1/2 cup dark rum
2 tablespoons lime juice or 2 tablespoons lemon juice
2 tablespoons soy sauce
2 tablespoons brown sugar
4 garlic cloves, minced
2 jalapeno peppers, seeded and minced
1 tablespoon fresh ginger, minced
1 teaspoon dried thyme leaves
1 teaspoon black pepper
6 boneless skinless chicken breast halves

Steps:

  • Combine all ingredients in small bowl. Place chicken in food storage bag. Pour marinade over chicken. Refrigerate 4 hours or overnight, turning bag once or twice.
  • Spray grill with cooking spray. Grill chicken until no longer pink.

I turn to this recipe -- adapted from the French chef Madeleine Kamman, who died in the summer of 2018 - when cool weather is on the horizon. Perhaps it's the dried fruit or chicken braised in a sauce (instead of being striped on the grill) that appeals to the season. But it's an easy winner for those first dinners when fall appears. Though plumped raisins are called for, other dried fruit, like diced figs or quartered prunes work well, too.

1/2 cup black raisins
1/2 cup brandy
1 chicken, cut in 8 pieces
3 tablespoons walnut oil
Salt and ground black pepper
1/4 cup minced shallots
3/4 cup verjus (see note)
2 tablespoons glace de viande or de volaille (concentrated meat or chicken stock) or packaged roasted chicken base
3 tablespoons crème fraîche

Steps:

  • Place raisins in a bowl, add brandy and set aside to plump overnight or for at least 8 hours.
  • Make the chicken: Dry chicken pieces. Heat oil in a sauté pan on medium-high, add chicken, skin side down, season with salt and pepper, and sear until golden brown, 6 to 8 minutes. Turn pieces and brown second side. Scatter shallots over chicken. Add verjus to the pan, cover, reduce heat to low and cook 15 to 20 minutes, basting chicken once, until chicken is cooked through.
  • Remove chicken to a dish and cover to keep warm. Add raisins with their brandy to the pan, bring to a simmer for a couple of minutes, then add glace de viande and crème fraîche. Cook for several minutes, until the sauce thickens enough to coat a spoon.
  • Return chicken to the pan, baste with the sauce, then transfer the contents of the pan to a warm, rimmed platter and serve.

1 egg white, lightly beaten
1/2 cup panko breadcrumbs
1/2 cup shredded sweetened coconut (optional)
1 tablespoon canola oil
4 boneless skinless chicken breast halves
1/4 cup raisins
1 tablespoon unsalted butter
1 tablespoon dark brown sugar
1 teaspoon dark rum
2 tablespoons water

Steps:

  • Pour boiling water over raisins and allow them to plump for 10 minutes, drain thoroughly and set aside.
  • Meanwhile, place egg white in shallow pie plate. Combine panko crumbs and coconut if desired in another pie plate.
  • Heat oil in skillet over medium high heat. Dip chicken in egg white then in crumb mixture, coating evenly.
  • Place in hot skillet and saute until golden brown, turn and brown other side until fully cooked. Place chicken on platter and keep warm in oven.
  • Now prepare sauce. Melt butter in small saucepan. Stir in sugar and water. Cook until mixture thickens and begins to resemble syrup. Add drained raisins to sauce along with rum. Heat through and ladle over chicken to serve.

RUM RAISIN TRUFFLES

1/2 cup heavy cream
1 tablespoon unsalted butter
26 ounces good milk chocolate, chopped, divided
1 1/2 ounces raisins (about 2 tablespoons)
1/4 cup dark rum, such as Mount Gay

Steps:

  • In a heat-proof bowl set over simmering water, heat the cream until hot to the touch but not boiling and turn off the heat. Add the butter and 12 ounces of the chocolate to the hot cream. Stir until the chocolate melts. Meanwhile, mince the raisins and combine them with the rum in a small bowl. Stir the raisins and rum mixture into the melted chocolate mixture, cover with plastic wrap and set aside at room temperature for 6 hours or overnight.
  • The next day, using a very small (1 1/4-inch) ice cream scoop (you can also use 2 spoons), scoop balls of the mixture onto sheet pans lined with parchment paper. Refrigerate for at least 30 minutes.
  • When the chocolate is cold, place 10 ounces of the remaining chocolate in a small glass bowl and heat it in a microwave on high for 20 seconds exactly. Stir the chocolate and continue to heat it in the microwave for 20 seconds at a time, stirring in between, until the chocolate is smooth and shiny. This will take 5 or 6 times, depending on your microwave. Add the remaining 4 ounces of chocolate and stir until smooth. The chocolate should be 85 degrees F to 90 degrees F on an instant-read thermometer. If it¿s too cool, heat it briefly in the microwave. You¿ll want it to be pourable.
  • Using 2 spoons, pick up a chilled ball in one spoon and warm chocolate in the other and roll them around together until the chilled ball is completely coated in warm chocolate (don¿t drop the ball into the chocolate or the warm chocolate will cool off!). Place the coated truffle back on the parchment paper. Continue coating the balls until they¿re all covered with milk chocolate. Allow to sit at room temperature until the chocolate hardens. Serve at room temperature.

