This miso soup is a spin on the classic with shiitake, tofu, and scallions.

1 tablespoon canola oil, or more as needed
4 large shiitake mushrooms, stemmed and thinly sliced
1 bunch fresh chives, chopped
1 clove garlic, peeled and sliced
½ (14 ounce) package firm tofu, cubed
1 (14 ounce) can low-sodium beef broth
1 (14 ounce) can low-sodium chicken broth
2 ½ tablespoons white miso paste

Steps:

  • Heat oil in a medium saucepan over medium-high heat. Add mushrooms, chives, and garlic slices; cook for 1 minute. Add tofu and cook for 2 minutes. Pour in beef broth and chicken broth, then stir in miso paste until dissolved.
  • Bring to a boil. Reduce heat to a simmer and cook for 10 minutes. Ladle into bowls to serve.

1 tablespoon olive oil
1 onion, chopped
2 stalks celery, chopped
⅓ cup packed baby spinach, chopped
4 cups water
1 (8 ounce) container medium-firm tofu, diced into small cubes
⅔ teaspoon salt
5 tablespoons white miso paste
ground black pepper to taste
chili powder to taste

Steps:

  • Heat olive oil in a saucepan over medium heat. Add onion, celery, and spinach. Cook and stir until just softened, about 3 minutes. Pour in water; add tofu and salt. Reduce heat to medium-low; simmer until heated through, about 8 minutes.
  • Stir in miso; simmer until dissolved, about 5 minutes. Season with ground black pepper and chili powder.

EASY QUICK MISO SOUP



Easy Quick Miso Soup image

Really tasty. Great hangover cure. Super fast and easy to make. Add some mushrooms if you like

1 Tbsp dried wakame sea weed
4 c water
2 Tbsp instant dashi granules
1/2 c cubed firm tofu
1/2 c white miso paste
2 scallions chopped

Steps:

  • 1. Place the Wakame in a small bowl and cover it with hot water and set aside.
  • 2. Add the water to a stock pot. Bring to a boil whisking in the instant Dashi. Turn heat to medium and add the tofu. Cook 1 minutes. Scoop out about 1/2 cup of the soup and mix it with the miso paste until it is smooth.
  • 3. Add the Miso mixture to the soup. Cook 1 minute. Drain the Wakame and add to the soup. Cook 2 minutes.
  • 4. Ladle into bowls and add the scallions.

1 scallion, thinly sliced
2 tablespoons finely diced silken tofu
1 tablespoon white miso
Smoked Salt Furikake (click here for recipe), for serving

Steps:

  • Preparation Combine all ingredients in a travel mug. To serve, pour 8 oz. boiling water into the cup and stir until miso is well blended. Let sit 2 minutes before eating.
