2 tablespoons olive oil
1 large onion, chopped
2 carrots, chopped
2 cloves garlic, finely chopped
0.75 pound ground beef
0.75 teaspoon kosher salt
0.5 teaspoon black pepper
1 28-ounce can crushed tomatoes
0.5 cup fresh flat-leaf parsley, chopped
0.25 cup grated Parmesan (1 ounce)

Steps:

  • Cook the pasta according to the package directions.
  • Meanwhile, heat the oil in a saucepan over medium heat. Add the onion, carrots, and garlic and cook, stirring occasionally, until soft, 8 to 10 minutes.
  • Increase heat to medium-high. Add the beef, salt, and pepper and cook, breaking up the meat with a spoon, until no longer pink, 4 to 5 minutes.
  • Add the tomatoes and simmer, stirring occasionally, until sauce slightly thickens, about 5 minutes. Stir in the parsley.
  • Serve the pasta with the sauce and sprinkle with the Parmesan.

2 teaspoons extra-virgin olive oil
1 large onion, finely chopped
1 large carrot, finely chopped
1 stalk celery, finely chopped
4 cloves garlic, minced
1 tablespoon Italian seasoning
1 pound lean (90% or leaner) ground beef
1 28-ounce can crushed tomatoes
¼ cup chopped flat-leaf parsley
½ teaspoon salt
½ cup grated Parmesan cheese

Steps:

  • Bring a large pot of water to a boil. Cook pasta until just tender, 8 to 10 minutes or according to package directions. Drain.
  • Meanwhile, heat oil in a large skillet over medium heat. Add onion, carrot and celery and cook, stirring occasionally, until the onion is beginning to brown, 5 to 8 minutes.

1 green bell pepper, chopped
1 onion, chopped
2 cloves garlic, minced
1 (28 ounce) can whole tomatoes
2 tablespoons Italian seasoning
1 cup chicken broth
1 (6 ounce) can tomato paste

Steps:

  • In a hot skillet, saute bell pepper and onion on medium-high for 5 minutes. Add garlic and saute one more minute. Stir in tomatoes and chicken broth. Remove from heat.
  • Place mixture in blender and blend until the desired level of chunkiness is achieved. Return to medium-low heat. Stir in tomato paste one tablespoon at a time until desired level of thickness is reached. Cook for 20 minutes, stirring occasionally.

1 (15 ounce) can chopped tomatoes
1 large onion, chopped
3 cloves garlic, mashed
1 red pepper, chopped
1/2 green pepper, chopped
1 lb ground beef or 1 lb chicken
1/4 cup chopped parsley
1 tablespoon dried basil
1 1/2 tablespoons oregano
3/4 teaspoon thyme
1 beef double bouillon cubes (Knorr)
salt and pepper

1/2 cup red wine (optional)
1 lb spaghetti noodles, cooked according to package directions

Steps:

  • Heat olive oil in a shallow soup pot.
  • Sauteé garlic until golden, then add onions and peppers.

  • Brown until cooked through (about 10-15 minutes).
  • Drain grease.