2 tb Finely chopped parsley
2 tb Raisins
2 tb Unsalted butter
4 tb Dark rum
2 tb Vegetable oil
1 Clove garlic; (crushed)
2 tb Flour
1/2 ts Salt
1/2 ts Black pepper

Steps:

  • Marinate the chicken pieces overnight in the orange juice, garlic and parsley (6-8 hours), when ready remove the chicken, drain and save any juice for later. Soak the raisins in the rum. Place the salt and pepper with the flour and coat the chicken pieces on all sides. Add the remaining butter to the pan and then add the marinade. Bring the liquid to the boil and add the rum soaked raisins. Cook gently for a further 12-15 mins

1 stick (4 ounces) unsalted butter
1 cup raisins
2/3 cup plus 3 tablespoons dark rum
2 cups cake flour
1/2 teaspoon cinnamon
2 teaspoons baking powder
1/2 teaspoon salt
3 large eggs
3/4 cup, packed, light brown sugar
1 1/2 cups heavy cream, whipped

Steps:

  • Preheat oven to 350 degrees. Use 1 tablespoon butter to grease an 8-inch tube pan. Place remaining butter in a small saucepan and cook on medium until melted and starting to turn nut-brown. Remove from heat, let sit a few minutes, then pour into a glass measuring cup, leaving any dark sediment in bottom of pan. Set butter aside. Place raisins in a bowl and pour 2/3 cup rum over raisins. Sift flour, cinnamon, baking powder and salt into another bowl.
  • Beat eggs until light. Beat in sugar and continue beating, about 5 minutes, until very light and creamy. Drain raisins, reserving rum. Add flour mixture to egg mixture alternately with drained rum. Fold in brown butter, leaving any sediment in bottom of cup. Fold in raisins. Spread in pan and bake 40 minutes until lightly browned and tester comes out clean. Spoon remaining 3 tablespoons rum over cake. Cool. Remove from pan. Pile whipped cream in center and serve.

A classic French dessert, baba au rhum is a syrup-soaked, soggy, boozy delight. The dough here is intentionally soft and sticky, for a light, tender result. Be sparing in adding flour, incorporating just enough to make it manageable, or refrigerate the dough, then work with it. (Chilled dough is easier to handle.) This recipe yields a dozen babas, but you can bake them all and soak only as many as you intend to serve. You can freeze any baked, unsoaked babas for up to 2 months, then prepare them a day in advance and keep them in an airtight container at room temperature. Any leftover syrup keeps indefinitely in the fridge.

2 teaspoons active dry yeast
3 tablespoons granulated sugar
4 large eggs, beaten
Pinch of fine sea salt
1/2 cup/113 grams unsalted butter (1 stick), softened, plus more for greasing the pan
2 cups/256 grams all-purpose flour, plus more for dusting
1/2 cup/80 grams golden raisins, soaked in hot water and drained
1/2 cup honey
3/4 cup/150 grams granulated sugar
1 (2-inch) cinnamon stick
3 whole cloves
3 green cardamom pods
Zest of 1 large orange, removed in strips with a vegetable peeler
1/2 teaspoon vanilla extract
1/2 cup/120 milliliters dark rum, brandy or whiskey, plus more for serving
1 cup/240 milliliters heavy cream
2 tablespoons granulated sugar

Steps:

  • Prepare the dough: Put yeast and sugar in a medium bowl and stir in ¼ cup lukewarm water. Leave for 10 minutes, until mixture is bubbly. Add eggs and salt to the yeast mixture, and whisk together.
  • In a medium mixing bowl, work the butter into the flour until the mixture resembles wet sand. Add the egg-yeast mixture and drained raisins, and beat with a wooden spoon, mixing well to make a soft, sticky dough. (Alternatively, prepare the dough in a stand mixer.) Cover bowl and let dough rise in a warm place until doubled, about 1 hour.
  • Butter 2 mini-muffin tins or 12 mini ramekins. Uncover dough, dust lightly with flour and turn out onto a clean work surface. Add flour as necessary to make dough manageable and knead lightly to make a large, slightly sticky ball. Cut the dough into 12 pieces of equal size (about 2 ounces/55 grams). Dust each with flour, roll each into a ball and place in muffin tins or ramekins. Cover loosely and let rise until doubled, about 30 minutes.
  • Meanwhile, make the syrup: Put honey, sugar, cinnamon, cloves, cardamom and orange zest in a medium saucepan. Add 1 1/2 cups/360 milliliters water and bring to a boil, stirring to dissolve. Lower heat to a gentle simmer and cook for 10 minutes. Stir in vanilla and rum, turn off heat and let syrup cool to room temperature.
  • Heat oven to 375 degrees. Bake babas until lightly browned on top, 15 to 20 minutes. Turn babas out of their molds and onto a baking sheet, and return to the oven for 5 minutes to brown all over, as necessary. Remove and cover babas with a clean towel to keep them soft. (Store, cooled, in an airtight container at room temperature if making in advance.)
  • About 2 hours before serving, place babas, top-side down, in a deep baking dish. Pour syrup over and let soak. Turn babas over a few times in syrup - they should get quite soggy.
  • Prepare the whipped cream: With a whisk, hand-held beaters or in a stand mixer, whip cream to very soft peaks. Add sugar and whip lightly, leaving mixture soft.
  • To serve, place one or two babas in a low soup plate. Spoon over a little more syrup, and splash on about a tablespoon of rum. Serve a big spoonful of whipped cream on the side. If desired, garnish with a strip of orange zest, plucked from the syrup.
