QUICK AND EASY GARDEN CHICKEN PASTA SALAD
An extremely easy pasta salad from Kraft Foods. You can substitute or add any other ingredients you like. I sometimes add cubed mozzarella, Parmesan and fresh chicken. I'm making it today with cheese tortellini. This is my potluck "staple" in the summertime. Time does not include chill time.

QUICK AND EASY CURRY CHICKEN SALAD FOR LUNCHES
Curry chicken salad is one of my favorite recipes to make ahead for a week of effortless but delicious lunches. This recipe is so flavorful and has ton of great texture. There are so many ways you can eat this chicken salad: sandwich, mixed into a salad, scooped into lettuce cups, spooned into cucumbers or other veggies, dipped with pita, spread on top of toast, or just eaten straight out of the container! Curry chicken salad is also a great party app, just place dollops in little cucumber cups, finger sandwiches, or crackers and serve!

Steps:
- Whisk yogurt and mayonnaise together in a medium bowl until blended. Add curry powder and stir to combine. Stir in shredded chicken until evenly coated. Add apple, celery, green onion, almonds, and raisins; season with salt and pepper. Stir gently to until thoroughly combined and all ingredients are coated with curry-yogurt.
- Serve immediately or refrigerate until ready to serve.

- remove meat from chicken and cut into little chunks. i only use breast meat, but feel free to use dark meat also if you prefer.
- mix together remaining ingredients in bowl.
- fold in chicken.
- spread a bit of dijon mustard on whole wheat bread or bun, put some chicken salad on there along with with lettuce and tomato.
- enjoy!

QUICK 'N EASY VIETNAMESE CHICKEN SALAD
This light and refreshing Vietnamese Chicken Salad is really quick to make. It can be eaten alone as a light meal or served as a main meal, over steamed rice. Because I don't like my food too spicy, I omit the chilli, but I've left it in the ingredients listed. Some will no doubt want to increase the spiciness. When serving it to others, I've doubled the recipe and made two versions: one spicy, one not. And been very careful not to mix them up, by putting them in colour-coded serving bowls! Both versions have been eaten with enthusiasm, both by those who are familiar with Vietnamese cuisine and those who are not. - Mix together the lime juice, fish sauce, sugar, ginger, chilli, garlic and shallots (or red onion).
- Plunge the bean sprouts into boiling water for 10 seconds, drain them and rinse under cold water to stop them from cooking any further.
- Mix the bean sprouts with the Chinese cabbage, Vietnamese mint and chicken.
- Pour the dressing over the salad and toss all the ingredients together until they are well combined.
- Serve as a light meal, or as a main dish over steamed rice.

TROPICAL CHICKEN SALAD-QUICK AND EASY
I created this recipe totally as a fluke. Looking for a little extra something when I made my chicken salad, looking in the fridge I saw my flavored Greek Yogurt and had an ah ha moment. It turned out great. You can use and combo of veggies, fruit, and yogurt you choose.

Steps:
- Skin, debone, and chop chicken in bite size pieces. Place in serving bowl.
- Cut up all vegetables and fruit as indicated above. Add to chicken.
- Add salt and pepper to chicken. Mix the yogurt and mayo together and whip until smooth. Add dressing to chicken and lightly toss. chill for 1 hour, and serve.

- 1. Drain chicken and rinse through cold water. Drain well. In small mixing bowl, combine chicken, mayonnaise, celery, and pecans; mix well with fork. Add salt and pepper to taste. Gently fold in the grapes.
- 2. On toasted whole wheat bread or toasted cocktail bread, spread desired amount of chicken mixture onto one of the slices of bread. Top with a slice of tomato and the other slice of bread.
- 3. Store any leftover chicken salad in the refrigerator.
