QUICK, SPICY LEEK AND SHRIMP STIR-FRY



Quick, Spicy Leek and Shrimp Stir-Fry image

Searing leeks brings out their crunchy freshness. If you have a large wok, you can use it here; otherwise, a large pan works well. Just be sure to have everything ready to add when needed and let the pan get super hot again between additions. If you have some fresh ginger on hand, toss in a little, minced, when you add the shrimp.

2 pounds leeks, preferably smaller, thinner ones
3 tablespoons vegetable oil
Kosher salt and freshly ground black pepper
1/4 to 1/2 teaspoon crushed red pepper flakes
8 ounces peeled and deveined medium shrimp (16 to 20 count), halved lengthwise
4 cloves garlic, thinly sliced
Serving suggestion: steamed white rice

Steps:

  • Trim the ends and dark green tops from the leeks and discard. Cut the leeks in half lengthwise, then crosswise into 1-inch pieces. Immerse them in a bowl of cold water, swish to remove any grit and lift them out into a colander. Clean the bowl, change the water and repeat until the water remains clear. You should have 6 cups leeks. Once they are all in the colander, toss them a bit with your fingers to separate the leaves.
  • Heat a large skillet over high heat until hot. Add 1 tablespoon of the oil and swirl to coat the bottom of the pan. Add half the leeks and a generous pinch each salt and pepper. Spread the leeks into a single layer and cook, without stirring, until slightly charred, about 1 minute. Stir in a small pinch pepper flakes and continue cooking, without stirring, 1 minute. Toss and stir until the leeks just start to wilt, about 1 more minute. Transfer to a bowl. Repeat with 1 tablespoon of the oil, the remaining leeks, a generous pinch each salt and pepper and another small pinch pepper flakes, adding the leeks to the bowl when done.
  • Heat the remaining tablespoon of oil in the skillet (let it get really hot). Add the shrimp, garlic and another pinch pepper flakes (or to taste). Season with salt and pepper, and cook, tossing, until the shrimp just starts to turn pink in spots, less than 1 minute. Add the leeks and toss to combine; the shrimp should now be pink. Serve immediately over rice if using.

1/4 cup tomato sauce
2 tablespoons minced fresh basil or 2 teaspoons dried basil
2 tablespoons red wine vinegar
3 garlic cloves, minced
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon cayenne pepper
1 pound uncooked medium shrimp, peeled and deveined
1-1/2 cups pineapple chunks
1 medium onion, cut into wedges

Steps:

  • In a large resealable plastic bag, combine the first seven ingredients. Add the shrimp; seal bag and turn to coat. Refrigerate for up to 2 hours., Drain and discard marinade. On eight metal or soaked wooden skewers, alternately thread the shrimp, pineapple and onion. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill kabobs, covered, over medium heat or broil 4 in. from the heat for 2-3 minutes on each side or until shrimp turn pink.

Number Of Ingredients 10

2 lb extra large raw shrimp, peeled and deveined
2 large shallots, finely chopped
5 clove garlic, finely chopped
2 Tbsp olive oil
1 tsp garlic salt (can be adjusted according to taste)
1 tsp sugar
1/2 tsp crushed red chili flakes
1/2 tsp pepper, finely ground
2 Tbsp oyster sauce (in the asian aisle at grocery store)
1 lb fresh broccoli (chopped) or green beans

Steps:

  • 1. Mix all ingredients by hand in a large mixing bowl. Set aside.
  • 2. Add 1 tsp of olive oil to a wok or heavy non-stick pan. Heat over high heat until oil is very hot.
  • 3. Add shrimp and stir quickly otherwise shallots and garlic will burn. Cook until shrimp are pink in color and firm to the touch. Approximately 3-4 minutes depending on how large your shrimp are. Remove from heat and set aside.
  • 4. Add 1 tsp of olive oil to remnants in pan. Add fresh broccoli pieces or green beans and stir fry until bright green in color and remove from heat. Serve with jasmine rice or couscous.

2 pounds shrimp
6 teaspoons coarse salt
2 tablespoons peanut oil
1 clove garlic, minced (green part removed)
2 tablespoons chopped fresh ginger
2 scallions, chopped, including green part
1 teaspoon hot pepper flakes
1/2 cup dry white wine

Steps:

  • Peel and devein shrimp, sprinkle with salt. Rinse, drain and repeat two more times. Blot dry with paper towels.
  • Heat the oil in a wok or large skillet. Stir-fry the garlic, ginger and scallions for 1 to 2 minutes, then add the shrimp. Stir-fry until it turns pink. Add the hot pepper flakes and the wine and cook, stirring, for a minute or two more. Be careful not to overcook the shrimp. Serve immediately.
