The gorgeous spice blend in this recipe takes good old shepherd's pie to the next level

2 red onions
1 thumb-sized piece of fresh ginger
2 cloves of garlic
1 red capsicum
olive oil
500 g lamb mince
1 heaped tablespoon garam masala
1 cinnamon stick
4 cardamon pods, (podded)
1 x 400g tin tomoatoes
1 kg potatoes
sea salt
freshly ground black pepper
unsalted butter
semi-skimmed milk
100 g frozen peas

Steps:

  • 1. Preheat the oven to 200°C. Peel and finely chop the onions, ginger and garlic, then deseed and finely slice the capsicum. Heat 1 tablespoon of olive oil in a large frying pan over a high heat. Add the mince, garam masala, cinnamon stick and cardamon pods and fry for around 5 minutes, or until cooked through and lightly browned, stirring regularly.
  • 2. Remove to a bowl and set aside, then place the pan back on the heat. Turn the heat down to medium and cook the onion, ginger and garlic for around 5 minutes, or until softened, then add the capsicum for a further 5 minutes. Tip in the tinned tomatoes, breaking them up with a spoon as you go, then pour in half a tin's worth of water and stir well. Turn the heat up to high and bring to the boil, then reduce to a low heat, stir the mince back into the pan and simmer for 25 minutes, or until thickened, stirring occasionally. 3. Meanwhile, peel the potatoes, cutting any larger ones into quarters and place in a large saucepan. Cover with water, add a good pinch of salt and cook for 20 minutes, or until tender. 4. Drain in a colander and leave to steam dry, then return the potatoes to the empty pan. Add a knob of butter, a splash of milk, a good pinch of salt and pepper, then mash well. Stir the peas through the mince, season with salt and pepper, then remove the cinnamon stick and transfer to an ovenproof baking dish (roughly 20 x 25cm). 5. Evenly spoon the mash over the top, smooth the surface slightly, then use a fork to fluff it up - this will give you great texture once it's cooked. Drizzle the pie with a little olive oil and season lightly. Cook in the oven for around 30 minutes, or until golden and bubbling.

1 tub (24 ounces) refrigerated cheddar mashed potatoes
1 pound lean ground beef (90% lean)
1 envelope mushroom gravy mix
1-1/2 cups frozen mixed vegetables
1 cup water
1/8 teaspoon pepper

  • Heat potatoes according to package directions., Meanwhile, in a large skillet, cook beef over medium heat for 6-8 minutes or until no longer pink, breaking into crumbles; drain. Stir in gravy mix. Add vegetables and water; bring to boil. Reduce heat; simmer until heated through, stirring occasionally. Transfer to a 9-in. square baking pan., Spread potatoes over top; sprinkle with pepper. Broil 4-6 in. from the heat for 10-15 minutes or until golden brown.

1 pound ground beef
1 medium onion, chopped
1 can (14-1/2 ounces) diced tomatoes, undrained

500g pack minced lamb
3 tbsp Morroccan spice mix (we used Schwartz's)
400g can chopped tomato with garlic and onion
750g cooked potato

Steps:

  • Heat 1 tbsp olive oil in a large non-stick frying pan, then fry the lamb and half the spice mix over a high heat for 8 mins until browned. Tip in the tomatoes, then season and simmer for 20 mins until thick. Meanwhile, crush the potatoes with the remaining oil and spice mix.
  • Heat the grill to high. Tip the hot sauce into a gratin dish and scatter with the potatoes. The pie can now be cooled and frozen for up to a month. Grill for 8 mins until the potatoes are crispy and golden.

