PORK SOUVLAKI (SKEWERS) WITH TZATZIKI SAUCE

Juicy and crunchy pork souvlaki (skewers) paired with creamy tzatziki sauce and fluffy pita breads! The pork is first marinated to soak up all the wonderful Mediterranean flavours and then grilled to high temperature, to get all crunchy and nicely coloured..

800g pork tenderloin or pork neck (boneless), cut in 2cm chunks (28 ounces)
100ml good-quality olive oil (1/3 of a cup and 1 tbsp)
juice of 1/2 lemon
1 tbsp vinegar
1 tbsp dried oregano
1 tsp honey
salt and freshly ground pepper
8 wooden skewers
1 cucumber
2 cloves of garlic
1/4 of a cup olive oil
500g of yogurt (18 ounces)
1-2 tbsps of red wine vinegar
1-2 tbsps chopped dill (optional)
salt and freshly ground pepper to taste
8 pita breads
2 red onions, sliced
1 tomato sliced

Steps:

  • To prepare the pork souvlaki (skewers), cut the pork into 2 cm pieces and place them in a large bowl, along with all the marinade ingredients. Use your hands to mix really well, cover with plastic wrap and put in the fridge for 20 minutes.
  • In the meantime prepare the tzatziki sauce for the pork souvlaki. Pour into a food processor the olive oil and 2 cloves of garlic; blend until the garlic is diluted (don't leave any large pieces of garlic). Into a large bowl, grate the cucumber, season with salt and pepper and leave it aside for 10 minutes. Wrap the grated cucumber into a towel and squeeze, in order to get rid of most of the water. Into a bowl, add the cucumber, the blended garlic and oil, the yogurt, 1-2 tbsps of chopped dill, 1-2 of red wine vinegar, salt and pepper and mix. Tore in the fridge and serve cold.
  • Cut the wooden skewers to fit your griddle pan and soak them in water for 10 minutes. (This will prevent them from burning.) Thread the pieces of pork, comfortably, on the skewers.
  • Preheat a grill or griddle pan on a high heat. Cook the pork skewers for about 10 minutes, turning occasionally, until nicely coloured and cooked through.
  • While your pork is cooking, prepare the pita breads. Preheat the oven to 250C. Use a cooking brush to oil the pita breads on both sides and season with salt and oregano. Place a large oven tray (upside down) at the bottom of the oven and place the pita breads on top of the tray. Bake for 1-2 minutes.
  • To serve the pork souvlaki (skewers), slice 2 red onions and place on a platter; top with the pork skewers, drizzle with some extra virgin olive oil and a good squeeze of lemon juice. Serve while still warm with some pita breads and tzatziki sauce or wrap them up like a sandwich, adding some tzatziki, sliced onions and tomatoes. Enjoy!

OVEN BAKED PORK SOUVLAKI (KABOBS)

This Oven Baked Pork Souvlaki recipe is deliciously marinated resulting in the most tender, juicy and flavorful pork kabobs.

2 lbs pork loin, cut into large cubes (trim the fat)
2 bell peppers, diced into large squares
1 red onion, diced into large squares
¼ cup olive oil
2 Tbs lemon juice
3 cloves garlic, minced
2 tsp dried oregano
1 tsp garlic salt
½ tsp black pepper
½ tsp garlic powder
About 15 skewers

Steps:

  • Put all the cut-up pork, bell peppers and onions in a large Ziploc bag or deep baking dish
  • Prepare the marinade by mixing together the olive oil, lemon juice, garlic, oregano, salt, pepper, and garlic powder in a small bowl
  • Once mixed, pour the marinade all over the pork, bell peppers and onions. Mix thoroughly until everything is coated well
  • Cover and place in the fridge to continue marinating for AT LEAST 30 minutes but preferably 2 hours or overnight
  • When you're ready to cook, preheat oven to 375 degrees and line a large baking sheet with parchment paper. If you're using wooden skewers, you can soak them in cold water for 15 minutes before adding the pork and veggies to them (this will prevent the skewers from burning in the oven)
  • Remove the marinated pork and veggies from the fridge and start threading them through the soaked skewers. You can use any pattern you like when adding them to the skewers
  • Place the kabobs side by side on the prepared baking sheet making sure there is some space in between each kabob (this will ensure better heat distribution and even cooking). You can use a second baking sheet if you don't have enough space
  • Place the kabobs in the oven and bake for about 12 minutes. Then flip all the kabobs and bake for an additional 12 minutes
  • Serve immediately with pita bread, hummus, lemon slices or your choice of salad!

