3/4 cup (1 1/2 sticks) unsalted butter, melted, plus more for pan
3/4 cup packed light-brown sugar
1/4 cup granulated sugar
1 large egg
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup all-purpose flour, (spooned and leveled)
2 cups old-fashioned rolled oats (not quick-cooking)
1 cup raisins

Steps:

  • Preheat oven to 350 degrees. Butter an 8-inch square baking pan. Line bottom with parchment paper, leaving an overhang on two sides; butter paper.
  • In a large bowl, whisk together butter, sugars, egg, salt, and cinnamon until smooth. Add flour, oats, and raisins; fold in just until combined.
  • Spread batter in prepared pan, and bake until a toothpick inserted in center comes out with moist crumbs attached, 25 to 30 minutes. Cool completely in pan. Using paper overhang, lift cake onto a work surface; cut into 16 bars.

1 cup sugar
2 tablespoons plus 1-1/2 teaspoons cornstarch
1 teaspoon ground cinnamon
1-1/2 cups sour cream
3 large eggs, lightly beaten
2 cups raisins
CRUMB MIXTURE:
1-3/4 cups all-purpose flour
1-3/4 cups quick-cooking oats
1 cup packed brown sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 cup cold butter, cubed

Steps:

  • In a large saucepan, combine the sugar, cornstarch and cinnamon. Stir in sour cream until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat. Stir a small amount of hot filling into eggs; return all to pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat. Gently stir in raisins. Cool to room temperature without stirring., Meanwhile, in a large bowl, combine the flour, oats, brown sugar, baking soda and salt. Cut in butter until crumbly. , Firmly press 3-1/2 cups of crumb mixture into a greased 13-in. x 9-in. baking pan. Spread with raisin filling. Sprinkle with remaining crumb mixture. , Bake at 350° for 25-30 minutes or until golden brown. Cool on a wire rack. Cut into bars. Refrigerate leftovers.

1 cup unsalted butter, softened
2 cups brown sugar
2 eggs
2 teaspoons vanilla
2 1/2 cups flour (maybe a little more)
1 teaspoon baking soda
1 teaspoon salt
3 cups quick-cooking oatmeal
2 cups chopped raisins
1 cup water
1/2 cup granulated sugar
1 tablespoon flour
1 teaspoon vanilla
1 cup powdered sugar
1/4 teaspoon cinnamon
1 tablespoon milk

Steps:

  • Heat oven to 350 degrees, Grease jelly roll pan (15x10 sheet).
  • Cream together butter and sugar. Add in eggs and vanilla. In a separate bowl, combine 2 1/2 cups flour, soda, salt and oatmeal. Add to butter mixture until combined. (Stir in additional flour 1/2 cup flour if dough is too sticky).
  • Divide dough in half. Press one half of the dough into prepared pan, speading evenly.
  • In a saucepan, combine raisins and the rest of the filling ingredients. Cook over medium heat until boiling. Remove from heat and let cool slightly. Spread filling over dough in pan.
  • Drop remaining half of dough in small crumbles all over the raisin layer. Bake 15 to 20 minutes or until golden and cooked through. Remove from oven and cool.
  • Combine powdered sugar, cinnamon and milk. Drizzle glaze over bars. Cut into pieces.

1 1/2 cups quick-cooking oats
1 cup packed brown sugar
1/2 teaspoon baking soda
3/4 cup butter or 3/4 cup margarine
1/4 cup sugar
1 tablespoon cornstarch
2 cups raisins
1 cup water

Steps:

  • Stir together flour, oats, brown sugar and soda. Cut in butter until mixture is crumbly. Pat 2/3 of crumbs in the bottom of an ungreased 13x9x2-inch baking pan.
  • FOR FILLING:.
  • In a saucepan combine sugar and cornstarch. Stir in 2 cups raisins and 1 cup water. Cook and stir till bubbly. Spread atop crumb mixture.

1 cup packed brown sugar
1 cup sugar
1 cup butter, softened
3 large eggs
2 tablespoons vanilla extract
5 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
3 tablespoons buttermilk
FILLING:
1 tablespoon cornstarch
3 tablespoons all-purpose flour
1 cup packed brown sugar
2 cups boiling water
1-1/2 cup seedless raisins

Steps:

  • In a large bowl, cream sugars and butter. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder, baking soda, salt and nutmeg; add to creamed mixture alternately with buttermilk. Cover and refrigerate until easy to handle. , For filling, in a saucepan, combine the cornstarch, flour and brown sugar. Stir in water until smooth. Add raisins. Bring to a boil over medium heat; cook and stir and cook for 3 minutes or until thickened. Cool. , On a floured surface, roll out dough into 1/8-in. thickness. Cut with floured 3-in.-round cookie cutters. Spoon 2 teaspoons filling on top of half the circles and top each with another circle. Unsalted butter, softened, for baking sheet
2 cups raisins (about 13 ounces)
1 cup sugar
1 teaspoon cornstarch
1/2 cup apple cider
2 1/2 cups all-purpose flour
1 1/4 teaspoons baking soda
1 1/4 teaspoons coarse salt
1 1/4 cups vegetable shortening
1 1/4 cups packed light-brown sugar
1 large egg
1 1/4 teaspoons pure vanilla extract
2 1/2 cups old-fashioned rolled oats

Steps:

  • Preheat oven to 350 degrees. Butter a 10-by-15-inch rimmed baking sheet. Line bottom with parchment paper, and butter parchment; set sheet aside.
  • Make filling: Pulse raisins and sugar in a food processor until almost pureed. Transfer to a saucepan. Whisk cornstarch into 1 cup cold water; whisk into raisin mixture. Stir in cider. Simmer over medium-low heat, stirring occasionally, until mixture thickens and sugar has dissolved, about 6 minutes.Let cool completely.
  • Make dough: Whisk together flour, baking soda, and salt in a medium bowl; set aside. Put shortening in the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until smooth. Add brown sugar, and mix until pale and fluffy, 2 to 3 minutes. Add egg and vanilla, and mix until combined. Reduce speed to low. Add flour mixture; mix until just combined. Mix in oats.
  • Press half the dough into prepared baking sheet. Spread raisin filling evenly over top of dough. Crumble remaining dough on top of filling using your fingers, gently pressing down so that topping covers filling. Bake, rotating sheet halfway through, until top is golden brown, about 35 minutes. Let cool completely in sheet on a wire rack. Cut into 2-inchsquares. Bars can be stored between layers of parchment in airtight containers at room temperature up to 5 days.

2 ½ tablespoons cornstarch
1 ½ cups sour cream
1 teaspoon ground cinnamon

1 ¾ cups rolled oats
1 teaspoon baking soda
½ teaspoon salt
1 ¾ cups all-purpose flour
1 cup butter, softened

Steps:

  • Preheat oven to 350 degrees F. Grease and flour 9 x 13 inch pan.
  • Cook first six ingredients over low heat until well blended. Set aside to cool.
  • In a separate bowl, mix together brown sugar, oatmeal, baking soda, butter, flour and salt until crumbly. Press half of mixture into pan.
  • Pour cooked mixture over crust and crumble the other half of crust over the top.
  • Bake for 20 minutes.
