QUINOA AND OATMEAL CEREAL HEART HEALTHY
Oatmeal contains a balanced soluble and insoluble fiber, which reduces your low-density lipoprotein (LDL), the "bad" cholesterol. Walnuts can significantly reduce blood cholesterol, rich in polyunsaturated fatty acids, walnuts also help keep blood vessels healthy and elastic. - Bring 1/2 cup dried fruit (such as goji berries, cranberries, or barberries), 1/2 cup steel-cut oats, 1/2 cup well-rinsed quinoa, 1/4 cup raisins, 1 teaspoon kosher salt, 1/2 teaspoons ground cinnamon, 1/4 teaspoons ground cardamom, and 4 cups water to a boil in a medium saucepan. Cover and let sit off heat overnight. (Alternatively, bring mixture to a boil; reduce heat and simmer, stirring occasionally, until grains are tender, 20-25 minutes.)
- Before serving, reheat cereal in saucepan, covered, over medium-low heat, stirring occasionally and adding water if needed, until warmed through, 5-8 minutes. Serve with milk, maple syrup, toasted shelled pumpkin seeds (pepitas), and toasted walnuts.

- Combine quinoa flakes with liquid of your choice in a 2 - 2 1/2 cup microwaveable bowl -- I used a combination of rice milk and coconut milk the first time I made this.
- Microwave for 2 1/2 mins watching closely so it doesn't boil over. Use a larger bowl if you want to avoid a potential mess.
- Add in dried fruit, nuts, and sweetener (honey, agave nectar, maple syrup, sugar).
- Let stand for a few minutes or until it's at a temperature you can comfortably consume it without burning your mouth!

- Rinse Quinoa well to ensure your dish doesn't have a bitter taste.
- In a small sauce pan, bring water and Quinoa to a boil.
- Reduce heat to low and simmer (uncovered) for 10-15 minutes (or until water is absorbed). You will know that the quinoa is done when all the grains have turned from white to transparent, and the spiral-like germ has separated.
- In a separate sauce pan, while Quinoa is cooking, melt soy margarine, then add raisins, nuts, cinnamon (and syrup, if desired) and simmer until raisins are plumped.

APPLE CINNAMON QUINOA CEREAL

- Soak uncooked quinoa in a bowl of water for 5 minutes. Meanwhile, coat a large skillet with cooking spray and set over medium heat. When skillet is hot, melt 1/2 the tablespoon of butter and add your chopped apples. Cook about 5 to 10 minutes, until apples are soft and begin to caramelize, turning occasionally. Set aside. Rinse and drain quinoa. Add to a medium saucepan with 1 1/2 cups of cold water and bring to a bowl over medium-high heat, boil for one minute. Reduce heat to low and cover pan tightly, allowing quinoa to simmer for 10 minutes.
