QUINOA AND BROCCOLI CASSEROLE

1 1/2 cups quinoa
3 cups chicken stock
3 teaspoons kosher salt, divided
12 ounces broccoli florets, chopped
8 ounces button or cremini mushrooms, sliced
4 tablespoons unsalted butter, divided
1/2 large onion, diced
2 tablespoons dry mustard
1 1/2 teaspoons smoked paprika
1/2 teaspoon freshly ground black pepper
1/4 teaspoon cayenne pepper
1/4 teaspoon ground white pepper
3 cups half-and-half
1 large egg
16 ounces sharp Cheddar, grated
1/2 cup mayonnaise

Steps:

  • Place the quinoa in fine sieve or strainer and rinse thoroughly under cool running water and allow to drain.
  • Position a rack in the middle of the oven and heat to 350 degrees F.
  • Bring the quinoa, chicken stock and 2 teaspoons of the salt to a boil in a medium saucepan over high heat. Reduce the heat to low, stir, cover and cook for 15 minutes. When 5 minutes remain, add the broccoli right on top of the quinoa and replace the lid.
  • Heat a large, straight-sided saute pan over high heat and add the mushrooms and 1/3 cup of water. Cook until the mushrooms collapse, 2 to 3 minutes, then add 2 tablespoons of the butter and cook until browned. Remove to a large bowl.
  • Add the remaining 2 tablespoons of butter to the pan along with the onions and the remaining teaspoon of salt. Reduce the heat to low and sweat the onions until translucent, about 5 minutes. Then stir in the mustard, smoked paprika, black pepper, cayenne and white pepper and cook for 1 minute more. Add the half-and-half to the pan and heat until warm.
  • Whisk the egg in a medium bowl and temper with 1 cup of the hot liquid, continuing to whisk to prevent curdling. Then whisk the egg mixture back into the saute pan and add the cheese, stirring until melted.
  • Add the quinoa, broccoli, mayonnaise and the melted cheese mixture to the bowl with the mushrooms and stir to combine.
  • Pour the quinoa mixture into an ungreased 9-by-13-inch glass baking dish (see Cook's Note). Bake until set and just beginning to brown, about 45 minutes or until the internal temperature reaches 205 to 210 degrees F. Cool 10 minutes before serving.

3 cloves garlic, minced
4 grinds salt

1 cup quinoa
1 rotisserie chicken - skin and bones removed, meat cut into bite-size pieces
2 tablespoons olive oil
3 cups clean fresh spinach, roughly chopped
1 cup carrot matchsticks
½ cup roasted red peppers, drained and chopped
1 ½ (15 ounce) jars Alfredo sauce
1 teaspoon dried basil
2 tablespoons unsalted butter
¾ cup panko bread crumbs
¾ cup grated Parmesan cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Spray a casserole dish with cooking spray.
  • Combine vegetable broth, garlic, salt, and pepper in a pot over medium-high heat and bring to a boil. Add quinoa, cover, reduce heat, and simmer until tender, about 15 minutes. Let stand 5 minutes.
  • Heat olive oil in a skillet over medium-low heat. Add spinach, carrots, and red peppers and cook until barely tender, about 5 minutes.
  • Mix chicken, cooked quinoa, cooked vegetables, Alfredo sauce, and basil together in a bowl. Pour into the prepared casserole dish, patting it down with a spoon.
  • Melt butter in a small saucepan over medium heat and mix in bread crumbs until evenly coated. Remove from heat and stir in Parmesan cheese. Evenly distribute cheese crumbs over the top of the casserole.
  • Bake in the preheated oven until cooked through and lightly browned on top, 25 to 30 minutes.

