HEALTHY FRUIT SALSA AND BAKED PITA CHIPS

Steps:
- To make the fruit salsa, peel and chop all of the fruit in small pieces. Combine fruit in a large bowl and stir to combine.
- In a small bowl, add the lemon juice and honey and mix well. Pour over fruit and mix to combine. Place in the refrigerator while you make the pita chips. (You'll add the basil right before serving)
- To make the pita chips, preheat oven to 400°F and line a large baking sheet with parchment paper or a silpat mat and set aside. In a medium bowl, combine the cinnamon and sugar and set aside.
- Cut the pita into 8th to form small triangles. Spray each side of the pita with the coconut oil cooking spray and dip both sides into the cinnamon sugar mixture. Lay on prepared baking sheet. Repeat until all of the pita is done. Bake 8-10 minutes, turning the pita chips over halfway through for even baking. Allow to cool slightly.
- Before serving, add the chopped basil and stir well.

- In a large bowl, combine the pineapple with mango, strawberries, blueberries, kiwi, apples, and lime juice.
- Give everything a good mix, cover and chill in the fridge as you make the cinnamon chips.
- Preheat the oven to 350°F/180°C.
- In a small bowl, combine the cinnamon with sugar.
- Place the tortilla wedges on a sheet pan and spray with cooking spray on both sides (or brush with melted butter or vegetable oil). Sprinkle with cinnamon sugar, and bake for 8-10 minutes or until crispy.
- Allow the cinnamon chips to cool down, serve with chilled fruit salsa.

- In a large bowl, thoroughly mix kiwis, Golden Delicious apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15 minutes.
- Preheat oven to 350 degrees F (175 degrees C).
- Coat one side of each flour tortilla with butter flavored cooking spray. Cut into wedges and arrange in a single layer on a large baking sheet. Sprinkle wedges with desired amount of cinnamon sugar. Spray again with cooking spray.
- Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes. Serve with chilled fruit mixture.

- To prepare salsa: Finely chop apples, kiwi, grapes and strawberries and place in medium bowl. Grate orange peel to measure 1 teaspoon. Squeeze juice from orange. Add juice and grated peel to chopped fruit. Stir together brown sugar, cinnamon, nutmeg and apple jelly in small bowl. Add to fruit; toss gently to mix. Refrigerate 1 hour to mix flavors. To make cinnamon chips: Preheat oven to 400°F. Mix sugar and cinnamon in small bowl. Brush one side of tortillas with melted butter. Sprinkle cinnamon sugar mixture on tortillas. Cut each tortilla into 8 wedges (as you would a pie) and place on ungreased cookie sheet. Bake for 5 minutes, or until golden. Cool. Recipe Tip: substitute 1-¼ teaspoons Jamaican jerk seasoning for cinnamon and nutmeg in the salsa.

- For the mint lime simple syrup: Add the lime juice, honey, mint leaves and 1 cup of water to a small saucepot and bring to a boil. Stir until honey is dissolved, then remove from heat. Let cool and strain out mint.
- For the salsa: Put the blueberries, pomegranate seeds, grapefruit, kiwi and mango in a bowl and add 1/4 cup simple syrup (save remainder for another use). Gently toss and garnish with mint leaves.
