SALMON WITH COUSCOUS PILAF

This delicious one-pan meal is convenient and makes dishwashing easy.

Number Of Ingredients 9

1 pound carrots (about 6 medium), quartered lengthwise and sliced 1/8 inch thick diagonally
1 cup uncooked couscous
1/2 cup slivered almonds
1/2 cup raisins
1/4 cup chopped fresh mint
1 tablespoon olive oil
Coarse salt and ground pepper
4 skinless salmon fillets (6 to 8 ounces each)
Lemon wedges, for serving

Steps:

  • Preheat oven to 450 degrees. In a 9-by-13-inch baking pan, mix together carrots, couscous, almonds, raisins, mint, oil, 1 1/4 cups water, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper.
  • Place salmon fillets on top of couscous mixture; season generously with salt and pepper. Cover pan with foil; bake until fish is opaque throughout, 30 to 35 minutes.
  • Transfer fish to plates. Fluff couscous with a fork; serve with fish and lemon wedges.

BAKED SALMON WITH MEYER LEMON, OLIVES AND OREGANO



Baked Salmon with Meyer Lemon, Olives and Oregano image

Number Of Ingredients 6

Extra-virgin olive oil, for drizzling
One 2-pound side of salmon, about 1 1/2 inches thick with skin on (preferably wild-caught)
Kosher salt and freshly ground black pepper
2 large Meyer lemons, 1 thinly sliced and 1 cut into wedges
8 to 9 large green olives, gently smashed flat
4 to 5 sprigs oregano

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with parchment.
  • Drizzle the parchment with a little olive oil and place the salmon, skin-side down, on the oiled paper. Drizzle a little more oil over the salmon. Next, sprinkle with a good amount of salt and pepper. Top the salmon with a layer of the sliced lemons, tucking some under the salmon, as well. Then add the olives and oregano sprigs.
  • Baked until the salmon is cooked to your preferred doneness, 25 to 30 minutes.
  • Serve immediately with the lemon wedges.

This secret weapon for authentic Middle Eastern fare usually takes weeks to make, but if you use finely sliced thin-skinned Meyer lemons, you can re-create the unique flavor and texture overnight. Finely chop and add to vinaigrettes, tagines, and marinades.

3 Meyer lemons (8 ounces), plus 3 tablespoons fresh lemon juice
1 tablespoon kosher salt
3 tablespoons sugar

Steps:

  • Wash lemons in hot water (to remove any waxy coating); halve them lengthwise and slice very thinly crosswise. Combine with salt, sugar, and lemon juice. Cover with plastic wrap; let stand at room temperature 1 day, then transfer to a jar and store in the fridge for up to 2 weeks.
