All the flavor of a classic reuben sandwich in one comforting casserole! Layers of corned beef, sauerkraut, rye bread and dressing make this one cheesy meal you will love.

2 1/2 cups cubed rye bread
1/4 cup melted butter
1 lb corned beef (leftover or deli meat is fine)
16 oz sauerkraut (rinsed and drained thoroughly)
3/4 cup Thousand Island Dressing (or Russian Dressing)
2 cups shredded swiss cheese

Steps:

  • Preheat oven to 400˚F.
  • Coat a 13x9 inch baking dish with cooking spray and set aside.
  • Place the bread in a large bowl and pour the butter over top. Toss to coat.
  • Arrange half the bread in an even layer on the bottom of the baking dish.
  • Layer 1/2 the corned beef on top of the bread and top with an even layer of the sauerkraut.
  • Pour the dressing over the sauerkraut and spread to coat. Top with the remaining corned beef.
  • Sprinkle 3/4 of the cheese over the corned beef and top with the remaining bread cubes.
  • Cover the casserole with foil and bake for 25 minutes. Remove the foil and sprinkle with the remaining cheese. Bake for an additional 10 minutes.
  • Remove from the oven and allow to cool for 5 minutes before serving.

I got this recipe from Taste of Home's Cooking for 2. I have made this many times and it is one of those real comfort foods. My DH loves this in the cold weather.

1 (8 ounce) can sauerkraut, rinsed and well drained
1/8 teaspoon caraway seed
1 small tomatoes, cut into thin wedges
2 tablespoons thousand island dressing
1 (2 ounce) package thinly sliced corned beef
1/4 cup shredded swiss cheese
1/4 cup cubed rye bread
2 teaspoons butter, melted

Steps:

  • Place the sauerkraut in an ungreased 3 cup baking dish. Sprinkle with caraway seeds. Layer with tomato wedges, salad dressing, corned beef and Swiss cheeses.
  • Toss bread cubes and butter, sprinkle over top.
  • Bake uncovered at 375°F for 25 to 30 minutes or until heated through.

I found this on a low carb site... very easy and tasty too! You won't miss the bread (much anyway lol!) I buy Boar's Head corned beef sliced thin. Yummy!

1 lb sliced deli corned beef
4 -6 ounces swiss cheese
16 ounces sauerkraut
4 tablespoons low-carb thousand island dressing (I buy low-carb brands)
4 tablespoons sugar-free mayonnaise
1 tablespoon dill relish (or 1 tablespoon splenda sweetened relish)

Steps:

  • In a large casserole dish sprayed with PAM, layer slices of corned beef (the thin sliced - not chipped - works best). Kind of scrunch them up with an "uneven approach" so it's not a slab of corned beef.
  • Drain saurkraut of 1/2 its juice and lay atop corned beef (if you like the sweeter variety of kraut, thoroughly rinse off canned/jarred juice and replace with a bit of cool water -- toss 1/2 tsp Brown Sugar Twin or Splenda into it before adding to the casserole dish.) Top with swiss cheese layer and bake at 350?F for 15 minutes or until cheese is melty but not liquidy.
  • While dish is baking, in separate bowl mix Thousand Island Dressing, Mayonnaise, and Relish.
  • Remove casserole dish from oven, slice in 4 serving-size squares and top with dollops of dressing mixture.
