INSTANT POT BREAKFAST EGG CASSEROLE

This breakfast egg casserole is so easy and so quick! It is fluffy and filling; great for any meal of the day!

3 slices of bacon, chopped
1 lb turkey breakfast sausage
1/4 teaspoon salt
1/4 cup chopped onion
10 large eggs
2/3 cup milk
1/4 teaspoon salt
2 cloves minced garlic
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1 1/2 cup shredded Italian blend cheese
1 cup water
2 oz crumbled feta

Steps:

  • Set the instant pot to "saute". Add chopped bacon, and cook until browned. Remove bacon and set aside. Add the sausage to the hot pan. Crumble and cook until no longer pink. Add the onions and cook until onions have softened, about 4 minutes. Remove meat mixture and set aside, Add all but 1 tablespoon of the chopped bacon to the sausage mixture.
  • Spray an 8-inch cake pan or springform pan with non-stick spray. If you using a springform pan, line the bottom with foil.
  • In a bowl, whisk together the eggs, milk, salt, garlic, basil, and oregano.
  • Spread cheese on the bottom of the pan, followed by the meat mixture. Pour egg mixture over the meat.
  • Place the trivet inside the Instant Pot. Add 1 cup of water. Place the baking pan on the trivet. Place the lid on the pressure cooker and set it to 12 minutes on high.
  • Carefully release the pressure valve, remove the lid and allow the casserole to stand for 10 minutes.
  • Top with feta cheese and remaining bacon.

6 oz. frozen spinach (thawed, or 1 pound fresh spinach)
8 oz. ground sausage (optional)
7 large eggs
8 oz. Monterey jack cheese (shredded)
1/4 cup shallot (chopped )
1/4 cup red pepper (chopped )
1/4 cup green pepper (chopped )
1/4 cup mushrooms (chopped )
1/2 cup chopped zucchini
1/2 cup cherry tomatoes (chopped )
1/2 cup heavy whipping cream
3/4 teaspoon dried dill
1/4 teaspoon salt
1/8 teaspoon black pepper

Steps:

  • Preheat oven to 350˚ F.
  • Drain all excess water from the spinach.
  • In a large saucepan, saute your vegetables and meat in 1-2 T. of butter. Cook on medium high heat until the vegetables are tender and the meat is browned.
  • While the vegetables cool down, get out a large bowl and add your eggs, cheese, spinach, cream, dried dill, salt and pepper. Mix it all together.
  • Add your saucepan ingredients and stir it all together.
  • Pour the casserole batter into a greased or non-stick mini loaf pan or muffin tin, filling them ¾ full.
  • Bake the loaves at 350˚ F for 18-20 minutes or until you see the sides of them pull away from the pan.

8 eggs
3 cups milk
1/4 teaspoon ground black pepper
8 cups French bread cubes (3/4-inch pieces)
2 cups (8 ounces) shredded sharp cheddar cheese, divided

Steps:

  • 1. Preheat oven to 350 degrees F.
  • 2. Beat eggs, milk and pepper in large bowl with a wire whisk until well blended. Add bread cubes; stir gently until evenly coated. Stir in sausage crumbles and 11/2 cups cheese.
  • 3. Pour into lightly greased 13x9-inch baking dish; sprinkle with remaining cheese.

1 ½ pounds ground breakfast sausage
16 ounces shredded Cheddar cheese, divided
7 slices white bread, torn into pieces

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Brown sausage in a large skillet over medium-high heat. Drain off grease, and set aside to cool. Pour the eggs into a lightly greased 9x13 inch baking dish.
  • In a separate large bowl, combine the sausage, bread and 12 ounces of the cheese. Mix well and pour this into the egg mixture. Top with the remaining 4 ounces of cheese and cover with foil.