This is no where near authentic, but as the title says, it is quick and easy. We all liked it, especially the kids, two of which, would hardly eat anything. This was great for one of those hurry-up meals. I got this from an old Betty Crocker cookbook. Prep time includes browning the meat.

instant mashed potatoes
2 tablespoons parsley flakes
2 cups cubed cooked lamb, beef or 2 cups veal
1/4 cup chopped onion
2 cups cooked vegetables (peas, carrots, or corn)
2 cups gravy (2 10 3/4 oz. cans of gravy can be used)

Steps:

  • Heat oven to 350 degrees.
  • Prepare instant mashed potatoes for 8 servings, as directed on package except-stir in parsley flakes; set aside.
  • In ungreased 3-quart casserole, stir together remaining ingredients.
  • Mound potatoes on meat mixture.
  • Bake uncovered 30 minutes or until potatoes brown slightly.

3 tablespoons moroccan seasoning
400 g tomatoes
2 garlic cloves
1 onion
750 g cooked potatoes

Steps:

  • Heat 1tbsp olive oil in a large frying pan, then fry the lamb, onion and garlic along with half the spice for 8 minutes till browned. Tip in the tomatoes, then season and simmer for 20 minutes until thick.
  • Meanwhile, crush the potatoes with the rest of the oil and spice.
  • Heat the grill to high. Tip the hot sauce into a gratin dish and scatter with the potatoes.
  • If making to freeze, cool pie and freeze. Grill for 8 minutes until the potatoes are golden and crispy.

A low-fat, superhealthy shepherd's pie that can be popped in the freezer or enjoyed on the day

500g pack lean minced lamb
1 onion , chopped
2 carrots , diced
2 tbsp garam masala
200ml hot stock (lamb, beef or chicken)
200g frozen peas
800g potatoes , diced
1 tsp turmeric
small bunch coriander , roughly chopped
juice half lemon , plus wedges to serve

Steps:

  • In a large non-stick frying pan, cook the lamb, onion and carrots, stirring often, until the lamb is browned and veg is starting to soften, about 8 mins. Add the garam masala and some seasoning and cook for a further 2 mins until fragrant. Pour in the stock, bring to the boil, tip in the peas and cook for a further 2 mins until the peas are cooked and most of the liquid has evaporated.
  • Meanwhile, cook potatoes in a large pan of salted water until just tender, about 8 mins. Drain well, return to the pan and gently stir in turmeric and coriander - try not to break up the potatoes too much.
  • Heat oven to 200C/180C fan/gas 6. Transfer the mince to a baking dish and top with the turmeric potatoes. Squeeze over the lemon juice, then bake for 30-35 mins until potatoes are golden. Serve immediately with extra lemon wedges on the side.

NO-FUSS SHEPHERD'S PIE



No-fuss shepherd's pie image

We've got some lovely twists on shepherd's pie on the site, but we were missing a definitive version of this classic family recipe - here it is!

1 tbsp sunflower oil
1 large onion, chopped
2-3 medium carrots, chopped
500g pack lamb mince
2 tbsp tomato purée
large splash Worcestershire sauce
500ml beef stock
900g potatoes, cut into chunks
85g butter
3 tbsp milk

Steps:

  • Heat 1 tbsp sunflower oil in a medium saucepan, then soften 1 chopped onion and 2-3 chopped carrots for a few mins.
  • When soft, turn up the heat, crumble in 500g lamb mince and brown, tipping off any excess fat.
  • Add 2 tbsp tomato purée and a large splash of Worcestershire sauce, then fry for a few mins.
  • Pour over 500ml beef stock, bring to a simmer, then cover and cook for 40 mins, uncovering halfway.
  • Meanwhile, heat the oven to 180C/fan 160C/gas 4, then make the mash. Boil the 900g potato, cut into chunks, in salted water for 10-15 mins until tender. Drain, then mash with 85g butter and 3 tbsp milk.
  • Put the mince into an ovenproof dish, top with the mash and ruffle with a fork. The pie can now be chilled and frozen for up to a month.
  • Bake for 20-25 mins until the top is starting to colour and the mince is bubbling through at the edges. (To bake from frozen, cook at 160C/fan 140C/gas 3 for 1 hr-1 hr 20 mins until piping hot in the centre. Flash under the grill to brown, if you like.)
  • Leave to stand for 5 mins before serving.
