The best butter tart squares! These have a buttery shortbread crust and a layer of gooey brown sugar filling. You can add in walnuts, raisins, currants or leave them plain. Easier, quicker and more delicious than the original. This recipe can make 15 large bars or 36 more reasonable sized bars.

Number Of Ingredients 11

1 cup unsalted butter (softened)
1/2 cup powdered sugar
2 1/4 cup all-purpose flour
1/2 cup unsalted butter (softened)
1 cup brown sugar (light or dark)
2 tablespoons all-purpose flour*
4 large eggs
2 teaspoon vanilla extract
3/4 cup dark corn syrup*
2 tablespoons white vinegar*
1 cup raisins, currants or chopped walnuts - optional (I use 1/2 cup currants and 1/2 cup chopped walnuts)

Steps:

  • Preheat the oven to 350F degrees. Line the pan with parchment paper, leaving an overhang around the edges.
  • In a large bowl beat the butter and powdered sugar until fluffy.
  • Mix in the flour - the mixture will be thick.
  • Press the mixture into the bottom of the pan.
  • Bake in the preheated oven for 15-20 minutes or until the top looks set and is a pale, golden color. Remove from the oven and leave the oven turned on.
  • Make the filling as the base layer is baking.
  • Beat the butter, brown sugar and flour until evenly combined.
  • Beat in the eggs and vanilla extract.
  • Mix in the corn syrup and vinegar. Stir in the optional raisins, currants or walnuts.
  • Pour the mixture over the gently baked crust.
  • Bake in the preheated oven for 30-35 minutes, or until the top looks set and if you give the pan a nudge the filling layer doesn't look liquidy.
  • Remove from the oven and cool completely before slicing for clean cuts and to ensure that the bars are set.
  • When ready to slice, lift the bars out of the pan using the overhang of the parchment paper. Place on the cutting board and slice using a sharp knife. If the edges seem too crispy, simply slice off the edges.

1 cup raisins
1 cup hot water, or as needed
1 ½ cups all-purpose flour
½ cup butter, softened
¼ cup packed brown sugar
1 cup brown sugar
⅓ cup butter, softened
1 egg
1 teaspoon vanilla extract
1 teaspoon heavy whipping cream
1 tablespoon all-purpose flour

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Place raisins in a cup; pour in hot water to cover, and set aside to soak, about 5 minutes.
  • Place 1 1/2 cups flour in a large bowl; cut in 1/2 cup butter until crumbly. Stir 1/4 cup brown sugar into flour mixture; press mixture evenly into the bottom of a 9x9-inch pan.
  • Bake in the preheated oven until lightly browned, about 15 minutes. Remove from oven, leaving oven on.
  • Beat 1 cup brown sugar and 1/3 cup butter together until smooth; stir in egg, vanilla extract, and cream. Strain raisins; stir raisins and 1 tablespoon flour into butter mixture. Pour raisin mixture over crust.
  • Bake in the preheated oven until filling is bubbly, about 20 minutes. Allow to cool before cutting into squares, about 30 minutes.

14 (4 inch) prepared tart shells
1 egg
1 cup packed brown sugar
3 tablespoons butter, melted
2 tablespoons lemon juice
¼ teaspoon ground nutmeg
1 cup raisins

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Beat the egg with the sugar using a fork until well blended. Stir in the melted butter, lemon juice, nutmeg, and raisins. Fill tart shells half full.
  • Bake for 15 to 20 minutes. Allow tarts to stand for a few minutes in the pans before removing to racks to cool.

1 ¼ cups all-purpose flour
1 ½ cups packed brown sugar
¼ cup butter, melted
2 eggs, beaten
1 tablespoon distilled white vinegar
1 teaspoon vanilla extract
1 cup raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • To Make Base: In a small mixer bowl, cream together 1/2 cup butter or margarine and confectioners' sugar. Blend in flour. Pat into 9X9 inch square pan. Bake in preheated oven for 5 minutes.
  • To Make Filling: In a large bowl combine brown sugar, melted butter or margarine, beaten eggs, vinegar, vanilla, and raisins. Pour over base and bake in preheated oven for 35 to 40 minutes, until set.

