ITALIAN SAUSAGE AND RADIATORE PASTA {HOMEMADE SAUCE}



Italian Sausage and Radiatore Pasta {Homemade Sauce} image

This quick and easy one-skillet meal is my go-to favorite.

2-1/2 cups uncooked radiatore pasta
4 dashes salt
Water
2 whole Italian sausages ((or apprx. 6 ounces of bulk Italian sausage))
1 can (15 ounces) tomato sauce
15 ounces water (filled in the empty tomato sauce can)
1 can (14.5 ounces) diced tomatoes
2 tablespoons olive oil
1 cup chopped onion
4 cloves garlic (peeled and chopped)
1/4 cup chopped fresh Italian parsley (for the sauce)
2 teaspoons dried oregano leaves
1/2 teaspoon dried red pepper flakes (or to taste)
1/3 teaspoon salt (or to taste)
1/2 teaspoon ground black pepper
2 tablespoons grated Parmesan cheese (for garnish)
2 tablespoons chopped fresh Italian parsley (for garnish)

Steps:

  • In a medium size pot, add hot water. Heat the pot on medium heat. Bring to a boil and add the salt.
  • Add pasta to the pot and stir. Cook the pasta until its al-dente (according to package instructions). Drain the pasta (don't rinse the pasta) and set aside.
  • Don't rinse the pasta after cooking it. When pasta is rinsed, the starch is removed. The starch on pasta helps to hold and absorb the sauce so it's important to keep the starch on the pasta.
  • While the pasta is cooking, chop the onions, garlic and parsley. Set them aside.
  • In a large shallow pot or sauté pan (with high sides), add the sausage. If the sausage is in a casing, make a small cut on one of the ends, squeeze the meat out, and discard the casing.
  • Stir and using a spatula, break apart the sausage into small pieces as it cooks.
  • When the sausage starts to brown, add the onions, garlic and olive oil. Stir. Continue to stir while cooking for about 3 minutes or until the onions start to turn translucent.
  • In a small bowl, add the canned diced tomatoes. With clean hands squeeze the tomatoes so there are no big chunks, and add them to the pan.
  • Add the tomato sauce to the pan. Fill the empty tomato sauce can with water and add the water to the pan. Stir the sauce.
  • Add parsley, oregano, red pepper flakes, salt, and pepper. Stir. Turn the heat down to low and let the sauce simmer (uncovered) for about 15 minutes, stirring occasionally.
  • Add the pasta to the sauce. Gently stir the pasta into the sauce. Top with grated Parmesan cheese and parsley and serve while warm.

1-1/2 lb. Italian sausage, cut into 1-inch-thick slices
1 large each: red and green bell pepper, sliced
1 large onion, sliced
1 can (15 oz.) tomato sauce

Steps:

  • Preheat oven to 400°F. Add hot water to stuffing mix; stir just until moistened. Set aside.
  • Cook and stir sausage in large skillet on medium-high heat until evenly browned; drain. Add peppers and onions to skillet; cook until vegetables are crisp-tender, stirring occasionally. Spoon sausage mixture into 13x9-inch baking dish. Cover with tomato sauce and prepared stuffing.
  • Bake 25 min. or until heated through.

A slightly spicy, creamy pasta dish. The texture reminds me of a fancy mac&cheese, but there's only 1/4 cup of cheese in the entire recipe. A yummy, savory, EASY dish, especially on a chilly night.

1/2 lb mild Italian sausage, ground
1/2 lb hot Italian sausage, ground
3 garlic cloves, minced
1 teaspoon canola oil
1/4 teaspoon red pepper flakes
2 bell peppers, or
10 mini sweet peppers
8 ounces fat-free evaporated milk
1/4 cup parmesan cheese, grated
8 ounces pasta, radiatore
to taste salt and pepper

Steps:

  • Roast bell peppers in oven [400 degrees, coat whole peppers in oil, bake 20 min, turning occasionally, until skins are browned. To easily peel, put in ziploc bag for 15-30min before peeling].
  • Peel and seed peppers. Puree in food processor or blender until creamy. Set aside.
  • Cook the pasta while you are doing the steps below.
  • Heat oil over medium-high heat, add garlic and saute a couple of minutes.
  • Add italian sausage and heat until thoroughly cooked. Drain on paper towels, drain off excess grease.
  • Add sausage back to pan, and mix in evaporated milk, pureed pepper, red pepper flakes, salt and pepper.
  • Stir in parmesan cheese.
  • Fold pasta into mixture.
  • Divide into 6 servings, top with additional parmesan if desired.