400g lean pork shoulder, cut into 2cm chunks
1 tbsp olive oil
½ tbsp dried oregano
1 lemon , zested and juiced
½ tsp hot paprika
100ml fat-free yogurt
1 small garlic clove , grated
½ cucumber , trimmed and grated
2 red peppers , deseeded and cut into chunks
2 Little Gem lettuce , leaves separated
chilli sauce , to serve (optional)
flatbreads , warmed, to serve (optional)

Steps:

  • Put the pork in a large bowl with the oil, oregano, lemon zest and juice and paprika as well as a good pinch of salt. Toss everything together to combine and leave to marinate for 10 mins.
  • Combine the yogurt, garlic and cucumber together in a bowl. Season with salt and set aside.
  • Heat the grill to high. Thread the marinated pork and the peppers on four metal skewers, alternating between the pork and peppers as you go. Place on a non-stick baking sheet and grill for 3-4 mins on each side, or until cooked through and golden brown.
  • Serve with the lettuce, yogurt mixture and chilli sauce, and flatbreads, if you like.

1 cup olive oil
1/2 cup full-fat Greek yogurt
1/4 cup fresh lemon juice
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon kosher salt
1/2 teaspoon Aleppo pepper
1/2 teaspoon freshly ground black pepper
2 cloves garlic, finely grated
1 pound boneless, skinless chicken breast, cut into 1-inch pieces
1 pound pork tenderloin, cut into 1-inch pieces
2 red onions, each sliced into 3 thick slices
2 lemons, sliced in half
Olive oil, for drizzling
Kosher salt and freshly ground black pepper
Chopped romaine lettuce, pita and tzatziki, for serving

Steps:

  • For the chicken and pork: In a mixing bowl, whisk together the olive oil, yogurt, lemon juice, cumin, oregano, salt, Aleppo pepper, black pepper and garlic.
  • Place the chicken and pork into 2 separate mixing bowls. Pour half of the marinade over the chicken and the other half over the pork. Marinate, refrigerated, at least 1 hour and up to overnight.
  • Set up your grill for indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only.
  • Remove the chicken and pork from the marinade, allowing excess to drain off. Keeping the chicken and pork on separate skewers, thread 4 pieces of meat onto each skewer towards the top and covering the tip of the skewer.
  • Place the skewers on the direct-heat side of the grill to char on all sides, about 2 minutes per side. Then move to the indirect-heat side of the grill, cover with the lid and cook until the chicken and pork are cooked through, about 10 minutes, or until the internal temperature of the chicken reaches 160 degrees F and the pork reaches 145 degrees F. Stack the skewers on a platter.
  • For the onions and lemons: Drizzle the onions and lemons with olive oil and season with salt and pepper. Place on the direct-heat side of the grill. Cook the lemons until charred, about 3 minutes. Cook the onions until tender, about 3 minutes per side.
  • Add the onions and lemons to the platter with the souvlaki. Serve with romaine, pita and tzatziki.

3 tablespoons extra-virgin olive oil
1/4 cup plus 2 tablespoons fresh lemon juice, plus lemon wedges for serving
3 garlic cloves, minced

2 tablespoons plain Greek yogurt
1/4 cup tahini (optional; if not using, substitute Greek yogurt)

Steps:

  • In a medium bowl, combine pork, oil, 2 tablespoons lemon juice, garlic, and oregano. Season with salt and pepper and toss to combine. Cover with plastic wrap and refrigerate at least 1 hour (or up to 8 hours).

1 kg pork shoulder
1 garlic clove, crushed
1 sprig rosemary
100 ml olive oil
1 lemon juice
mixed salad green
1 red onion, finely sliced
1 tomatoes, finely sliced
1/2 cucumber, finely sliced
150 g tzatziki
1 teaspoon lemon juice (to taste)
4 pita breads
150 g hummus

Steps:

  • Preheat the oven to 180C/gas 4. Heat a roasting tin and sear the pork fillet. Season and remove from the heat. Add the garlic, rosemary, olive oil and lemon juice. Roast in the oven for 25 minutes. Remove and rest for 10 minutes. Carve into slices. You can also bbq it.
  • For the salad: put the leaves, onion, tomato and cucumber in a large bowl. Add the tzatziki and a squeeze of lemon juice and mix well.
  • Heat the pitas by lightly wetting and then lightly oiling each side. Place in a frying pan heating either side gently.
  • Slice through the top of the pitta and spread some humous on the inside. Then fill the pitta with the pork and salad mix. Halve each ptta to serve.