2 c raisins
14 oz sweetened condensed milk
1 Tbsp fresh lemon juice
1 Tbsp grated lemon zest
2 stick butter, softened
1-1/3 c firmly packed brown sugar
1-1/2 tsp vanilla extract
1 c all purpose flour
1/2 tsp baking soda
1/4 tsp salt
2-1/2 c oats (not instant)
1 c chopped walnuts, slightly toasted

Steps:

  • 1. HEAT oven to 375 F. Lightly grease a 9 x 13 pan; set aside.
  • 2. In saucepan, COMBINE raisins, sweetened condensed milk, lemon juice and lemon rind. Cook and stir over medium heat just until bubbly. Cool slightly.
  • 3. In bowl, COMBINE butter, brown sugar and vanilla; beat well.
  • 4. ADD flour, baking soda and salt; mix well. Stir in oats and walnuts.
  • 5. RESERVE 2 cups oat mixture for topping. PRESS remaining mixture into prepared pan.
  • 6. SPREAD raisin mixture to within 1/2 inch of edges. SPRINKLE with reserved oat mixture; press lightly.
  • 7. BAKE 25 to 30 minutes or until golden brown. Cool completely on wire rack. Cut into 48 squares (or the size you prefer them to be).

1 (9-ounce) box pie crust mix, prepared according to package directions
3 tablespoons unsalted butter, room temperature
1/3 cup brown sugar, packed
2 large eggs, room temperature
1/2 teaspoon pumpkin pie spice
1/2 teaspoon vanilla extract
1/2 cup raisins, roughly chopped
1/2 cup walnuts, roughly chopped

Steps:

  • Preheat the oven to 375 degrees F. Spray a 12-cup muffin tin with nonstick cooking spray.
  • Cut the pie crust into 12 pieces and press them evenly into the bottoms and up the sides of the muffin cups to form a crust.
  • In a medium bowl with an electric hand mixer, beat together the butter and sugar until fluffy. Add the eggs, pumpkin pie spice, and vanilla and mix well. Stir in the raisins and walnuts. Spoon the mixture evenly into the crusts.
  • Put the muffin tin onto a baking sheet and bake until the filling is set, 18 to 20 minutes. Remove the pan from the oven and allow to cool for 10 minutes. Carefully unmold the tarts, put them onto a rack, and let them cool to room temperature.

2 cups (270 grams) all-purpose flour
1/3 cup (65 grams) packed brown sugar
1/2 teaspoon kosher salt
3/4 cup (168 grams) unsalted butter, melted
3/4 cup (150 grams) packed brown sugar
1/3 cup (114 grams) golden corn syrup
1/4 cup (85 grams) maple syrup
2 eggs
1/4 cup (56 grams) unsalted butter, melted
1 1/2 teaspoons (7 1/2 milliliters) white vinegar
1 teaspoon vanilla extract
1/4 teaspoon kosher salt
3/4 cup (90 grams) chopped pecans
1/2 cup (60 grams) chopped raisins

Steps:

  • Preheat your oven to 350 degrees F (175 degrees C). Lightly grease a 9-inch square baking pan with nonstick cooking spray and line with parchment paper to overhang the sides.
  • For the pastry: Add the flour, sugar and salt to a large bowl or the bowl of your food processor and mix/pulse to combine. Add the melted butter and mix until moist and crumbly. Transfer to your prepared pan and press into the bottom and about 1/2 centimeter (1/4 inch) up the sides.

1/2 c butter, sliced and softened
1 1/4 c brown sugar, packed and divided
1/2 tsp salt, divided
2 eggs
1 tsp vanilla extract

1/4 tsp ground ginger or cinnamon
1 c walnuts, coarsely chopped
3/4 c sun-maid natural raisins

Steps:

  • 1. Blend one cup flour, butter, 1/4 cup brown sugar and 1/4 teaspoon salt with a pastry blender or 2 knives until mixture is evenly combined. Pat into bottom of a 13" x 9" baking pan. Bake at 325 degrees for 15 minutes or until golden.
  • 2. Mix remaining brown sugar, eggs, remaining flour, vanilla, baking powder, ginger or cinnamon and remaining salt in a medium bowl. Stir in walnuts and raisins. Pour raisin mixture over hot crust.
