- Pop the banana chunks on a flat tray and cover well. Freeze for at least 1 hr, or until frozen through. When ready to eat throw the banana into a food processor and whizz until smooth with enough of the milk to achieve a creamy texture. Scoop into 4 bowls or glasses, then top with the sauce and nuts.

- Heat oven to 180C/fan 160C/gas 4 and line two large baking sheets with baking parchment. Put the peanut butter, sugar, ΒΌ tsp fine table salt and chocolate chunks in a bowl and mix well with a wooden spoon. Crack in the egg and mix again until the mixture clumps together and forms a dough.
- Break off chunks of dough (about the size of a cherry tomato) and arrange them, spaced apart, on the sheets. Press the cookies down with the back of a fork to squash them a little. (The cookies can be frozen for up to two months - to cook from frozen, add an extra 1-2 mins to the cooking time.) Bake for about 12 mins until golden around the edges and paler in the centre. Leave to cool on the trays for 5 mins.
- Meanwhile, put the bananas, cream and vanilla in a food processor and blend until they make a thick ice cream. Scoop into balls with an ice cream scoop, and sandwich between the cookies. Serve immediately.

QUICK BANANA ICE CREAM
So Yummy! I can't believe I let this lie in my recipe file without trying it for so long! Preparation time does not include time for freezing the banana chunks, (2-3 hours). Try using powdered sugar so that you don't get the coarse granules in the ice-cream.

Steps:
- Tip the frozen banana chunks into the food processor.
- Add the vanilla essence, sugar and half the buttermilk.
- Turn on the processor and let it run for a few moments. While it is still running, pour in the remaining buttermilk in a thin steady stream.
- Let the machine run until the mixture is beautifully smooth and creamy.
- Serve at once.
QUICK BANANA MILKSHAKE (ICE CREAM FREE)
