3/4 cup slivered almonds
2 medium heads radicchio (about 1 1/4 pounds total)
Zest and juice of 1 orange (about 1 tablespoon zest and 1/4 cup juice)
3/4 cup golden raisins
3 tablespoons olive oil
3 tablespoons red-wine vinegar
2 to 3 tablespoons sugar
Coarse salt and ground pepper

Steps:

  • Preheat oven to 350 degrees. Spread slivered almonds on a baking sheet. Toast in oven, tossing occasionally, until golden, 8 to 10 minutes; let cool.
  • Core radicchio heads; cut or tear into 1-inch pieces. Combine in a large bowl with the finely grated zest and juice of 1 orange, golden raisins, olive oil, red-wine vinegar, sugar, and toasted almonds.
  • Season with coarse salt and ground pepper; toss to combine. Serve immediately, or refrigerate, covered, up to 1 day.

3 tablespoons fresh lemon juice
1 teaspoon honey
2 tablespoons minced shallot
Coarse salt and freshly ground pepper
1/4 cup extra-virgin olive oil
1/3 cup golden raisins
1 head fennel, thinly sliced lengthwise, plus 1/3 cup fennel fronds
1 cup farro
1/2 cup fresh mint leaves, finely chopped
1/2 head radicchio, cored and coarsely chopped

Steps:

  • In a bowl, whisk together lemon juice, honey, shallot, 1/2 teaspoon salt, 1/4 teaspoon pepper, and oil. Add raisins and sliced fennel; toss to coat.
  • In a medium saucepan, cover farro with 4 inches water and bring to a boil; season with salt. Reduce heat and simmer until tender, 12 to 15 minutes. Drain and let cool completely.
  • Add farro to bowl with mint, radicchio, and fennel fronds. Season with additional salt, if desired. Serve.

2 medium to large heads radicchio
2 tablespoons extra-virgin oil, plus additional for drizzling
Salt and freshly ground black pepper
1 can (15 ounces) sliced beets, drained
1/4 red onion, very thinly sliced
Balsamic vinegar, for drizzling, about 1 1/2 tablespoons

Steps:

  • Preheat a grill pan over high heat. Pour a couple of tablespoons of extra-virgin olive oil into a small dish. Slice radicchio heads into quarters and remove core. Brush quarter heads with oil on both sides and grill wedges 3 minutes or so on each side. Season with salt and pepper. Arrange wedges of grilled radicchio on a platter. Pile sliced beets at the center of the platter. Sprinkle platter with red onion and drizzle salad with balsamic vinegar and oil. Adjust salt and pepper and serve.

1/4 cup extra-virgin olive oil
2 tablespoons dry white wine, such as pinot grigio
2 tablespoons honey
Two 8-ounce heads radicchio, halved and chopped into 1-inch pieces
3 cups baby arugula
2 ripe but firm Asian or Bosc pears, cored, halved and cut lengthwise into 1/4-inch-thick slices

Steps:

  • For the croutons: Place a grill pan over medium-high heat or preheat a gas or charcoal grill. Brush the bread on each side with olive oil. For the dressing: In a small bowl, whisk together the oil, wine, honey, mustard, salt and pepper until smooth.

This quick salad delivers a lot of flavor. The radicchio has a touch of bitterness, but the raisins bring in the sweet element, and the goat cheese the creamy complexity. It is a great appetizer, or can be a main course.

3/4 cup golden raisins
3 tablespoons balsamic vinegar
2 pounds radicchio, cut into 1-inch shreds
3 tablespoons extra-virgin olive oil
1 teaspoon kosher salt
1 pound fresh goat cheese (or Gorgonzola-dolce, or sweet, is best)

Steps:

  • Put the raisins in a small bowl, and pour the vinegar over them. Let soak for 15 minutes.
  • Pour the raisins and vinegar over the shredded radicchio in a large serving bowl. Drizzle with the olive oil, and season with the salt. Toss well to coat the salad with the dressing. Crumble the goat cheese into chunks over the salad, and gently toss again to distribute the cheese, taking care to keep it in chunks.

1 cup long-grain white rice
1/3 cup golden raisins
1 tablespoon olive oil
3 tablespoons freshly squeezed lemon juice
1 small head radicchio, or red Belgian endive, thinly sliced crosswise
2 scallions, thinly sliced on the diagonal
Coarse salt and ground pepper

Steps:

  • Cook rice according to package instructions.
  • Add raisins and oil to rice (while still hot); fluff with a fork. Transfer to a shallow bowl, cover loosely with plastic wrap, and refrigerate until cool, about 1 hour.
  • With a fork, mix in lemon juice, radicchio, and scallions; season with salt and pepper. Serve.
