1-1/2 pounds ground beef
1 can (28 ounces) baked beans
1 can (11 ounces) whole kernel corn, drained
1/4 cup barbecue sauce
2 tablespoons ketchup
1 tablespoon prepared mustard
3/4 cup shredded cheddar cheese
Sliced green onions and sour cream, optional
7 cups tortilla chips

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the baked beans, corn, barbecue sauce, ketchup and mustard; heat through. Sprinkle with cheese; cook until melted., Garnish with onions and sour cream if desired. Serve with tortilla chips.

1/2 cup chopped green pepper
1/3 cup chopped celery
1/4 cup chopped onion
1 tablespoon canola oil
1 pound fully cooked smoked sausage, sliced
2 cups water
1 can (10 ounces) diced tomatoes and green chilies, undrained
1 package (6.8 ounces) Spanish rice and pasta mix
1/4 cup sliced pimiento-stuffed olives
1/8 teaspoon pepper

Steps:

  • In a large skillet, saute the green pepper, celery and onion in oil until tender. Stir in the remaining ingredients. Cover and simmer for 15-20 minutes or until rice is tender and liquid is absorbed, stirring occasionally.

3 parsnips, cut into 1/4-inch slices
3 sweet potatoes, cut into wedges
2 red onions, cut into quarters
3 tablespoons olive oil
1/2 teaspoon dried sage
Sprinkle of kosher salt
Sprinkle of freshly ground black pepper
12 Italian sausages

Steps:

  • Preheat the oven to 375 degrees F.
  • Add the Brussels sprouts, parsnips, sweet potatoes and onions to a baking sheet. Add the olive oil, sage, salt and pepper and toss. Put the sausages in and around the vegetables.
  • Bake until the sausages are cooked through and the vegetables are tender, 40 to 45 minutes. Serve.

1 slice bacon
½ onion, chopped
1 (14.5 ounce) can whole peeled tomatoes, drained and chopped
¼ (6.5 ounce) can tomato sauce
¼ cup chopped fresh cilantro, or to taste
½ jalapeno pepper, chopped, or to taste
salt and ground black pepper to taste

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until slightly browned, about 5 minutes. Cook and stir onion in the bacon grease until onion is transparent, 5 to 10 minutes. Remove bacon from skillet and drain on a paper towel-lined plate; crumble.

1 lb bulk sausage
1 large onion, chopped
1 cup celery, chopped
1 small carrot, shredded
1 cup uncooked white rice
1 (10 ounce) cream of mushroom soup
1 (14 ounce) chicken broth
1 cup water
1 teaspoon dry ranch dressing mix (Hidden Valley)
1/2 teaspoon salt

Steps:

  • In a large saucepan brown sausage, drain well and crumble. Set aside. In same pan saute onion and celery in 1 teaspoon oil. Mix in carrots and sausage.
  • Place uncooked rice in bottom of a 9 x 9 or 3 quart baking dish. Place sausage mixture in baking dish on top of uncooked rice.
  • In a medium size bowl mix soup, chicken broth, water, dry ranch mix and salt. Pour over sausage mixture and cover with foil.
  • Bake in a 350 degree oven for approximately 50 minutes.

These are easy to make you can do the wonton wraps the day or so ahead and have the sausage mixture made in advance then just 5 minutes before serving you fill the wraps and pop them in the oven. For a lighter exterior I prefer to use Spring Roll wraps. Use your regular pork breakfast sausage. if you wish use Italian sausage or bratwurst

1 lb cooked crumbled sausage meat, casings removed (2 cups cooked)
1 1/2 cups sharp cheddar cheese, grated
1 1/2 cups monterey jack cheese
1 cup hidden valley original ranch salad dressing, prepared from mix
1 (2 1/4 ounce) can sliced black olives
1/2 cup chopped sweet red pepper
1 (60 count) package wonton wrappers
vegetable oil

Steps:

  • Heat oven to 350 degrees F.
  • Combine drained cooked sausage meat with the cheeses, salad dressing, olives and red pepper
  • Lightly oil mini muffin tins and press a wrap in each tine so there are 4 wings sticking out
  • Brush with oil bake 5 minutes until golden, remove wraps from pan, place on a baking sheet
  • Fill wraps with the sausage, cheese mixture
  • Bake for 5 minutes or until the cheese is bubbly& brown.
