6 tablespoons unsalted butter, divided
3 pounds yellow squash, sliced ¼-inch thick (from 5 medium squash)
1 medium-size yellow onion, chopped (about 1 ½ cups)
2 teaspoons kosher salt, divided
2 large eggs, lightly beaten
1 (8-oz.) container sour cream
4 ounces sharp Cheddar cheese, shredded (about 1 cup)
2 ounces Swiss cheese, shredded (about ½ cup)
½ cup mayonnaise
2 teaspoons chopped fresh thyme
½ teaspoon black pepper
2 sleeves round buttery crackers (such as Ritz), coarsely crushed
1 ounce Parmesan cheese, shredded (about ¼ cup)

Steps:

  • Preheat oven to 350°F. Melt 3 tablespoons of the butter in a large skillet over medium-high. Add squash, onion, and 1 teaspoon of the salt; cook, stirring often, until center of squash is just tender and liquid has evaporated, about 10 minutes. Transfer mixture to a colander set over a bowl. Drain 5 minutes; discard any liquid.
  • Stir together eggs, sour cream, Cheddar and Swiss cheeses, mayonnaise, thyme, pepper, and remaining 1 teaspoon salt in a large bowl. Gently fold in squash mixture. Spoon into a lightly greased 11- x 7-inch (2-quart) baking dish.
  • Microwave remaining 3 tablespoons butter in a medium-size microwavable bowl on HIGH until melted, about 25 seconds. Toss together crackers, Parmesan cheese, and melted butter until combined; sprinkle over casserole. Bake in preheated oven until golden brown, about 20 minutes.

2 tablespoons butter
3 pounds yellow squash, chopped
2 onions, chopped
1 cup shredded sharp Cheddar cheese
1 cup mayonnaise
3 eggs, beaten
12 saltine crackers, crushed
1 (1 ounce) package dry Ranch-style dressing mix
1 teaspoon salt
2 cups dry bread stuffing mix
½ cup melted butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt 2 tablespoons butter in a large saucepan over medium-high heat. Cook squash and onions until tender. Remove from heat, and stir in Cheddar cheese, mayonnaise, eggs, and crackers. Season with Ranch dressing mix and salt.
  • Spread the squash mixture into a medium baking dish. Mix together stuffing and 1/2 cup melted butter, and sprinkle over the squash mixture.
  • Bake 20 to 30 minutes in the preheated oven, or until firm and lightly browned.

4 cups sliced yellow squash
½ cup chopped onion
35 buttery round crackers, crushed
1 cup shredded Cheddar cheese
2 eggs, beaten
¾ cup milk
¼ cup butter, melted
1 teaspoon salt
ground black pepper to taste
2 tablespoons butter

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place squash and onion in a large skillet over medium heat. Pour in a small amount of water. Cover, and cook until squash is tender, about 5 minutes. Drain well, and place in a large bowl.
  • In a medium bowl, mix together cracker crumbs and cheese. Stir half of the cracker mixture into the cooked squash and onions. In a small bowl, mix together eggs and milk, then add to squash mixture. Stir in 1/4 cup melted butter, and season with salt and pepper. Spread into a 9x13 inch baking dish. Sprinkle with remaining cracker mixture, and dot with 2 tablespoons butter.
  • Bake in preheated oven for 25 minutes, or until lightly browned.

2 pounds yellow squash, sliced
1 cup sliced onion
3/4 cup mayonnaise
2 eggs, slightly beaten
1/2 cup crushed unsalted saltine crackers
1 envelope ranch buttermilk salad dressing
1 cup shredded Cheddar cheese
2 tablespoons butter, melted
1/2 cup fresh bread crumbs

Steps:

  • Cook squash and onion together in water until tender; drain well. In a bowl, mix mayonnaise, eggs, saltines, ranch dressing, and shredded cheese together. Mash squash with a fork and combine with ranch mixture. Pour into a greased casserole dish. Mix melted butter with bread crumbs and put on top of casserole. Bake 20-25 minutes in a 350° oven.

1 (1/2 ounce) packet dry ranch dressing mix (make the salad dressing using mayonnaise according to package directions)
1 egg, lightly beaten
2 cups cheddar cheese, shredded
6 -8 yellow squash, cut into 1/4-inch slices (or zucchini)
1 onion, chopped (medium sized onion)
salt and black pepper, to taste
6 -8 saltine crackers, coarsely broken

Steps:

  • Preheat oven to 350°F.
  • In a large bowl, prepare salad dressing according to package directions.
  • Add egg and 1 1/2 cups of the cheese. Add squash and onion. Sprinkle with salt and pepper and toss to coat.

5 t0 6 medium yellow summer squash
1/2 sweet onion, such as vidalla
1 tbsp water
salt and pepper to taste
1 can evaporated milk
butter

Steps:

  • Preheat oven to 350 degrees. Slice squash in half lengthwise. Place cut side up in 8 x 8 glass baking dish. Thinly slice onion and sprinkle over squash. Add water and cover with plastic wrap. Make a small slit in plastic wrap and microwave 4-5 min. until slightly cooked. Uncover and drain off any liquids. Level off squash in pan, sprinkle with salt and pepper, and pour just enough evaporated milk over squash to come to the top of squash. Do not completely cover. Dot with butter and bake until cooked through and lightly browned, about 35 to 40 min.
