BLT QUINOA BOWLS

I absolutely love a BLT with sliced avocado and an egg. Recently, I've been trying out grain bowls, and I thought the flavors of my favorite sandwich would work really well. My family agreed! -Elisabeth Larsen, Pleasant Grove, Utah

Number Of Ingredients 10

1 cup quinoa, rinsed
4 tablespoons olive oil, divided
2 tablespoons minced fresh basil
2 tablespoons white wine vinegar, divided
1 tablespoon lemon juice
4 large eggs
8 ounces cherry tomatoes
3 cups fresh arugula
1 small ripe avocado, peeled and sliced
4 bacon strips, cooked and crumbled

Steps:

  • Prepare quinoa according to package directions. Combine 3 tablespoons olive oil, basil, 1 tablespoon vinegar and lemon juice. Add to cooked quinoa; stir to combine., Place 2-3 in. of water in a large skillet with high sides; add remaining vinegar. Bring to a boil; adjust heat to maintain a gentle simmer. Break 1 cold egg at a time into a small cup; holding cup close to surface of water, slip egg into water. Cook, uncovered, until whites are completely set and yolks begin to thicken but are not hard, 3-5 minutes. Using a slotted spoon, lift eggs out of water. Keep warm., In a large skillet, heat remaining oil over medium heat. Cook tomatoes until they begin to release their juices, 8-10 minutes. Add arugula; cook and stir just until arugula is wilted, 1-2 minutes., To serve, divide quinoa evenly among 4 bowls. Add cherry tomatoes, arugula, avocado slices and crumbled bacon. Top each with a poached egg.

1 (8 ounce) package quinoa shells pasta
¾ cup light creamy salad dressing (such as Miracle Whip Light®)
¾ cup bacon ranch dressing
2 cups shredded lettuce
1 large tomato, seeded and chopped
1 cucumber, seeded and chopped
3 green onions, trimmed and chopped
1 (3 ounce) can real bacon bits

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in shells and return to a boil. Cook pasta uncovered, stirring occasionally, until tender yet firm to the bite, about 6 minutes. Drain. Transfer to a bowl and refrigerate until cool, about 20 minutes.
  • Combine creamy salad dressing and bacon ranch dressing in a large bowl. Mix in cooled pasta, lettuce, tomato, cucumber, green onions, and bacon bits. Refrigerate until serving.

6 oz uncooked rotini pasta (about 2 cups)
4 cups romaine or iceberg lettuce (rinsed, chopped and spun-dry)
1 1/2 cups cherry tomatoes (halved)
8 oz bacon
1/3 cup red onion (finely chopped)
1/4 cup Ranch dressing
1/4 cup sour cream
1/2 cup mayo
2 garlic cloves (minced)
3 Tbsp lemon juice (freshly squeezed)
¼ tsp fine sea salt (or to taste)
⅛ tsp ground black pepper (or to taste)

Steps:

  • Cook pasta according to package instructions, drain the pasta and rinse under cold water, set aside to cool.
  • In a small bowl, combine the ingredients for the dressing and whisk until creamy.

25g pasta bows
2 cooked crispy bacon rashers , broken into pieces
15g spinach , chopped
6 cherry tomatoes , halved
½ tbsp crème fraîche
¼ tsp wholegrain mustard

Steps:

  • The night before school, cook the pasta following pack instructions and run under cold water to cool quickly. Mix in the bacon, spinach, tomatoes, crème fraîche and mustard, and season with a little salt. Spoon into an airtight container and keep overnight in the fridge.
