CRISPY BROILED CATFISH FILLETS
Sneak a bit of the South into your supper plans--without a lot of fat--with this quick way to serve sweet catfish, coated with crunchy seasoned cornmeal.

Steps:
- Spray shallow baking pan with nonstick cooking spray. Beat egg in shallow dish or pie pan until foamy. Add milk; mix well. In another shallow dish, combine cornmeal, lemon peel, salt, thyme and pepper; mix well.
- Dip catfish fillets in egg mixture; dip in cornmeal mixture to coat. Arrange fish in sprayed pan.
- Broil 4 to 6 inches from heat for 8 to 10 minutes or until fish flakes easily with fork, turning once. Serve tartar sauce with fish.

CREOLE BROILED CATFISH
This Creole broiled catfish provides a different technique to cook the fish instead of the traditional fried version. Serve with sautéed vegetables and brown rice.

Steps:
- Position a rack 5 inches below the heating element of an oven and preheat the broiler to high.
- Rinse the fish fillets under cold running water and pat them dry. Brush both sides with oil and arrange them in a single layer on a broiler pan lined with aluminum foil.
- Mix together the seasoned pepper, garlic powder, and seasoned salt in a small bowl. Sprinkle half of the spice mixture over one side of the fish.
- Broil for 5 minutes. Using a spatula, carefully turn the fish over. Sprinkle with the remaining spice mixture. Continue broiling until the fish is opaque in the center, 3 to 5 minutes more. Serve immediately.

QUICK DIJON BROILED CATFISH
Lemon, chives and pecans too. Found this recipe on a card in the supermarket and I haven't tried it yet.

- Place oven rack 6 inches from broiler.
- Spray baking dish with nonstick cooking spray.
- Place fish fillets in pan and season to taste with salt and pepper. Spread mustard on top of fillets.
- Broil for 5 minutes or until fish flakes easily when tested with a fork. The mustard will darken but do not allow it to burn.
- Place each fillet on a plate garnished with lemon wedges, chives and pecans.

ONION DIJON CRUSTED CATFISH
Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- In a small bowl, mix together the onion and mustard. Season the catfish fillets with garlic salt and pepper. Place on a baking tray and coat with the onion and honey. Sprinkle parsley flakes over the top.
- Bake for 20 minutes in the preheated oven, then turn the oven to broil. Broil until golden, 3 to 5 minutes.

- Mix the oil, parsley, lemon juice, garlic, wine, and pepper in a nonmetallic bowl.
- Put the catfish into the marinade and refrigerate for at least two hours.
- Preheat the broiler and brush the hot rack with the marinade.
- Broil close to the heat for approximately 5 minutes until the fish flakes with a fork.
