This Creole broiled catfish provides a different technique to cook the fish instead of the traditional fried version. Serve with sautéed vegetables and brown rice.

8 (8 ounce) fillets catfish
¼ cup olive oil
1 tablespoon seasoned pepper
1 tablespoon garlic powder with parsley
1 tablespoon spicy seasoned salt

Steps:

  • Position a rack 5 inches below the heating element of an oven and preheat the broiler to high.
  • Rinse the fish fillets under cold running water and pat them dry. Brush both sides with oil and arrange them in a single layer on a broiler pan lined with aluminum foil.
  • Mix together the seasoned pepper, garlic powder, and seasoned salt in a small bowl. Sprinkle half of the spice mixture over one side of the fish.
  • Broil for 5 minutes. Using a spatula, carefully turn the fish over. Sprinkle with the remaining spice mixture. Continue broiling until the fish is opaque in the center, 3 to 5 minutes more. Serve immediately.

1 egg
1/4 cup milk
1/3 cup yellow cornmeal
1 1/2 teaspoons grated lemon peel
1/2 teaspoon salt
1/2 teaspoon dried thyme leaves
1/2 teaspoon pepper
1 lb. catfish fillets
1/2 cup tartar sauce, if desired

Steps:

  • Spray shallow baking pan with nonstick cooking spray. Beat egg in shallow dish or pie pan until foamy. Add milk; mix well. In another shallow dish, combine cornmeal, lemon peel, salt, thyme and pepper; mix well.
  • Dip catfish fillets in egg mixture; dip in cornmeal mixture to coat. Arrange fish in sprayed pan.
  • Broil 4 to 6 inches from heat for 8 to 10 minutes or until fish flakes easily with fork, turning once. Serve tartar sauce with fish.

1 onion, finely chopped
¼ cup honey Dijon mustard
4 (6 ounce) fillets catfish fillets
garlic salt and pepper to taste
dried parsley flakes

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a small bowl, mix together the onion and mustard. Season the catfish fillets with garlic salt and pepper. Place on a baking tray and coat with the onion and honey. Sprinkle parsley flakes over the top.
  • Bake for 20 minutes in the preheated oven, then turn the oven to broil. Broil until golden, 3 to 5 minutes.

4 catfish fillets (about 1 1/4 lbs.)
2 -3 tablespoons Dijon mustard
4 lemon wedges
2 tablespoons chives, chopped
1/3 cup pecan halves, toasted then chopped
salt and pepper

Steps:

  • Place oven rack 6 inches from broiler.
  • Spray baking dish with nonstick cooking spray.
  • Place fish fillets in pan and season to taste with salt and pepper. Spread mustard on top of fillets.
  • Broil for 5 minutes or until fish flakes easily when tested with a fork. The mustard will darken but do not allow it to burn.
  • Place each fillet on a plate garnished with lemon wedges, chives and pecans.

1 tablespoon fresh-squeezed lemon juice

  • Coat pan with shortening spray.
  • In a small bowl, combine soy sauce, lemon juice, garlic powder, and liquid wood-smoke flavouring.

4 catfish fillets (6 ounces each)
1/2 teaspoon salt
1/2 teaspoon pepper
2 large eggs
1/3 cup Dijon mustard
2 tablespoons 2% milk
1/2 cup all-purpose flour
4 cups honey mustard miniature pretzels, coarsely crushed
Oil for frying
Lemon slices, optional

Steps:

  • Sprinkle catfish with salt and pepper. Whisk the eggs, mustard and milk in a shallow bowl. Place flour and pretzels in separate shallow bowls. Coat fillets with flour, then dip in egg mixture and coat with pretzels., Heat 1/4 in. oil to 375° in an electric skillet. Fry fillets, a few at a time, until fish flakes easily with a fork, 3-4 minutes on each side. Drain on paper towels. Serve with lemon slices if desired.
