PERUVIAN PORK AND QUINOA SOUP



Peruvian Pork and Quinoa Soup image

Number Of Ingredients 14

One 3-pound pork butt
Kosher salt and black pepper
1 1/4 cups cups quinoa, rinsed well
2 large yams, peeled and diced
1/3 cup olive oil, plus more for roasting
1 cup finely diced carrot
1 cup finely diced onion
2 tablespoons minced garlic
2 teaspoons coriander seeds, toasted and ground
1 teaspoon turmeric
3 quarts vegetable, chicken or pork stock (preferably homemade)
White pepper
2 tablespoons lime juice
Fresh cilantro leaves, for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • Season the pork butt generously with salt and pepper. Place the pork in a roasting pan, cover with foil and roast until tender, at least 4 hours. Dice the pork and reserve 4 cups. Set aside the remaining pork for another use.
  • Increase the oven temperature to 375 degrees F.
  • Add the quinoa and 2 1/2 cups water to a medium saucepan and bring to a boil. Lower to a simmer, cover and cook until tender, about 15 minutes.
  • Toss the yams in some of the oil and season with salt and pepper. Roast the yams in the oven until fork-tender, about 25 minutes. Reserve 2 cups and set aside any remaining yam for another use.
  • Heat the remaining 1/3 cup oil in a large saucepan over medium heat. Add the carrot, onion and 1 teaspoon of salt and saute until translucent. Add the garlic, coriander and turmeric and cook for 5 minutes on medium heat. Add the stock and bring to a simmer.
  • Add the cooked quinoa, the 4 cups pork and 2 cups yams. Adjust the seasoning with salt and white pepper to taste, then add the lime juice and garnish with cilantro.

2 tablespoons olive oil
1 teaspoon ground annatto seed (or sweet paprika)
1/2 cup chopped scallion (white part and 1-inch of the green)
1 cup finely chopped leek (white part and 1-inch of the green)
1 medium ripe tomatoes, peeled and chopped (5-6 oz)
4 garlic cloves, mashed into a paste with 1 tsp salt & 1/2 tsp pepper
1/2 teaspoon ground cumin
3/4 lb lean pork, trimmed of fat and cut into 1/2-inch cubes
6 cups hot water
1 lb waxy potato, peeled and cut into 1-inch cubes
3/4 cup cooked quinoa (see instructions below)
1/4 unsalted dry roasted peanuts (or 1/4 cup natural peanut butter)
1 cup milk
1 cup frozen peas
8 large fresh basil leaves, chopped
1 pinch cayenne pepper
fresh parsley leaves, minced, for garnish

Steps:

  • Heat the oil in a heavy 4-qt. sauce pan over low heat. Stir in the annatto or paprika, then add the scallions, leeks, tomato, garlic paste, and cumin. Cook, stirring occasionally, for 5 minutes.
  • Increase the heat to medium, add the pork cubes and cook for a couple of minutes, tossing so they are well coated with the vegetable mixture.
  • Add the water and bring to a boil. Cover, reduce the heat to low, and simmer for 45 minutes.
  • Meanwhile, pick through the quinoa to remove any impurities. Place it into a large sieve or a small-holed strainer and immerse the sieve or strainer into a large pot of cold water. Rub the quinoa between your hands until the water is cloudy. Lift the sieve or strainer out and discard the water. Repeat this process until the water remains clear. It is very important to wash the quinoa well, or it will be bitter.
  • Bring 1 1/3 c water to a boil. Add quinoa, stir, cover and reduce heat to simmer. It should have absorbed the water in about 10-12 minutes. Remove from heat and fluff a bit with a fork. Set quinoa aside.
  • Puree the peanuts or peanut butter with the milk. Set aside.
  • Add the potatoes, quinoa, and peanut puree. Partially cover and continue to cook until the potatoes are tender, about 20 minutes.
  • Add the peas, basil and cayenne, and cook for a couple of minutes to heat the peas through.
  • Taste for seasoning. Serve hot, garnished with the parsley.

My friend from Ecuador made it for us and I tried to replicate it with much success. It's now one of my favorite soup to make. If you like a creamier soup, you can make it with 3 cups soy milk and 1 cup water.

1 cup raw quinoa
1 big onion, chopped
2 teaspoons salt
3 tablespoons olive oil
2 tomatoes, peeled and cubed
1 vegetable bouillon cube
6 potatoes, cubed
2 teaspoons cumin
1 teaspoon black pepper
2 cups water
2 cups soymilk

Steps:

  • Rinse quinoa 3 times and drain well.
  • Saute the onion in the olive oil for 5 minutes. Add the salt and cumin.
  • Add the quinoa, potatoes, tomatoes, water and soy milk.
  • Bring to a boil for about 5 minutes, then cover and let simmer until potatoes are tender.
  • You may add water or milk if necessary.

I have tried several recipes using quinoa and never liked any of them until this one. It is important to rinse this grain very, very well to get rid of the bitter taste. This is an adapted Moosewood recipe.

1/2 cup raw quinoa
2 tablespoons olive oil
2 cups chopped onions
1 teaspoon salt
1 cup diced potato
1 cup chopped red bell peppers or 1 cup green bell pepper
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon pepper
3 cups water (I prefer vegetable stock) or 3 cups vegetable stock (I prefer vegetable stock)
1 1/2 cups chopped fresh tomatoes
1 cup diced zucchini or 1 cup yellow squash
1 tablespoon fresh lemon juice

Steps:

  • Rinse the quinoa very well in a fine mesh strainer under running water; set aside to drain.
  • Heat the oil in a large soup pot.
  • Add in the onions and salt; cover and cook over medium heat for 5 minutes--stir every now and then.
  • Add in the drained quinoa, potatoes, bell pepper, coriander, cumin, oregano, pepper, vegetable stock, and tomatoes; stir to combine.
  • Cover and bring to a boil; lower heat and simmer for 10 minutes.
  • Add in the zucchini; cover and let simmer for 15-20 minutes or until the vegetables are tender.
  • Add in the lemon juice; stir to combine.
  • Serve.