2 green bell peppers, diced
1 onion, diced

Steps:

1 cup milk (I used 2%)
1 teaspoon poultry seasoning
1/2 cup flour
2 cups water, divided
1 cup uncooked quinoa, rinsed

1 pound boneless skinless chicken breasts
2 teaspoons seasoning (like Emeril's Essence or any basic blend you like)
1/4 cup shredded Gruyere cheese (any kind will work)
3 cups fresh broccoli florets

  • Sauce: Preheat the oven to 400 degrees and generously grease a 9×13 baking dish (seriously, be generous because it really really sticks to the sides). Bring the chicken broth and ½ cup milk to a low boil in a saucepan. Whisk the other ½ cup milk with the poultry seasoning and flour; add the mixture to the boiling liquid and whisk until a smooth creamy sauce forms. Assembly: In a large bowl, mix the sauce from step one, one cup water, quinoa, and bacon and stir to combine. Pour the mixture into the prepared baking dish. Slice the chicken breasts into thin strips and lay the chicken breasts strips over the top of the quinoa mixture. Sprinkle with the seasoning. Cover with foil and bake for 30 minutes. Broccoli: While the casserole is in the oven, place the broccoli in boiling water for 1 minute until it turns bright green and then run under cold water. Set aside. Notes You will know the quinoa is done when it is soft and looks as if it has popped open, with the germ of the kernel visible as a little spiral. If you want the chicken to get that browned exterior, leave the foil off for part of the cooking time, but be aware that the quinoa does take a lot longer to cook without the foil.

  • In a pan cook shallots and onions until tender and browned.
  • Add garlic and cook 2-3 mins, careful not to burn shallots.
  • Add onion mixture to cooked quinoa.
  • Cook mushrooms. I added some herbs de Provence to them.
  • Add mushrooms to quinoa.
  • Add salt and pepper to taste.
  • Beat eggs with a fork then mix with quinoa mixture. Add cheese and spinach.
  • When squash is done, remove from oven and scrape out of the skin. Mash a little with a fork then mix with beans then mix into quinoa.
  • Pour into baking dish and bake for 35-45 minutes.

2 tablespoons taco seasoning
3/4 cup water

Steps:

  • Preheat oven to 400.
  • combine all ingredients except cheese and sour cream in a 2 quart casserole.
  • cover with foil and bake for 30 minutes.
  • remove and stir.
  • bake for another 20 minutes or until all liquid has been absorbed and quinoa is tender.
  • cover with cheese and broil till cheese is melted (usually around 1 or 2 minutes).
  • serve with sour cream.

2 leeks, white part only, cleaned and sliced
2 cloves garlic, peeled and diced
1 green bell pepper, diced
1 red bell pepper, diced
4 eggs
3/4 cup low-fat milk
1 cup quinoa, cooked
1 1/2 cups grated smoked cheddar cheese
1 pound Peruvian potatoes, unpeeled, diced and steamed
Salt and pepper to taste
1 teaspoon thyme leaves

Steps:

  • Preheat oven to 350 degrees F. Oil a 2-quart gratin dish.
  • In a saute pan over medium heat, heat olive oil and add leeks. Saute, stirring, until they become tender, about 5 minutes. Add the garlic and continue to cook, stirring, for another minute. Add the peppers and cook, covered, for 5 to 10 more minutes, until peppers are tender, yet crisp. Remove pepper mixture for the heat.
  • In a bowl, beat eggs and milk. Stir in the quinoa and add cheese, potatoes, pepper mixture, salt, pepper and thyme. Pour into the prepared baking dish and bake for about 35 to 45 minutes, until the top is golden brown. Let mixture rest about 5 minutes before serving

1 cup quinoa
2 tablespoons olive oil, divided
3 skinless, boneless chicken breast halves, cut into bite-size pieces
1 onion, chopped
1 green bell pepper, chopped

1 (15 ounce) can black beans, rinsed and drained
1 ½ cups salsa
1 (6 ounce) can tomato paste
2 teaspoons garlic salt
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon ground black pepper

¼ cup sour cream
¼ cup shredded Cheddar cheese

Steps:

  • Bring chicken broth and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender and water has been absorbed, 15 to 20 minutes.
  • Heat 1 tablespoon oil in a skillet; cook and stir chicken until no longer pink in the center, about 10 minutes.
  • Heat 1 tablespoon oil in a separate large skillet over medium heat; cook and stir onion, green bell pepper, and jalapeno pepper until tender, 5 to 10 minutes. Mix quinoa, chicken, black beans, salsa, tomato paste, garlic salt, cumin, chili powder, black pepper, and oregano into onion mixture; cook, stirring occasionally, until casserole is heated through and thickened, 5 to 10 minutes. ¼ cup sunflower seed oil
½ cup chopped onion
2 tablespoons minced garlic
2 cups quinoa
2 tablespoons chicken bouillon
4 cups water
1 ½ teaspoons chopped fresh thyme
1 ½ teaspoons chopped fresh parsley
2 (5 ounce) cans chicken chunks, drained
2 cups Alfredo sauce
1 (10.75 ounce) can cream of chicken soup
¼ cup butter, cut into small pieces
¾ cup shredded Italian cheese blend, divided
1 ½ cups crushed pita chips
¼ cup shredded Parmesan cheese

Steps:

  • Heat sunflower oil in a skillet over medium heat; cook and stir onion and garlic until onion is slightly tender, about 5 minutes. Add quinoa and chicken bouillon; cook, stirring frequently, until quinoa is toasted, 5 to 8 minutes.
  • Pour water over quinoa mixture and bring to a boil; cover, reduce heat to medium-low, and simmer for 10 minutes. Stir thyme and parsley into quinoa mixture and simmer until water is absorbed, about 5 minutes. Remove skillet from heat and fluff quinoa with a fork.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Spread quinoa mixture into the bottom of a 9x13-inch baking dish. Sprinkle chicken over quinoa. Spoon Alfredo sauce and cream of chicken soup over chicken layer; top with butter pieces. Sprinkle 1/2 cup Italian cheese blend over entire mixture.
  • Bake in the preheated oven for 15 minutes. Stir mixture and flatten with the back of spoon or spatula; top with pita chips and remaining 1/4 cup Italian cheese blend. Bake until cheese is melted, about 15 minutes. Cool casserole for 5 minutes; top with Parmesan cheese.

¾ lb large shrimp, peeled and deveined
4 medium tomatoes, cut into chunks
1 jalapeno, seeded and chopped
½ C chopped sweet onion
2 cloves of garlic, minced
1 tbsp tomato paste
3 tbsp olive oil
2½ tsp cajun seasoning
Salt and pepper to taste
2½ C cooked quinoa
1 C shredded fontina cheese
Fresh cilantro for garnish

Steps:

  • Toss the shrimp and 1 tsp Cajun seasoning together, set aside. Toss the tomatoes with 1 tbsp olive oil and 1 tsp Cajun seasoning, set aside. Heat 1 tbsp olive oil over medium heat in a cast iron skillet (or any oven-safe skillet.) Cook the shrimp until opaque, about 2-3 minutes per side. Remove from the pan and set aside. Add the remaining 1 tbsp of olive oil to the pan along with the onion, jalapeno and garlic. Cook until the onion and jalapeno are tender, stirring often. Mix in the quinoa, tomato paste, ½ tsp Cajun seasoning and tomato chunks. Top with the shrimp and then sprinkle with the fontina cheese. Place in the oven and bake at 350 for 15 minutes. During the last 2 minutes, turn on the broiler to high and broil until the cheese is slightly brown and bubbly. Garnish with fresh cilantro.

