Salt and freshly ground black pepper
3/4 cup quick grits
1 cup milk
1/2 cup shredded mozzarella
1/2 cup shredded Cheddar

Steps:

  • In a saucepot over medium-high heat, add 3 cups water and a pinch of salt. Bring the water to a boil, and then stir in the grits and milk. Raise the heat to bring to a boil again, and then lower to a simmer and cook for about 4 minutes. When the grits begin to thicken but there is still plenty of moisture left, add the mozzarella and Cheddar along with a few grinds of pepper. Stir to melt the cheese, taste and season with salt, if needed. Serve warm.

6 cups chicken stock or 6 cups low sodium chicken broth
2 cups heavy cream
4 tablespoons unsalted butter
2 large garlic cloves, minced
kosher salt
fresh ground pepper
2 cups quick-cooking grits
Tabasco sauce

Steps:

  • In a large saucepan, combine the stock, cream, butter and garlic. Add 2 teaspoons of salt and 1/4 teaspoon of pepper and bring to a boil. Slowly whisk in the grits and cook over low heat, whisking often, until thick and completely smooth, about 10 minutes.
  • Season with salt, pepper and Tabasco and serve.

1 cup old-fashioned grits (not instant or quick-cooking)
2 tablespoons unsalted butter, cut into pieces
Freshly ground pepper

Steps:

  • Combine 4 cups water and 1 teaspoon salt in a medium saucepan and bring to a simmer over medium heat. Gradually add the grits, whisking constantly. Reduce the heat to medium low and cook, stirring occasionally with a wooden spoon, until tender, about 20 minutes. If the grits seem too thick, thin with water, 1 to 2 tablespoons at a time.
  • Stir in the butter and season with pepper. Remove from the heat and cover to keep warm.

1/2 cup quaker oats quick-cooking grits
4 ounces Velveeta cheese, cubed
1 dash garlic powder (optional)
paprika
salt

Steps:

  • Boil water.
  • Stir in grits and return to a boil.
  • Reduce heat to medium-low.
  • Cook 4-5 minutes or until thick, stirring occasionally.
  • Add cheese and garlic powder.
  • Cook 2-3 minutes, stirring occasionally until cheese is melted.
  • Add salt.
  • Sprinkle with paprika.
