We have been trying French onion soup in restaurants for years and my family and friends agree none can compare to my recipe for taste and simplicity of preparation.

½ cup unsalted butter
2 tablespoons olive oil
4 cups sliced onions
4 (10.5 ounce) cans beef broth
2 tablespoons dry sherry
1 teaspoon dried thyme
1 pinch salt and pepper to taste
4 slices French bread
4 slices provolone cheese
2 slices Swiss cheese, diced
¼ cup grated Parmesan cheese

Steps:

  • Melt butter with olive oil in an 8 quart stock pot on medium heat. Add onions and continually stir until tender and translucent. Do not brown the onions.
  • Add beef broth, sherry and thyme. Season with salt and pepper, and simmer for 30 minutes.
  • Heat the oven broiler.
  • Ladle soup into oven safe serving bowls and place one slice of bread on top of each (bread may be broken into pieces if you prefer). Layer each slice of bread with a slice of provolone, 1/2 slice diced Swiss and 1 tablespoon Parmesan cheese. Place bowls on cookie sheet and broil in the preheated oven until cheese bubbles and browns slightly.

This is a simple and quick low carb meal that can be prepared in minutes! Is is so simple that it really isn't much of a recipe; however, it is a great idea for a low carb substitute for regular French Onion Soup, which is usually made with bread. Feel free to substitute the listed cheeses for Parmesan Cheese, which is a lower-fat cheese, or to substitute a handful of regular sliced mushrooms for the Portobello Mushroom Slice. Please note that this recipe, as written, serves one, but it can easily be adapted to serve as many as you want.

1 (10 3/4 ounce) can campbell French onion soup
1 (10 3/4 ounce) can water
1 -2 slice provolone cheese or 1 -2 slice gruyere cheese
1 slice portabella mushroom

Steps:

  • Preheat oven to Broil.
  • Heat canned soup in microwave in microwave/oven-ready bowl, following directions on can.
  • When soup is piping hot, add mushroom slice on top of soup, then place one to two slices of cheese on top of mushroom slice.
  • Place bowl on cookie sheet.
  • Place under broiler for a few minutes, until cheese is browned and slightly bubbling.
  • Remove very carefully from oven, and serve.

This soup is simple to make after work. My husband thinks it is as good if not better than any we've ever had in a restaurant.

2 (14 ounce) cans beef broth
1 (10 1/2 ounce) can beef consomme
2 large onions, sliced 1/4-inch thick
2 tablespoons butter
2 pressed garlic cloves
1 dash Worcestershire sauce
1 cup shredded swiss cheese
4 slices toasted French bread

Steps:

  • Place onions and butter in saucepan.
  • Sauté on medium heat until onions are tender.
  • Add garlic and sauté 1-2 minutes (don't let garlic burn).
  • Add beef broth, consomme, and Woschershire sauce.
  • Bring to a boil for 1 minute.
  • Take ovenproof bowls (I use over-sized coffee mugs) and place 0.125 cup of cheese in bottom of each bowl.
  • Fill bowl with soup leaving room at the top.
  • Place toasted French bread on top.
  • Top with 0.125 cup Swiss cheese.
  • Place under broiler until cheese is bubbly.
  • Serve immediately.
  • Caution--bowls will be hot!

1 tablespoon olive or canola oil
4 medium onions (about 1 1/2 lb), sliced (8 cups)
1 carton (32 oz) reduced-sodium beef broth (4 cups)
1/4 teaspoon dried thyme leaves
1/4 teaspoon pepper
1 dried bay leaf
2 teaspoons reduced-sodium soy sauce
8 slices (1/2 inch thick) baguette French bread
1/4 cup shredded fresh Parmesan cheese (1 oz)

Steps:

  • In 4-quart nonstick Dutch oven, heat oil over medium heat. Add onions; cook uncovered 10 minutes, stirring frequently. Reduce heat to medium-low. Cook 35 to 40 minutes longer, stirring frequently, until onions are light golden brown (onions will shrink during cooking).
  • Stir in broth, thyme, pepper, bay leaf and soy sauce. Heat to boiling. Reduce heat to low; cover and simmer 15 minutes. Remove bay leaf.
  • Meanwhile, set oven control to broil. Place baguette slices on ungreased cookie sheet. Sprinkle cheese evenly on slices. Broil with tops 4 to 6 inches from heat 30 to 60 seconds or until cheese is melted. Watch carefully so cheese does not burn.
  • To serve, ladle soup into bowls. Serve with baguette slices.
