Number Of Ingredients 11

2 cups old-fashioned oats
1 cup all-purpose flour
1 cup golden raisins
3/4 cup packed brown sugar
1/2 cup toasted wheat germ
3/4 teaspoon ground cinnamon
3/4 teaspoon salt
1 large egg, room temperature
1/2 cup canola oil
1/2 cup maple syrup
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350°. Line a 13x9-in. baking pan with foil, letting ends extend up sides; grease foil. In a large bowl, combine the first 7 ingredients. In a small bowl, combine egg, oil, maple syrup and vanilla; pour over oat mixture and mix well. (Batter will be sticky.), Press into prepared pan. Bake 25-30 minutes or until set and edges are lightly browned. Cool in pan on a wire rack. Lifting with foil, remove from pan; cut into bars.

1/4 cup butter
1 cup packed brown sugar
1 large egg
1/2 cup hot brewed coffee
1-1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup raisins
1/4 cup chopped pecans
ICING:
1 cup confectioners' sugar
1/2 teaspoon vanilla extract
4 to 5 teaspoons water

Steps:

  • In a large bowl, combine butter and brown sugar until crumbly, about 2 minutes. Beat in egg. Gradually beat in coffee. Combine the flour, baking powder, cinnamon, baking soda and salt. Gradually add to the coffee mixture until blended. Stir in raisins and pecans., Transfer to a 13x9-in. baking pan coated with cooking spray. Bake at 350° for 18-20 minutes or until edges begin to pull away from the sides of the pan and a toothpick inserted in the center comes out clean. Cool on a wire rack for 5 minutes., Meanwhile for icing, in a small bowl, combine the confectioners' sugar, vanilla and enough water to achieve spreading consistency. Spread over warm bars.

2 cups old-fashioned oats
1 cup raisins
1/2 cup Gold Medal™ all-purpose flour
1/2 cup Gold Medal™ whole wheat flour
1/2 cup packed brown sugar
1/2 cup wheat germ
2 teaspoons ground cinnamon
1/2 teaspoon salt
1 egg, slightly beaten
1/2 cup unsweetened applesauce
1/2 cup honey
1 teaspoon vanilla

Steps:

  • Heat oven to 350°F. Spray bottom and sides of 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In large bowl, stir together oats, raisins, all-purpose flour, whole wheat flour, brown sugar, wheat germ, cinnamon and salt. In small bowl, beat egg, applesauce, honey and vanilla with whisk until well combined.
  • Pour applesauce mixture into oat mixture; stir until well blended. Pour mixture into baking dish.
  • Bake 20 minutes for soft granola bars; bake 30 minutes for firmer granola bars. Cool in dish 5 minutes. For bars, cut into 5 rows by 4 rows. Cool completely in dish, about 30 minutes.

2 cups quick cooking oats
1 cup all-purpose flour
¾ cup packed brown sugar
¾ cup raisins
½ cup wheat germ
½ teaspoon salt
½ teaspoon ground cinnamon
½ cup chopped English walnuts
½ cup vegetable oil
½ cup honey
1 egg
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a 9x13 inch baking pan with aluminum foil or parchment paper, and spray with vegetable oil spray.
  • In a large bowl, stir together oats, flour, brown sugar, raisins, wheat germ, salt, cinnamon, and walnuts. In a smaller bowl, thoroughly blend oil, honey, egg, and vanilla; pour into the flour mixture, and mix by hand until the liquid is evenly distributed. Press evenly into the prepared baking pan.
  • Bake 25 to 30 minutes in the preheated oven, or until the edges are golden. Cool completely in pan before turning out onto a cutting board and cutting into bars.

Here is a good alternative to a commercially made granola bar. It's a flexible recipe, allowing for any number of additions: dried cherries, pistachios, peanuts, dates, orange zest. You could substitute a dried fruit purée (directions are in the notes) for the honey and brown sugar, providing a complex twist on the binding agents. You could add chocolate. Coconut. The possibilities are endless.

3/4 cup honey
1/2 cup packed brown sugar
1/4 cup neutral oil, like grapeseed or corn
3 cups any good, not-too-sweet granola

Steps:

  • Put the honey, brown sugar, and oil in a small pot and bring to a boil. Put the granola in a large bowl and pour the sugar mixture over the top while mixing; stir until the granola is well coated.
  • Press into an 8- or 9-inch square pan and let cool in the fridge. Cut into squares or rectangles and serve. Store in an airtight container for up to 4 days.

1/2 cup packed brown raisins
1/2 cup chopped pecans, toasted
1 1/4 teaspoons ground cardamom
6 tablespoons (3/4 stick) unsalted butter
1/3 cup packed dark brown sugar
3 tablespoons honey

Steps:

  • Preheat oven to 350°F. Line 9-inch square baking pan with foil, allowing foil to extend over sides. Butter foil. Mix oats, raisins, pecans and cardamom in bowl. Combine butter, sugar and honey in medium saucepan. Stir over medium heat until butter melts and mixture is smooth and begins to boil. Pour butter mixture over oat mixture and stir until well coated. Transfer to prepared pan. Using spatula, press mixture evenly into pan.
  • Bake oat mixture until top is golden brown, about 30 minutes. Transfer to rack and cool. Using foil as aid, lift out of pan; place on work surface. Using large sharp knife, cut into 18 bars.
