flip and cook the other side until golden, another 3 minutes. Slice into halves or quarters and serve immediately.
  • Reserve any remaining pimento cheese in the refrigerator for up to 3 days.

4 slices sourdough bread
1/4 cup butter, softened
1/2 cup pimiento cheese spread
2 tablespoons pepper jelly
6 cooked thick-sliced bacon strips

Steps:

  • Spread both sides of bread slices with butter. In a large skillet, toast bread on 1 side, over medium heat until golden brown, 3-4 minutes. Remove from heat; place toasted-side up. Spread cheese over toasted bread slices. Top 2 slices with jelly, then with bacon. Top with remaining bread slices, cheese facing inward. Cook until bread is golden brown and cheese is melted, 3-4 minutes on each side. If desired, serve with additional jelly.

8 ounces shredded cheddar cheese
4 ounces diced pimentos
1/2 cup mayonnaise
garlic salt
1/2 teaspoon louisiana hot sauce
1 tomatoes, sliced thinly
8 slices pumpernickel bread
butter

Steps:

  • Mix first 5 ingredients together.
  • Spread 1/2 cup of cheese mixture on 1 side of 4 slices of the Pumpernickel.
  • Top each with 2-3 slices of tomato.
  • Top with remaining bread slices.
  • In non-stick skillet over medium-high heat, brown both sides of each sandwich in a small amount of butter.

I developed this Chili recipe several years ago & I won 2nd place in a local chili contest. It's become a family & friend favorite...my brother-in-law is considered a "chili connoisseur" & he says it's the best he has ever had! One time, a friend's wife ate 5 bowls of it, that I KNOW of.....YIKES!!! Hope you enjoy it, too! BTW....I do NOT put in kidney beans or macaroni, but you do whatever you like. IMO that's a darn good way to ruin chili!!!

3 -4 lbs ground chuck
1 large Spanish onion, coarsely chopped
2 -3 stalks celery, coarsely chopped
2 -3 garlic cloves, chopped fine
1 1/2 teaspoons Lawry's Seasoned Salt
1 (28 ounce) can whole tomatoes, undrained
1 (28 ounce) can crushed tomatoes
2 cups tomato juice
1 (10 ounce) can green chilies, drained & chopped (I use the mild)
2 tablespoons chili powder
2 tablespoons sea salt
1 1/2 teaspoons oregano
1 1/2 teaspoons cumin seeds
2 -3 teaspoons hot sauce (I use TRAPPEY'S)

Steps:

  • In a large dutch oven or skillet, melt 2 T. butter flavored CRISCO.
  • Add the first 4 ingredients & season with the LAWRY's.
  • Cook & stir occasionally, until all pink is almost gone & vegetables are soft, but not brown.
  • Drain well.
  • Place in a large crockpot.
  • Add remaining ingredients.
  • Using your hands, crush the the whole tomatoes.
  • Stir well.
  • Cook on low setting for 6-8 hours, stirring occasionally.
  • Correct the seasonings to your taste.
  • Best if cooled & reheated the next day.
  • Serve with a crusty bread or corn bread.

1 (4 ounce) jar diced pimentos, drained
1/2 cup mayonnaise
1/2 cup sour cream
1 teaspoon finely grated onion
1 teaspoon Worcestershire sauce
1/4 teaspoon ground red pepper
1 (8 ounce) package sharp cheddar cheese, finely shredded
1 (8 ounce) package sharp white cheddar cheese, finely shredded
8 slices bread
2 medium tomatoes, sliced
2 tablespoons butter, melted
vegetable oil cooking spray

Steps:

  • Stir together first 6 ingredients in a large bowl until blended; stir in cheeses.
  • Heat electric griddle to 350 degrees, or a nonstick skillet over medium-hgh heat. Spread 1/3 cup cheese on 4 bread slices. Top with tomato slices and remaining 4 bread slices. Brush one side of sandwiches evenly with 1 tablespoon melted better.
  • Spray hot griddle or skillet with cooking spray. Place sandwiches, buttered side down, on griddle or in skillet. Brush tops with melted butter. Cook 2-3 minutes on each side or until golden. Serve immediately.

1 (4 ounce) jar diced pimentos, rinsed and drained
1/2 cup mayonnaise

I made this when I wanted a grilled cheese and I didn't have any cheese slices and I didn't want to go to the store. This is really great served with a bowl of tomato soup.

2 slices bread (i used white bread)
1 1/2 tablespoons pimento cheese (any kind will do)
1/2 teaspoon margarine (or less)

Steps:

  • On one side of each slice of bread, thinly spread margarine.
  • Place one piece of bread in cold skillet, margarine side down.
  • Spread pimiento cheese on bread in skillet.
  • Place other slice of bread on top of cheese, margarine side up.
  • Turn on stove, and brown on each side for about 4 or 5 minutes or until lightly browned.