QUINOA, BROCCOLI, AND CHEESE CASSEROLE

1 1/2 cups quinoa, rinsed in a fine sieve
2 tablespoons light olive oil
1 large onion, chopped
2 medium broccoli crowns, cut into bite-size pieces
1 cup grated sharp cheddar cheese or cheddar-style soy cheese
Salt and freshly ground pepper to taste

Steps:

  • Preheat the oven to 375°F.
  • Bring 3 cups water to a simmer in a medium saucepan. Stir in the quinoa, cover, and simmer gently until the water is absorbed, about 15 minutes.
  • Meanwhile, heat the oil in a large skillet. Add the onion and sauté until golden. Add the broccoli and about 1/4 cup water. Cover and steam until the broccoli is just a little more done than tender-crisp, 5 to 7 minutes.
  • In a mixing bowl, combine the cooked quinoa with the broccoli mixture and half of the cheese. Season with salt and pepper and stir well. Transfer the mixture to a lightly oiled, shallow 2-quart casserole. Sprinkle evenly with the remaining cheese. Bake until the top is golden and crisp, 20 to 25 minutes. Let the casserole stand for 5 minutes, and serve.

My father is on a low-carb diet, but I love tuna casserole so I decided to try to make it with quinoa. This is also kind of a recipe for quinoa risotto as that is how I cooked the quinoa.

1 tablespoon olive oil
2 cups sliced fresh mushrooms
2 onions, sliced
2 tablespoons butter
2 cups quinoa
6 cups chicken stock
salt to taste
1 (5 ounce) can tuna, drained
ground black pepper to taste
¼ cup butter
1 egg
2 tablespoons all-purpose flour
¼ cup bread crumbs, or as needed

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Heat olive oil in a large skillet over medium heat. Cook and stir mushrooms and onion in hot oil until softened, about 5 minutes. Remove from heat and set aside.
  • Melt 2 tablespoons of butter in a stockpot over medium heat. Cook quinoa in melted butter until lightly brown. Pour enough stock to just cover the quinoa. Allow the liquid to reduce to half. Continue this process until quinoa is soft and all stock is absorbed, about 30 minutes. Season with salt throughout process.
  • Stir mushrooms, onion, and tuna through the quinoa; season with black pepper. Stir 1/4 cup butter, the egg, and flour into the quinoa mixture; transfer to a casserole dish and top with bread crumbs to cover.
  • Bake until the top is golden brown and the center is hot, about 30 minutes.

1/4 cup olive oil
1 1/2 cups uncooked quinoa, rinsed and drained
2 1/4 cups water
Kosher salt, to taste
1 medium onion, chopped into 1/2-inch pieces
4 cloves garlic, finely chopped
Black pepper, to taste
Crushed red pepper, to taste
1 box (9 oz) frozen spinach, thawed, squeezed to drain
1 large tomato, chopped into 1/2-inch pieces
1 cup chopped pineapple
8 oz precooked ham, chopped into 1/2-inch pieces
3/4 cup ricotta cheese
1 1/2 cups shredded mozzarella cheese (6 oz)
3/4 cup shredded Parmesan cheese (3 oz)
1/2 cup whole milk

Steps:

  • Heat oven to 400°F.
  • In 4-quart saucepan, heat 2 tablespoons of the olive oil over medium heat. Add quinoa, and cook about 5 minutes, stirring constantly, until lightly toasted. Add water and a large pinch of salt. Heat to boiling over medium-high heat; cover, and reduce to a simmer. Cook 15 to 20 minutes or until all of the water is absorbed into the quinoa.
  • In 10-inch skillet, heat remaining 2 tablespoons oil over medium heat. Cook onion in oil 5 to 7 minutes, until soft and translucent. Add garlic, black pepper and crushed red pepper; cook 1 minute longer. Add spinach, tomato, pineapple and ham; cook until heated through, stirring constantly. Salt to taste.
  • In small bowl or measuring cup, mix ricotta, 1 cup of the mozzarella, 1/2 cup of the Parmesan, and the milk.
  • Add the quinoa and cheese mixture to the skillet with the onion mixture, and fold together the ingredients. Taste and adjust seasonings, if desired. Transfer to 13x9-inch (3-quart) casserole, and spread evenly.
  • Top with remaining mozzarella and Parmesan cheese. Cover with foil, and bake 20 minutes. Remove foil and, if desired, place under the broiler for a few minutes until cheese browns.
  • Serve immediately, or recover with foil and keep warm in oven until ready to serve.
