- In a large bowl, combine eggs, butter or margarine, flour, vanilla, sugar, milk and coconut. Mix well. Pour into 10 inch deep dish pie plate. Bake at 325 for 30 to 40 minutes. Crust will form on the bottom.
QUICK NO-CRUST ITALIAN SPINACH PIE
This is a delicious no-crust savory pie that goes together quickly, and is very satisfying. The oregano and roasted red pepper give it a wonderful flavor. It is a good high-protien, low-carb alternative to quiche or to the Bisquick version of no-crust vegetable pies. The original recipe called for 40 minutes baking time, but it took a full hour in my oven. One pie serves 4 as a main dish (only 320 calories per serving!), or 8 as a side dish.

- Preheat oven to 350°F.
- Spray a 9-inch pie plate with cooking oil spray.
- Use a strainer or colander to squeeze all the excess liquid out of the thawed, drained spinach.
- Combine all ingredients, and mix until well blended.
- Pour mixture into pie plate.
- Bake 40 to 60 minutes, or until center is set.

- Place flour and salt in a bowl. Mix.
- Measure oil and milk in a measuring cup. Stir slightly with a fork.

QUICK QUICHE OR PIE CRUST
This recipe was given to me over 20 years ago by my neighbor. It's a wonderfully easy crust that you pat in the pan. No rolling out is necessary. Originally it was to be mixed with a pastry cutter, but I have done it sucessfully for years with a food processor. I prefer it mostly for quiche, but have also used it for pies when in a pinch. When making this for a quiche, I have been known to add whatever spices that might go along with it, such as chili powder, garlic, nutmeg and such. Be sure that the shortening is at room temperature! - Place all ingredients in food processor, and pulse slowly until mixture is the size of peas.
- Slowly add in, 1 Tbls. at a time, cold water until you can form it into a ball.
- Pat evenly into a 9 inch pie or quiche pan.

QUICK & EASY ALMOND PIE CRUST
Yield 1 9 inch crust

Steps:
- In a food processor, blend all ingredients until dough clumps together. Chill 15 minutes. Roll out the dough on wax paper dusted with either cornstarch or tapioca flour. Transfer to a 9-inch tart pan and press in lightly. Chill again till firm, and fill. Bake as directed in your pie recipe; keeping an eye on the edges of the crust. If it starts to brown too quickly, cover the edges with strips of foil. Also make sure your oven rack is in the center of the oven, and not close to the top.
