Pressure Cooker Punjabi Rajma (Indian Spiced Kidney Beans) image

Rajma is a classic dish from Northern India in which red kidney beans are cooked with onions, tomato, ginger and a host of heady spices until they're tender and fragrant. The classic version requires soaking the beans overnight followed by lengthy cooking. But when made in an electric pressure cooker, the whole thing can be ready in about an hour. If you think your beans are old (or if you can't remember when you bought them), the cookbook author Urvashi Pitre, who adapted this recipe for the Instant Pot, recommends soaking them in water for an hour before cooking.

1 tablespoon peanut oil
1 1/2 cups diced onion (from 1 medium onion)
1 cup diced tomato (from 1 small to medium tomato)
1 tablespoon minced ginger
1 tablespoon minced garlic
1 teaspoon cayenne pepper
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon garam masala
1 teaspoon ground turmeric
1 teaspoon kosher salt, more as needed
1 cup dried red kidney beans
Cooked white rice, for serving (optional)

Steps:

  • Add oil to the pot of an electric pressure cooker. Stir in onion, tomato, ginger, garlic, cayenne, coriander, cumin, garam masala, turmeric and salt.
  • Place a trivet on top of onion mixture. In a medium metal heatproof bowl (one that will fit inside the pressure cooker), combine beans and 2 cups water. Cover with foil and place on trivet.
  • Cover and cook on high pressure for 30 minutes. Let pressure release naturally for 10 minutes, then quick-release any remaining pressure.
  • Remove bowl and trivet from pressure cooker, remove foil, and lightly mash about half of the beans. Scrape into onion mixture, then set the pressure cooker's sauté function to high. Cook, stirring occasionally, for 5 minutes to let the flavors meld. Taste and add more salt, if necessary. Serve with rice, if you like.

3 tablespoons canola oil
5 whole cloves
10 black peppercorns
1 (1 inch) piece cinnamon stick
1 bay leaf
1 whole cardamom pod
2 onion, chopped
6 roma (plum) tomatoes, chopped
4 cloves garlic, minced
2 tablespoons minced fresh ginger root
1 teaspoon powdered red pepper or dried Cajun pepper
1 (15 ounce) can kidney beans, drained
salt to taste
water
6 sprigs cilantro, minced

Steps:

  • Heat oil in a large saucepan over a medium heat. Stir in the cloves, whole black peppercorn, cinnamon, cardamom and bay leaf. Cover the pan as the pepper tends to splutter right out of the pan and can cause burns! Let heat for 1 minute.
  • Reduce the heat to medium-low and add the sliced onions. Saute until the onions are soft and almost translucent. Mix in the tomatoes and saute well. (For a great taste, saute until almost dry.)
  • Raise the stovetop's temperature to a medium heat. Add the garlic and ginger and saute for 2 to 3 minutes. Mix in the chili powder, red kidney beans and salt; mix well. Slowly add water a small amount at a time. You are adding water to create a gravy, only add water until the gravy has reached the consistency that you would like. For a smoother gravy, cool and blend the sauteed mixture before adding the red kidney beans. Garnish with cilantro.
  • Serve with hot cooked rice (see Cook's Note for link to Cumin Rice).

Steps:

  • Heat oil in a heavy-bottomed 4- to 5-qt. pot or saucepan over medium-high heat. Add onion and fry, stirring occasionally, 2 to 3 minutes, or until slightly softened.
  • Stir in cinnamon, bay leaf, garlic, ginger, fennel, cumin, and cardamom and fry, stirring, 2 minutes. Add cayenne, coriander, turmeric, and garam masala and fry, stirring, 1 minute.
  • Shred tomatoes into pot with your fingers. Stir in serrano chile, salt, kidney beans, cauliflower, and 1 1/2 cups water. Lower heat to medium-low, cover, and simmer 20 minutes, or until cauliflower is tender and liquid has thickened into a velvety-looking sauce (add more water if necessary).

