This is a great weeknight dinner! Easy to prepare, it doesn't take long to throw together a meal the entire family will enjoy.

1 large chicken breast
2 large potatoes
1 small onion diced
10 cooked slices of bacon
3/4 c ranch dressing
1 c shredded cheddar cheese
1 dash(es) salt and pepper

Steps:

  • 1. Peel and dice potatoes. Boil for 5 minutes. Dice chicken and sauté for 5 minutes. Chop bacon into small pieces
  • 2. Add all ingredients except 1/2 of cheese into a 9" casserole dish. Mix up with the ranch dressing. Bake at 350 for 45 minutes
  • 3. Add cheese on top of casserole dish last 5 minutes. Serve with French bread. I have made this dish with leftover boneless rib pieces as well. It is excellent.

1 lb cooked boneless/skinless chicken breasts (1") cubed
6-8 medium red potatoes with skins 1/2" cubes
1/3 c olive oil
1 1/2 tsp salt
1 tsp black pepper
1 Tbsp paprika
2 Tbsp garlic powder
2 Tbsp hot sauce
2 c fiesta blend cheese
1 c crisp cooked crumpled bacon
1 c diced green onion
1/2 c sour cream or ranch dressing for topping

Steps:

  • 1. PREHEAT OVEN TO 400 DEGREES. SPRAY A 9X13 BAKING DISH WITH COOKING SPRAY.
  • 2. IN A LARGE BOWL, MIX TOGETHER THE OLIVE OIL, SALT, PEPPER, PAPRIKA, GARLIC POWDER AND HOT SAUCE. ADD THE CUBED POTATOES AND CHICKEN AND STIR TO COAT.
  • 3. SCOOP THE POTATOES AND CHICKEN INTO THE PREPARED BAKING DISH. BAKE THE POTATOES AND CHICKEN FOR 55-60 MINUTES, STIRRING EVERY 20 MIN. UNTIL COOKED THROUGH, CRISPY AND BROWNED ON THE OUTSIDE.
  • 4. WHILE THE POTATOES AND CHICKEN ARE COOKING, FRY YOUR BACON (I USE A LB.)
  • 5. ONCE THE POTATOES AND CHICKEN ARE FULLY COOKED, REMOVE FROM THE OVEN. TOP WITH THE CHEESE, BACON AND GREEN ONIONS. RETURN THE CASSEROLE TO THE OVEN AND BAKE FOR 5 MORE MIN. OR UNTIL CHEESE IS MELTED.
  • 6. TOP WITH RANCH OR SOUR CREAM!

5 medium Yukon Gold potatoes
¼ cup olive oil
1 tablespoon Hidden Valley® Original Ranch® Seasoning & Salad Dressing Mix Shaker, divided
1½ pounds boneless, skinless chicken breasts
2 cups cheddar cheese
4-6 slices bacon
2 scallions
sour cream

Steps:

  • Preheat oven to 425°F. Grease a 9×13-inch baking dish with olive oil or non-stick spray. Toss the potatoes with half of the olive oil and half of the seasoning mix and spread in the baking dish; place in oven.
  • While the potatoes cook (without disturbing), toss the chicken in the remaining olive oil and seasoning mix and let sit. After 25 minutes, remove the potatoes from the oven and toss with the chicken.
  • Spread out evenly in the pan and return to the oven for another 20-25 minutes, until chicken is cooked through and potatoes are crisp.
  • Sprinkle the potatoes and chicken evenly with the cheese, crumbled bacon, and scallions and bake another 5-6 minutes, until cheese is melted. Top with sour cream or ranch dressing and serve warm.

6 to 8 medium red potatoes (about 2 to 2-1/2 pounds), peeled and quarterered
1/2 cup sour cream
1/2 cup prepared ranch-style dressing
1/4 cup bacon bits or crumbled cooked bacon

TOPPING:

1 tablespoon vegetable oil
1 white onion, diced
1 red bell pepper, diced
1 green bell pepper, diced
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.75 ounce) can condensed cream of chicken soup
1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®)
1 cup chicken broth
2 tablespoons sour cream
2 teaspoons ground cumin
1 teaspoon ancho chile powder
½ teaspoon dried oregano
¼ teaspoon chipotle chile powder
1 cooked chicken, torn into shreds or cut into chunks
8 ounces shredded Cheddar cheese
10 corn tortillas, cut into quarters

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat oil in a large skillet over high heat. Saute onion, red bell pepper, and green bell pepper in hot oil until warmed through, about 2 minutes.
  • Combine onion-pepper mixture, cream of mushroom soup, cream of chicken soup, diced tomatoes, chicken broth, sour cream, cumin, ancho chile powder, oregano, and chipotle chile powder together in a large bowl and stir until sauce is well-combined.

5 yellow potatoes (cut into 1 inch pieces)
5 carrots (peeled and cut)
salt and pepper (to taste)
2 Tablespoons olive oil
1 ounce Ranch seasoning mix
3 teaspoons minced garlic
2 Tablespoons fresh parsley

Steps:

  • Preheat oven to 375 degrees F.
  • Line a 9x13-inch baking pan with parchment paper or spray with nonstick cooking spray.
  • Evenly spread out chicken, potatoes and carrots in prepared pan.
