Cheesy and herby potatoes. I like Desiree potatoes for this. I like my potatoes really crunchy, so cook them for longer.

1 large potato
olive oil, to grease
1 pinch pepper
125 ml Italian salad dressing
50 g grated parmesan cheese

Steps:

  • Preheat oven to 220C/425F/Gas7/ Clean potatoes, dry and cut into wedges. Arrange in lightly greased ovenproof dish.
  • Bake for 20 - 25 minutes, or until tender. remove from oven. Sprinkle with pepper. Preheat the grill. Line a baking tray with foil and lightly grease.
  • Transfer the wedges to baking tray. Lightly brush with half the salad dressing. Sprinkle over half Parmesan cheese. Grill wedges for 2 minutes, or until golden brown.
  • Turn potatoes over. Brush with salad dressing. Sprinkle over the remaining Parmesan. Grill wedges for 2 more minutes or until golden brown.

3 large red potatoes
1/4 teaspoon pepper
1/2 cup Italian salad dressing
1/2 cup parmesan cheese, grated
cooking spray

Steps:

  • Preheat broiler.
  • Cut unpeeled potatoes into wedges.
  • Arrange in a microwave baking dish.
  • Microwave on HIGH until tender, about 10 min.
  • Cool for 2-3 minutes and sprinkle with pepper.
  • Line baking sheet with foil and spray with cooking spray.
  • Place potatoes on baking sheet.
  • Brush 1/4 cup salad dressing on potatoes; sprinkle with 1/4 cup parmesean.
  • Broil until golden brown, about 2 minutes.
  • Turn potatoes over.
  • Brush with remaining salad dressing and sprinkle with remaining parmesean.
  • Broil for 2 minutes, or until golden brown.

2 potatoes large boiling (about 1 lb.)
2 tablespoons butter or margarine
1 teaspoon sage dried, crushed
1/8 teaspoon black pepper
2 to 3 tablespoons Parmesan cheese grated
dash onion salt (optional)

Steps:

  • Preheat oven to 450°. Coat a baking sheet with non-stick vegetable spray set aside.Peel potatoes if desired. Cut into 1/4 -inch slices, then cut each into 1/4-inch strips. Place in a medium bowl or pie plate.In a small saucepan, melt butter. Stir in sage and pepper. Pour over potatoes, tossing until coated. Spread in a single layer on baking sheet.Bake for 18 to 20 minutes or until browned and tender, stirring occasionally for even browning. Sprinkle Parmesan cheese and, if desired, onion salt over potatoes. Bake 1 minute longer or until cheese is bubbly. Drain on paper towels if desired. Serve immediately.