This is my version of a recipe from the Hare Krishna website(www.harekrsna.com). This site is a goldmine for Indian vegetarian recipes. I also love the fact that Hare Krishna cooking doesn't use garlic and onions (which I do love), but substitute Hing or asafoetida powder. It's great when you're too lazy to chop/cry while chopping, and hing has its own healthy properties. I believe it is supposed to be an anti-flatulent for one thing. This dish is sort of like an Indian bean chili (an oxymoron for some). I ate it mixed with some basmati rice I cooked in my rice cooker with a small piece of cinnamon stick and a couple of green cardamom pods. My husband ate it with tortilla chips the next day. Some of the elements of the recipe were vague in the original recipe, so use your judgement! The cooking time is just a guess, and depends on your taste.

1 (14 ounce) can cooked red kidney beans
1 -3 tablespoon oil
1/2 teaspoon cumin seed
1 teaspoon chopped fresh ginger
1 chopped red bird's eye chili
1 (14 ounce) can diced tomatoes, no salt added
1/2 teaspoon chili powder
1/2 teaspoon coriander powder
1 teaspoon salt
1 teaspoon garam masala
1 teaspoon hing
1 cup water
1/4 cup chopped fresh cilantro
chopped cilantro leaf (to garnish)

Steps:

  • Rinse and drain kidney beans.
  • Heat the oil on medium to medium high.
  • Add cumin seeds, ginger, and chilies. Sautee until cumin seeds darken, about one minute, or how you like.
  • Add tomatoes with the water from the can. Simmer uncovered until the liquid has reduced quite a bit, again to your preference. The longer you simmer, the tastier it will be!
  • Add the rest of the spices and mix well.
  • Add the kidney beans and mix well.
  • Add the water. Simmer uncovered until the liquid has evaporated to the consistency you like. Feel free to add more water, or add less to begin with.
  • About 15 minutes before you expect it to finished, add the chopped cilantro and stir.
  • Garnish with the rest of the cilantro when you are ready to eat it!

1 pound dry kidney beans
water to cover
¼ teaspoon ground turmeric
salt to taste
1 tablespoon vegetable oil
3 tomatoes, chopped
1 onion, minced
1 (2 inch) piece fresh ginger, minced
2 cloves garlic, minced
1 teaspoon cumin seeds
2 teaspoons garam masala
2 teaspoons ground coriander
½ teaspoon red chile powder
¼ teaspoon heeng (asafoetida powder)
2 teaspoons curd (plain yogurt)
2 sprigs fresh cilantro, leaves finely chopped

Steps:

  • Place kidney beans into a large container and cover with several inches of cool water; let stand 8 hours to overnight. Drain and rinse kidney beans.
  • Combine kidney beans, ground turmeric, and salt in a pressure cooker; add enough water to cover beans. Cover pressure cooker with lid and cook beans according to manufacturer's instructions until tender, about 20 minutes. Release pressure from pressure cooker.
  • Heat oil in a skillet over medium heat; cook and stir tomatoes, onion, ginger, garlic, and cumin seeds until heated through and fragrant, 2 to 4 minutes.
  • Mix garam masala, ground coriander, red chile powder, and heeng into tomato mixture; simmer for 2 minutes. Add kidney beans and curd; simmer until heated through, about 5 minutes. Top rajma with cilantro.

15 ounces red kidney beans
2 medium green peppers (chopped small)
1 medium onion
2 garlic cloves (grated)
1 teaspoon fresh ginger (grated)
1 medium tomatoes, chopped
1 red chili pepper
1 green cardamoms
1 pinch asafoetida powder
1/4 teaspoon cumin seed
1/4 teaspoon turmeric powder
1/4 teaspoon chili powder
1/2 teaspoon coriander powder
1/2 teaspoon garam masala
1 teaspoon vegetable oil
salt

Steps:

  • Rinse and drain the beans. Heat oil and saute cumin seeds, red chilli and green cardamom briefly.
  • Next, put in the ginger, garlic and saute for a couple of minutes. Add the onions and fry till they turn translucent. Add tomatoes, green peppers and let it cook for another 2-3 minutes, covered, on medium heat. Then add the kidney beans.
  • Mix the powdered spices together in a bowl and add. Stir fry till it all mixes together. Add about 1/4 cup water and close the lid. Let it cook for about 5-6 minutes on medium.
  • Add salt and let it cook for another 4-5 minutes till it has turned to a thick curry. Garnish with cilantro if desired.