8 ounces radiatore
1 lb Italian sausage, sliced in 1/2-inch pieces
3/4 cup chopped onion
2 garlic cloves, finely chopped
1 (26 ounce) jar pasta sauce
1/4 teaspoon pepper
1 1/2 cups shredded mozzarella cheese

Steps:

  • Cook radiatore as package, drain. Preheat oven to 375'. In a large skillet, over medium heat, brown sausage; pour off fat. Add onion and garlic. Cook until onion is tender. Stir in pasta sauce and pepper. Bring to a boil; reduce heat and heat simmer 10 minutes. Remove from heat; stir in radiatore and 1/2 cup cheese. Turn into greased 11x7-inch baking dish. Top with remaining 1 cup cheese. Bake uncovered 30 minutes or until hot and bubbly.

1 lb new potato, washed and cut in half
1 medium sweet onion, sliced into medium thick rings
1 lb smoked sausage, cut into bite sized pieces
1/2 lb baby carrots or 2 large carrots, cut into medium bite size pieces
1 teaspoon salt
1/2-1 teaspoon pepper
3 teaspoons melted margarine
1 teaspoon garlic powder
1 1/2 teaspoons dried thyme

Steps:

  • Preheat oven to 400ºF and spray a 9x13-inch baking pan with cooking spray.
  • Combine all ingredients except smoked sausage in a large zipper type plastic bag,mixing well.
  • Place ingredients from bag into prepared pan,bake uncovered for 30 minutes.
  • Add sausage to vegetables mixing well (if desired at this point feel free to add more seasonings).
  • Bake for 20 minutes or until potatoes are tender and golden browned.

1/2 lb of small rigatoni pasta, uncooked (half box)
1 lb Italian sausage
1/2 cup chopped onion
3 cups spaghetti sauce (jar or home made)
2 cups shredded mozzarella cheese, divided
1 cup ricotta cheese
1/4 cup grated parmesan cheese, divided

Steps:

  • Preheat oven to 400 degrees.
  • Cook pasta according to package directions and drain.
  • Over medium heat, cook sausage and onions in a skillet until sausage is cooked through.
  • Cut sausage into thin slices.
  • In a large bowl, stir together pasta, sausage mixture, 2 1/2 cups sauce, 1 1/2 cups of mozzarella cheese, ricotta cheese and 2 tbl Parmesan cheese until well combined.
  • Spread mixture into a 13 x 9 inch baking dish, top with remaining sauce and sprinkle with remaining cheeses.
  • Cover with foil and bake for 30 minutes or until hot and bubbly.

8 ounces ziti pasta (or similar pasta cooked according to package)
2 teaspoons olive oil
1/2 onion, diced
12 ounces mild Italian sausage (I remove from casings)
1 teaspoon garlic, diced (I recommend 1 tsp but like garlic a lot so go with what you prefer)
1/4 teaspoon fennel seed (optional)
1 teaspoon italian seasoning
6 ounces sliced mushrooms (optional)
2 (15 ounce) containers of favorite pasta sauce
1 1/2 cups shredded mozzarella cheese
2 tablespoons parmesan cheese (fresh shredded works best) or 2 tablespoons romano cheese (fresh shredded works best)

Steps:

  • Preheat oven to 400 F and grease 13x9-in baking dish.
  • Prepare pasta according to package directions.
  • Heat Oil in a large skillet over medium-high heat.
  • Add onion and sauté until slightly transparent.
  • Add sausage and cook stirring frequently to break up, cook until no longer pink.
  • Add garlic, fennel, Italian seasoning and mushrooms.
  • Stir frequently and cook until mushrooms are tender.
  • Add sauce, stirring to mix, cook until sauce is heated through. Remove from heat.
  • Add to prepared baking dish and sprinkle evenly with mozzarella and parmesan/romano cheese.
  • Bake 15 to 17 minutes or until cheese is bubbly.
  • Cool approximately 5 Minutes.
  • To freeze ahead prepare as above but do not bake.
  • Cover and freeze up to 2 months.
  • Thaw overnight in refrigerator.
  • Preheat oven to 400F and bake 25 to 35 minutes.
