CHICKEN RANCH WRAPS

2 cups cooked grilled chicken breasts (chopped (seasoned with your favorite spices, see note*))
1/4 cup Hidden Valley® Simply Ranch dressing
1/2 cup mozzarella cheese
1/4 cup cilantro (minced (optional))
4 8 '' tortillas

Steps:

  • Lay tortillas on a clean flat surface. Place about 1/2 cup chicken, 1 tablespoon ranch, 2 tablespoons of cheese, and 1 tablespoon of minced cilantro on each tortilla. Fold tightly to form a burrito shape.
  • Heat a heavy-duty pan or grill to medium heat. Coat with a light layer or oil or cooking spray and cook wraps for 1-2 minutes on each side or until the tortilla is crispy and golden. Remove from heat, slice in half and serve immediately.

2 tablespoons vegetable oil
4 (6 inch) corn tortillas
1 cup refried beans with green chilies
1 teaspoon butter
4 eggs
1 cup shredded Cheddar cheese
8 slices bacon, cooked and crumbled
½ cup salsa

Steps:

  • Heat oil in a small skillet over medium-high heat. Fry tortillas one at a time until firm, but not crisp. Remove to paper towels to drain grease.
  • Meanwhile, combine the refried beans and butter in a microwave-safe dish. Cover, and cook in the microwave until heated through. When tortillas are done, fry eggs over easy in the skillet. Add more oil if the tortillas have absorbed it all.
  • Place tortillas onto plates, and spread a layer of beans on them. Top with cheese, a fried egg, crumbled bacon and if desired, salsa.

2 dried ancho chiles
2 cups boiling water
3/4 cup reduced-fat mayonnaise
2 tablespoons minced fresh cilantro
1 tablespoon lime juice
1 garlic clove, minced
1 teaspoon honey
1 beef flat iron steak or top sirloin steak (1 pound)
Salt and pepper to taste
4 fat-free flour tortillas (8 inches), warmed
1 medium ripe avocado, peeled and diced
1 cup shredded reduced-fat Mexican cheese blend
1 cup torn romaine
1/2 cup chopped tomatoes
1/4 cup chopped red onion

Steps:

  • Place chiles in a small bowl. Cover with boiling water; let stand for 5 minutes. Drain. Remove the stems, seeds and skins. Finely chop and place in a small bowl. Stir in the mayonnaise, cilantro, lime juice, garlic and honey; set aside., Season steak with salt and pepper to taste. Grill, covered, over medium heat for 4-5 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°)., Spread 3 tablespoons of ancho mayonnaise over each tortilla. Thinly slice steak across the grain; divide evenly among tortillas. Top with avocado, cheese, romaine, tomatoes and onion. Roll up.

1/2 teaspoon Mexican oregano
1/2 teaspoon ground cumin
1/4 teaspoon chili powder
1/4 cup monterey jack cheese
1/4 cup cheddar cheese
1 flour tortilla (10-11inch)
2 eggs
5 -6 jalapenos, slices (optional)
salt and pepper
1 teaspoon vegetable oil

Steps:

  • Mix together beans, half the salsa, cilantro, oregano, cumin and chili powder in a small bowl.
  • Spread over tortilla, leaving at least a 1" space around the edge.
  • Sprinkle with cheese, and set aside.
  • Beat eggs lightly in a small bowl; season to taste with salt and pepper.
  • Heat oil in small skillet; cook eggs and scramble until they just become firm; add rest of salsa, and jalapeno slices and cook about 30 seconds more; remove from heat.
