- In a large saucepan, cook beef and onion over medium heat until the meat is no longer pink; drain. Add tomato juice, vegetables, water and bouillon; bring to a boil. Add pasta. Cook, uncovered, until pasta is tender, 6-8 minutes, stirring frequently. Add salt and pepper.

SIMPLE TOMATO SOUP
This is my go-to tomato soup recipe. It's so easy and delicious. It's easily made vegan (if you use margarine instead of butter or 2 tablespoons of olive oil), ready in 30 minutes, and I give leftovers to my kids for lunch. If you like, you can add cream, but my family likes it the way it is. I usually serve it with rosemary bread for dunking.

Steps:
- Heat butter and olive oil in a large saucepan over medium-low heat and cook onion and garlic until onion is soft and translucent, about 5 minutes. Add tomatoes, water, sugar, salt, pepper, red pepper flakes, celery seed, and oregano. Bring to a boil. Reduce heat, cover, and simmer for 15 minutes.
- Remove from heat and puree with an immersion blender. Reheat soup until warm and season with more salt and pepper if desired.

- Melt the butter in a saucepan over medium high heat.
- Add onion, carrot and celery, saute 4 minutes or until tender.
- Add broth, basil, pepper and tomatoes, bring to boil, reduce heat, simmer 15 minutes.
- Stir in 1/2 cup pasta.
- Remove from heat, let stand 5 minutes.
- Place half of the tomato mixture in a blender and process until smooth.
- Pour pureed soup into a large bowl, repeat procedure with remaining tomato mixture.
- Return pureed soup to pan; stir in remaining pasta and milk.
- Cook over medium high heat 2 minutes or until thoroughly heated, stirring frequently, do not boil.

TOMATO ALPHABET SOUP
A taste of nostalgia can be comforting. Inspired by the childhood favorite, canned tomato soup, this homemade version yields a lush and satisfying meal culled from kitchen staples. The process of separating your canned tomatoes from their juices, cooking them until caramelized and enhancing their strength with concentrated tomato paste helps develop deep roasted tomato flavor. If you can't find alphabet pasta, any other small pasta will be delicious.

- Heat oil and 1 tablespoon butter in a heavy pot over medium heat. Stir in onion and garlic, season with salt and pepper, and cook, stirring often, until onions are softened, about 5 minutes.
- Stir in carrot and celery, and cook, stirring occasionally, until just tender, about 10 minutes.
- While the vegetables cook, strain the tomatoes over a bowl, separating the juice from the whole tomatoes, then squeeze the tomatoes over the liquid. Add the squeezed tomatoes and the tomato paste to the pot and cook, stirring frequently, until tomatoes start to caramelize, about 15 minutes.
- Meanwhile, cook the pasta in salted boiling water according to packing instructions. Reserve 1 cup of cooking liquid, strain, then return pasta to the pasta pot and gently stir in remaining 2 tablespoons butter; season to taste with salt and pepper and set aside.
- Add the tomato juices from the bowl and 2 cups water to the soup pot, stirring to scrape up any caramelized bits. Bring to a gentle simmer and cook, partly covered, until the vegetables are very tender, 10 to 15 minutes.
- Using an immersion or countertop blender, pureé the soup until very smooth. (If using a countertop blender, blend in batches with a kitchen towel over the lid of the blender.) Stir in pasta water as needed to thin soup to desired consistency. Stir in buttered alphabets and adjust seasoning. Divide among soup bowls.

QUICK TOMATO SOUP WITH GRILLED CHEESE
When done well, this age-old combination can be exactly what you want. Here, the cooking is as easy as the eating: While you get the soup started in a pot with a can of tomatoes and little more than onion and butter (in the style of Marcella Hazan's famous tomato sauce), you assemble and pan-fry the sandwiches. The particular joy of these lies in their soft, quiet flavors: A thin layer of mayonnaise spread on the inside of the bread heats with the mozzarella, a mild cheese that lets you taste the bread and butter as they are. With a filling this rich and gooey, you want a delicate sweet enriched loaf like brioche or milk bread.

- Make the soup: Dump the canned tomatoes and their juices into a medium pot and using your hands, tear into coarse chunks. Swish the broth in the empty tomato can and add to the pot.
- Stir in the onion, butter, oregano and sugar and season generously with salt and pepper. Turn the heat to high and bring to a simmer. Reduce the heat to medium-low, cover and continue simmering, stirring occasionally, until the onion is tender and the tomatoes have broken down, 15 to 20 minutes.
- Meanwhile, make the sandwiches: Spread a thin layer of mayonnaise on one side of each slice of bread and evenly sprinkle the cheese and a little oregano on the mayonnaise side of 4 slices. Top with the cheeseless slices, mayonnaise-side down.
- Melt 1 tablespoon butter in a large skillet over medium. Add the sandwiches and cook until golden brown on the bottoms, 2 to 3 minutes. Melt the remaining tablespoon of butter in the pan, then flip the sandwiches with a spatula, move them around to coat with the butter and cook until the other side is golden brown and the cheese is melted, 1 to 2 minutes. Turn heat to lowest setting to keep sandwiches warm.
- Carefully purée the tomato soup using a blender until smooth and creamy, adding more broth if needed to loosen to your desired consistency. Season with salt and pepper. Transfer the grilled cheeses to a cutting board and cut each in half diagonally. Serve alongside the soup.
HEALTHY ALPHABET SOUP
A delicious real alphabet soup which is much more nutritionally sound, as well as tastier, than the canned stuff. Recipe from "Stealth Health" Mar/99. In the ingredients, "Dried Italian herb seasoning is just regular dried Italian herb.

- Combine first five ingredients; boil.
- Add next four ingredients; boil; reduce heat, cover and simmer stirring occasionally for 1 1/2 hours until beans are tender.
- Using a slotted spoon, remove most of the beans and transfer remaining liquid to a blender; process till smooth.
- Return mixture and beans back to the pot; Stir in alphabet pasta.
- Boil then reduce hear; cover and simmer 8 minutes until pasta is tender but firm.
- Yield: 6 1 1/2 cup servings.
