1 mango, peeled and cut into wedges
1/2 English cucumber, thinly sliced
1 bunch radishes (about 8), halved or quartered
1 tablespoon finely grated lime zest and 2 tablespoons lime juice (from 2 limes)
2 tablespoons extra-virgin olive oil
1 tablespoon honey
Coarse salt

Steps:

  • Arrange mango, cucumber, and radishes on a platter.
  • Whisk together lime zest and juice, oil, and honey. Season with salt.
  • Drizzle dressing over salad, and season with salt.

This salad encompasses the radishes that are elongated with pink and white roots. It is eaten raw as an appetizer alone or chopped into a salad. I had this recipe in mind for the radishes, which looked so fresh and appetizing when I eyed it the Martha Stewart Living, May 2010 edition. The lime dressing and zest along with the sugar really brings out the flavors to a perfect ensemble. A sweet citrusy and fresh salad that is so crunchy, your head just might shake. I was not the biggest fan of radishes at first, because it tends to be a little too spicy and bitter for me, but this was not the case at all. The radishes were a welcome addition with the mango that offsets any bitterness. The bright colors of this salad represents the vibrant flavors.

3 tablespoons smooth peanut butter
1/4 cup fresh lime juice (about 2 limes)
2 tablespoons light brown sugar
2 tablespoons canola or vegetable oil
Salt
8 large radishes, halved lengthwise and thinly sliced crosswise
6 cups mixed baby greens, washed and dried
1 large or 2 small mangoes, peeled, fruit cut off the seed and cubed
2 cups peeled and cubed jicama (cut into about 1/2-inch cubes)
1/4 cup fresh cilantro leaves

Steps:

  • In a medium bowl, whisk the peanut butter and lime juice until smooth. Add the brown sugar, vegetable oil and some salt and whisk until combined. Add enough water to thin the sauce and give it a dressing-like consistency, about 2 to 3 tablespoons.
  • Place the radishes, greens, mangoes, jicama and cilantro in a large bowl and toss together.
  • Drizzle with the dressing, toss using tongs to coat and serve.

1/2 organic lime, zested and juice
2 TB raw organic apple cider vinegar
3 TB organic extra virgin olive oil
Sea salt, to taste
1 organic mango, peeled and sliced
8 organic radishes, thinly sliced
1 organic English cucumber, thinly sliced
4 ounces organic spinach
8-10 organic mint leaves, chiffonade
Optional: Protein of choice - I like Wild Planet's wild-caught Albacore tuna, though chicken would also be a good addition.

Steps:

  • In a small bowl, whisk together lime zest, juice, and vinegar. Drizzle in the oil while whisking. Season with salt and set aside. In a large salad bowl, toss together mango, radishes, cucumber, spinach, and mint. Drizzle with dressing and toss gently or serve the dressing on the side for guest's to dress their salad to their preference. Top with optional protein of your choice just before serving.

2 tablespoons lime juice
1 teaspoon lime juice
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/4 teaspoon pepper
3 tablespoons olive oil
1 small shallot, minced
1 medium jicama (about 1 pound)
8 medium radishes, thinly sliced
1 mango, medium ripe but firm, diced
boston lettuce leaf, for serving (optional)
2 teaspoons fresh parsley, chopped

Steps:

  • In a large bowl, whisk together 2 T lime juice, mustard, salt and pepper, oil and shallot.
  • Using a sharp knife, cut the ends off of the jicama and peel by cutting top to bottom.
  • Make matchstick size pieces out of the jicama and toss with remaining lime juice.
  • Just before serving, add jicama, radishes, and mango in bowl with the dressing.
  • Toss well to coat.
  • Line a serving platter with lettuce leaves, if desired, and pile salad in center.
  • Sprinkle with parsley and serve.

Radish salad is something you see in places around the world (in the last couple of years, I have been served it in similar guises in both Mexico and Turkey), but almost never in this country. Salting the radishes first reduces their harshness while accenting their crispness. At that point, they can be dressed with a traditional vinaigrette or the more tropical (and oil-less) version here. The only trick is to slice the radishes thinly. For this, a mandoline is best.

1 tablespoon salt
1/4 teaspoon freshly ground black pepper

1 small red onion, finely diced
2 tablespoons rice wine vinegar

2 tablespoons extra virgin olive oil
1 teaspoon grated fresh ginger
1 teaspoon toasted sesame oil
3 tablespoons minced fresh cilantro
Salt and freshly ground black pepper, to taste

2 cups sliced radishes
½ teaspoon salt
1 cup sliced red onion
1 cup seeded and sliced cucumber
½ cup extra virgin olive oil
2 tablespoons white wine vinegar
½ teaspoon white sugar
1 clove garlic, minced
1 teaspoon chopped fresh dill

Steps:

  • Toss radishes with salt; let stand for about 10 minutes. Drain any liquid and transfer radishes to a large bowl. Add red onion and cucumber slices.
  • Whisk olive oil, vinegar, sugar, garlic, and dill in a small bowl until well mixed; pour over vegetables and toss to combine. Cover and refrigerate for at least 1 hour before serving.
